Years ago my cousin told me about this sandwich. She knew that we have a slight obsession with coloring a lot of eggs in our home We always color 5 dozen. Now that we have 5 kids it isn't that big of a deal, they each color 12, but back when we only had 2 or 3 kids it was an over kill. The tradition came from my husband's side of the family. They always colored a ton of eggs so it became a tradition in our home as well. I don't like wasting food so we always make sure to use them up. It's a good thing that hard boiled eggs last for quite awhile!

Best Egg Salad Recipe
This is such a simple recipe, but it's the best! Hard boiled eggs, mayonnaise, sweet relish, and salt and pepper (to taste). I make enough for 4 sandwiches and keep it in the refrigerator.

Ingredients
- 8 eggs hard boiled
- ½ cup mayonnaise
- 1 Tbsp. sweet pickle relish
- salt and pepper to taste
- sliced tomatoes
- lettuce
- sliced bacon cooked
- butter
- sliced bread
Instructions
- Chop eggs and mix with mayonnaise, relish, salt and pepper. Chill for 1 hour.
- Spread bread with butter on one side. Brown bread in a skillet on med-high heat until golden.
- Cook bacon.
- Spread egg salad on sandwich. Add tomatoes, lettuce and bacon.
Notes
This egg salad recipe makes enough for 4 sandwiches. Recipe calories are for 1 sandwich (¼ of the egg salad mixture, 2 slices thick cut bread, 2 slices bacon, lettuce and tomato).
