    Egg Salad BLT Sandwich Recipe

    An egg salad BLT is a great way to use up those hard boiled eggs after Easter! Delicious egg salad, crispy bacon, sliced tomatoes and romaine lettuce piled onto grilled bread. 
    We love sandwiches and have them for dinner once a week! You'll definitely want to check out our grilled cheese with avocado and bacon sandwiches, our turkey avocado sliders and our chicken salad sandwiches
    Years ago my cousin told me about this sandwich. She knew that we have a slight obsession with coloring a lot of eggs in our home  We always color 5 dozen. Now that we have 5 kids it isn't that big of a deal, they each color 12, but back when we only had 2 or 3 kids it was an over kill. The tradition came from my husband's side of the family. They always colored a ton of eggs so it became a tradition in our home as well. I don't like wasting food so we always make sure to use them up. It's a good thing that hard boiled eggs last for quite awhile!

    Egg salad is my favorite way to use up those eggs. The rest go in the kids' lunches. Have you tried mixing egg salad with a classic BLT? The sweetness of the mayonnaise in the egg salad blends perfectly with the salty bacon.

    Best Egg Salad Recipe

    This is such a simple recipe, but it's the best! Hard boiled eggs, mayonnaise, sweet relish, and salt and pepper (to taste). I make enough for 4 sandwiches and keep it in the refrigerator.

    Easiest Way to Hard Boil Eggs

    Everyone has their tried and true favorite way of boiling eggs. I've recently converted to making hard boiled eggs in my pressure cooker. The shells come off so easily every time. I used this tutorial from AllRecipes.

    Cook Time: 2 minutes minutes

    Ingredients

    • 8 eggs hard boiled
    • ½ cup mayonnaise
    • 1 Tbsp. sweet pickle relish
    • salt and pepper to taste
    • sliced tomatoes
    • lettuce
    • sliced bacon cooked
    • butter
    • sliced bread

    Instructions

    • Chop eggs and mix with mayonnaise, relish, salt and pepper. Chill for 1 hour.
    • Spread bread with butter on one side. Brown bread in a skillet on med-high heat until golden.
    • Cook bacon.
    • Spread egg salad on sandwich. Add tomatoes, lettuce and bacon.

    Notes

    This egg salad recipe makes enough for 4 sandwiches. Recipe calories are for 1 sandwich (¼ of the egg salad mixture, 2 slices thick cut bread, 2 slices bacon, lettuce and tomato).

      Seems super tasty! We didn't purchase enough eggs this year, so I don't have many left... but maybe I'll save this recipe for a tasty weekend lunch! Thanks for sharing!
