Granola bars are one of our favorite snacks to add to school lunches. Until recently I hadn’t had a lot of success with making homemade ones, however. I finally realized that the problem was that I was using granola to make them! It just made sense to use granola when making granola bars, but when I switched to quick oats—success! I think the granola simply had too much sugar because the bars always turned out really hard—like crack a tooth hard. This no-bake granola bar recipe uses oats and creates the most delicious and chewy bars!
I usually make a triple batch and that will fill a 13 x 18″ half-sized sheet pan. I’ll share those measurements below, but just know that you can make a single batch by dividing it into thirds. If you have a large family like we do (5 kids), you’ll want the big pan!
Chocolate Chip No Bake Granola Bar Recipe
Chocolate Chip Granola Bar Recipe
- 3/4 c. butter
- 3/4 c. honey
- 1 c. brown sugar
- 1 1/2 tsp. vanilla
- 6 c. quick cooking oats
- 3 c. rice crispy cereal
- 1 c. chocolate chips
- Heat butter, honey and brown sugar over high heat. Bring to a boil. Reduce heat to low and set a timer for 2 minutes, stirring constantly. Stir in vanilla.In a large bowl combine oats and rice cereal. Pour butter/sugar mixture over oats and cereal and stir. Let cool for 1-2 minutes.Line a half sheet pan with parchment paper. Spray lightly with non-stick cooking spray.Spread granola bar mixture into pan. Spray hands and press firmly to distribute the mixture evenly.Sprinkle with chocolate chips and use a spatula to press the chocolate chips firmly into the granola bar mixture.Let cool. Slice into bars.Refrigerate bars until completely set.
We like eating them with a fork soon after making them—with the melty chocolate chips! If you’d like them to set up a bit more, refrigerate until firm. Definitely, do this if you plan on packing them into school lunches.

It is so delicious and you can add so many wonderful and nutritious ingredients to it! I’ve added wheat germ, flax, and raisins. My staple add-ins are almonds and coconut.
