Soft, chewy, and sweetened with honey and brown sugar, this no-bake granola bar recipe has all the flavor without any of the preservatives of your favorite store bought granola bars! Add chocolate chips, peanut butter chips, or raisins to create different varieties! This post contains an affiliate link.

Our homemade granola is one of our favorite breakfast foods. If you haven’t made your own granola, you should totally try it! It’s so easy.

Chocolate Chip No Bake Granola Bars

Granola bars are one of our favorite snacks to add to school lunches. This granola bar recipe uses oats, and creates the most delicious, chewy bars! One thing that I’ve found over the years is that granola bar recipes that call for granola as an ingredient tend to be more crunchy, and not a typical chewy granola bar (think, Quaker granola bars). These ones are made with quick oats, not granola, and come out nice and chewy. Originally shared in 2012, this is a tried and true recipe that our kids love!

Chocolate Chip No Bake Granola Bar Recipe

My no bake granola bar recipe fills a 13 x 18″ baking sheet, and makes 24 bars. You can easily cut the recipe down to make less.

Chocolate Chip Granola Bar Recipe

Soft, chewy, and sweetened with honey and brown sugar, this no-bake granola bar recipe has all the flavor without any of the preservatives of your favorite store bought granola bars! Add chocolate chips, peanut butter chips, or raisins to create different varieties!

Prep Time: 5 minutes
Cook Time: 2 minutes
cool time: 30 minutes
Total Time: 37 minutes
Servings: 24 bars
Calories: 225kcal

Ingredients

  • 3/4 cup butter
  • 3/4 cup honey
  • 1 cup brown sugar
  • 1 1/2 teaspoon vanilla
  • 6 cup quick cooking oats
  • 3 cup rice crispy cereal
  • 1 cup chocolate chips

Instructions

  • Heat butter, honey and brown sugar over high heat. Bring to a boil. Reduce heat to low and set a timer for 2 minutes, stirring constantly. Stir in vanilla.
    In a large bowl combine oats and rice cereal. 
    Pour butter/sugar mixture over oats and cereal and stir. Let cool for 1-2 minutes.
    Line a baking sheet with parchment paper. Spray lightly with non-stick cooking spray.
    Spread granola bar mixture into pan. Spray hands and press firmly to distribute the mixture evenly.
    Sprinkle with chocolate chips and use a spatula to press the chocolate chips firmly into the granola bar mixture.
    Refrigerate until firm. Slice into bars.

Notes

Make sure to use quick oats, not old fashioned rolled oats.
Make sure to allow mixture to boil for a full 2 minutes or granola bars may not set up completely.
Do not boil for more than 2 minutes or the granola bars may have a hard candy texture.

Refrigerate your granola bars until firm. Then slice with a knife or pizza cutter into bars!

    do you keep the made bars in the fridge or on the counter? They are currently in the refrigerator for 15 mins 🙂

      Ours don’t usually last long enough to store for more than a few hours, ha! My kiddos love them. But I would think the counter in a container would be ok.

    My kids love them but how to I get them more firm. They were really soft even after I put them in refrigerator.
