Key Lime Mini Pie Bar

When it comes to making pie, it doesn’t get any more effortless than our 5 minute Key Lime Pie Bar. Seasonal berries, Oikos® Key Lime Greek Yogurt, and Reddi-wip® layered in a Keebler® Ready Crust® Mini Graham Cracker Pie Crust and sprinkled with graham cracker crumbs. These mini pies are fun to customize— and the best part? They are no bake and perfect for the summer entertaining!

The summer temps have already made their appearance here in Northern California. It also coincided with the week that our air conditioning stopped working! It was just as warm indoors as it was outdoors so we took advantage of the shade in the backyard for a deliciously refreshing pie bar.

Prep for our Key Lime Pie Bar took all of 5 minutes (to wash the berries). It really couldn’t have been any easier!

I filled a platter with seasonal berries, several containers of Oikos® Key Lime Greek Yogurt (1 container is enough for 2 mini pies), Keebler® Ready Crust® Mini Graham Cracker Pie Crusts, and a can of Reddi-wip®.

You could easily make these ahead of time and keep in the freezer until it is time to serve, but my kids LOVED customizing their own. Dessert bars are just fun!

The sweetness from the crusts and Reddi-wip® balanced out the tart yogurt and berries perfectly. You could use any yogurt, but I LOVE key lime so that was an obvious choice for me!

We started with a layer of fruit, followed by the yogurt. A swirl of Reddi-wip®, a sprinkling of crushed graham cracker crumbs, and a few garnishes, and the pies were complete.

We had Key Lime Blueberry, Key Lime Mixed Berry, Key Lime Raspberry, and Key Lime Strawberry pies.

I kept mine nice and simple with just one variety of fruit.
