Not that long ago my son and I were at the grocery store and I saw that they were selling TINY peanut butter no bake cookies in the bakery section. - The recipe says to boil for 1 minute. This means that you need to WAIT until the cookies are at a rolling boil before setting the timer. If you set the timer too soon the cookies won't set up.
- What is a rolling boil? A rolling boil means that the mixture will boil even while you are stirring it.
- If you find that, for any reason, your cookies aren't setting up like they should, place them in the refrigerator for 30 minutes. They will still be softer, but won't go to waste. This usually happens if they haven't boiled for a full minute.
- Don't boil much longer than a minute (10-15 seconds extra is fine) or your cookies may end up a bit crumbly.
- Store cookies at room temperature in an air tight container.

Ingredients
- ½ cup butter
- 2 cups sugar
- ½ cup milk
- ½ cup peanut butter
- 1 teaspoon vanilla
- 3 ½ cups quick oats
Instructions
- Combine butter, sugar, and milk in saucepan. Bring to a rolling boil, stirring constantly, and boil for 1 minute.
- Remove from heat and stir in peanut butter, vanilla, and oats.
- Drop Tablespoon sized balls (SMALL cookie scoop) onto a baking sheet lined with parchment paper.
- Allow cookies to sit until firm, 10-15 minutes.
Notes
Cookies can also be placed in the refrigerator to help them cool and set up quickly.
