Quick and Easy Egg Roll Bowls (Video)

Egg roll bowls are such a quick and easy weeknight meal! A healthy dinner in under 30 minutes! Add bean sprouts and any other mix-ins you’d like. We use the same recipe for making our fried egg rolls!

I love quick and easy dinner ideas that the whole family will eat. These egg roll bowls come together in under 30 minutes are SO simple to make.

What is an Egg Roll Bowl?

It’s basically a bowl of white rice topped with egg roll filling! Meat, veggies, and a yummy sauce. To make it carb friendly, skip the rice and just eat the egg roll filling. It’s delicious on its own.

Egg Roll Bowl Ingredients

Filling

  • ground turkey or pork
  • coleslaw mix
  • Hoisin sauce
  • soy sauce

More Filling Ideas

  • bean sprouts
  • ginger
  • onions

Topping Ideas

  • green onions
  • fried wonton strips
  • sesame seeds

Start some rice in a rice cooker. I generally make enough for everyone to have 1 cup of cooked rice.

To make the filling, simply brown 1 pound of ground turkey or pork. Add in 1 package of coleslaw mix and stir until coleslaw mix softens (2-3 minutes).

Why coleslaw mix? Egg rolls are typically filled with chopped vegetables like cabbage and carrots. These are both in coleslaw mix and saves you the steps of washing and shredding, making this dish even easier to whip up.

Stir in soy sauce and Hoisin sauce. Heat through.

Done.

I know, right? SO fast.

Serve over steamed rice and add your favorite toppings for a super filling, super yummy dinner.

Ingredients

  • 1 pound ground turkey or ground pork
  • 1 16 oz. package coleslaw mix
  • 3 Tbsp. soy sauce
  • 2 Tbsp. Hoisin sauce
  • 6 cups cooked white rice
  • fried wonton strips optional
  • green onions optional

Instructions

  • Brown meat.
  • Stir in 1 package of coleslaw mix and cook until coleslaw softens (2-3 minutes).
  • Stir in soy sauce and Hoisin sauce. Heat through.
  • Serve over white rice.
  • Top with fried wonton strips and green onions (optional).

Notes

Calories are for 1 cup of rice and a serving of egg roll filling.

Today we made our favorite green smoothie. It’s all about balance—-just kidding. We all know that’s a lie. I have like 10 healthy recipes on my site and 800 breads and desserts. 😂

Tip: when buying produce, buy extra to freeze. I buy an extra pineapple, an extra package of grapes, an extra bunch of bananas and an extra bag of spinach and freeze them for smoothies. I slice everything up and freeze it on baking sheets then bag it up. It makes it easy to grab a handful to toss into a blender. You can freeze entire bags of spinach too and add a handful to smoothies. I always blend my spinach and water first then add the rest of the fruit. No little spinach chunks in the smoothie that way. 🙌🏻

Tomorrow is all about gingerbread cookies for Sant Tomorrow is all about gingerbread cookies for Santa (although the Santa who comes to our house prefers sugar cookies. He can share these with Mrs. Claus). Ruby has them all picked out—-gingerbread boys, gingerbread girls, and ninja-bread cookies. Should be fun. Had to go out and get more molasses and it wasn’t easy to find! Everyone else must be making gingerbread, too!
