Quick and Easy Stroganoff Dinner

When my husband and I were first married we worked opposite shifts. I went to school during the day and worked in the evenings, and he worked during the days and was home in the evenings. Most days we saw each other in passing. I loved to cook, and would always try to find time to make a quick dinner before leaving for work.

Some dinners were absolute fails, some were successful, and others were good but needed a tweak or two over the years. This stroganoff is a recipe that we modified and tweaked and it quickly rose to the top of our favorites for busy weeknights.

It’s been 18 years, and it is the #1 recipe requested by my husband and the kids. I think every family has a recipe that they make sure to ALWAYS have ingredients on hand for. This is ours.

Our quick and easy stroganoff is affordable and serves a family of 6. We always make it with ground turkey, but you can substitute ground beef or pork.

Ground Turkey or Beef Stroganoff

What makes this such a simple recipe is that we use ground turkey instead of rib eye, sirloin or steak tips. We also use cream of mushroom soup instead of making a sauce with sliced mushrooms. The sauce is seasoned with flavorful ingredients like Worcestershire sauce and beef bouillon paste.

The entire meal comes together in about 20 minutes. Throw some fresh green beans into a steamer while the stroganoff simmers and dinner is done.

I don’t decorate for Valentine’s Day (still re I don’t decorate for Valentine’s Day (still recovering from Christmas 😂), but I always have holiday candy on hand! This year I filled the jar with petite sour hearts after hearing how amazing they are from @triedandtruemoms. They were right, we are all fans over here! Maybe more places will stock them now that they are in such demand. I ordered mine from @candynationusa (don’t waste your time looking on Amazon. They are charging twice as much for less candy).

Today we made our favorite green smoothie. It’s all about balance—-just kidding. We all know that’s a lie. I have like 10 healthy recipes on my site and 800 breads and desserts. 😂

Tip: when buying produce, buy extra to freeze. I buy an extra pineapple, an extra package of grapes, an extra bunch of bananas and an extra bag of spinach and freeze them for smoothies. I slice everything up and freeze it on baking sheets then bag it up. It makes it easy to grab a handful to toss into a blender. You can freeze entire bags of spinach too and add a handful to smoothies. I always blend my spinach and water first then add the rest of the fruit. No little spinach chunks in the smoothie that way. 🙌🏻
