Rocky Road Cookies (Video)

Rocky Road Cookies

Chocolate, nuts, marshmallows—the perfect additions to cookies and ice cream. Our rocky road cookies start out with a double chocolate pecan cookie that would be delicious as it, but we couldn’t stop there. As soon as the cookies come out of the oven we top them with a few mini marshmallows then place them back in the oven for 2 minutes to allow the marshmallows to puff up. Once the cookies have been cooled they are spread with homemade chocolate frosting and sprinkled with more nuts.

Each rocky road cookie is ridiculously rich and delicious. One batch makes 3 dozen cookies, and they can be warmed up for a few seconds in the microwave on the second day!

Rocky Road Cookie Ingredients

Cookies

  • 1 cup melted butter
  • 1/2 cup cocoa powder
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups flour
  • 1 cup semi-sweet chocolate chips
  • 1 1/2 cups chopped pecans, divided
  • 3 cups mini marshmallows

Frosting

  • 1/2 cup butter, softened
  • 3 cups powdered sugar
  • 1/3 cup cocoa powder
  • 3-4 Tbsp. milk
  • 1 teaspoon vanilla

How To Make Rocky Road Cookies

Step 1: Combine melted butter and cocoa powder. Stir until smooth.

Step 2: Cream brown sugar and white sugar with the butter/cocoa mixture.

Step 3: Add eggs and vanilla.

Step 4: Stir in salt, baking soda, and flour.

Step 5: Mix in chocolate chip and 1 cup chopped pecans.

Step 6: Chill dough for 30 minutes.

Step 7: Scoop dough onto cookie sheets with medium cookie scoop.

Step 8: Bake cookies for 10 minutes. Top each cookie with 6 mini marshmallows then cook an additional 2 minutes. DO NOT cook longer than 2 minutes!

Step 9: Mix frosting ingredients and beat until smooth and creamy. Add additional milk if necessary.

Step 10: Allow cookies to cool then spread with chocolate frosting and sprinkle with additional nuts.

  •  Scoop dough onto cookie sheets using a medium cookie scoop.
  • Bake cookies for 10 minutes. Top each cookie with 6 mini marshmallows then cook an additional 2 minutes. DO NOT cook longer than 2 minutes!
  • Mix frosting ingredients and beat until smooth and creamy. Add additional milk if necessary.
