I love soups made in the slowcooker that simmer all day, but sometimes you need something quick. This soup is perfect for days like that. Days when you’ve been too busy taking care of a sick child and completely forgot to put anything in the slow cooker or pull something out of the freezer. Days when you look in the refrigerator and see a few carrots, an onion and some leftover chicken. This is the soup that you make on those kinds of days.
Cut up 1 onion, 1 cup of carrots, and a cup of celery. Place them in a pot with some oil and cook until onions are translucent. Fill your pot with chicken broth or stock. (If I make a whole chicken in the crockpot I always save the drippings, skim off the fat and keep it for soup on another night. It adds a lot of flavor.) Bring it to a boil and add 3 cups of noodles (egg noodles, macaroni, or rotini work great). Cook according to the pasta package then add the shredded chicken right before serving!

30 Minute Chicken Noodle Soup
A simple 30 minute chicken noodle soup recipe to make on chilly days or to comfort a little one who isn't feeling well. Nothing says comfort food like a warm bowl of chicken noodle soup.
- 2 oil
- 1 medium onion chopped
- 1 c. carrots chopped
- 1 c. celery chopped
- 10 c. chicken broth
- 1 1/2 tsp. kosher salt
- 1/2 tsp. Italian seasoning
- 1 tsp. poultry seasoning
- 3 c. chicken breast cooked and shredded (rotisserie)
- 3 c. egg noodles
- Heat oil in a stock pot. Add onions, carrots and celery and cook until onions are translucent. Add chicken stock and seasonings and bring to a boil. Add noodles and cook according to package. Add chicken right before serving.
To make this recipe in the crockpot use 2 uncooked chicken breasts. Place ingredients (except for noodles) in crockpot and cook on low for 6 hours or high for 4. Remove chicken and shred. Place back in crockpot and add noodles. Cook an additional 30 minutes.
