I love soups made in the slowcooker that simmer all day, but sometimes you need something quick. This soup is perfect for days like that. Days when you’ve been too busy taking care of a sick child and completely forgot to put anything in the slow cooker or pull something out of the freezer. Days when you look in the refrigerator and see a few carrots, an onion and some leftover chicken. This is the soup that you make on those kinds of days.
Cut up 1 onion, 1 cup of carrots, and a cup of celery. Place them in a pot with some oil and cook until onions are translucent. Fill your pot with chicken broth or stock. (If I make a whole chicken in the crockpot I always save the drippings, skim off the fat and keep it for soup on another night. It adds a lot of flavor.) Bring it to a boil and add 3 cups of noodles (egg noodles, macaroni, or rotini work great). Cook according to the pasta package then add the shredded chicken right before serving!

30 Minute Chicken Noodle Soup
- 2 Tbsp. oil
- 1 medium onion chopped
- 1 cup carrots chopped
- 1 cup celery chopped
- 10 cup chicken broth
- 1 1/2 teaspoon kosher salt
- 1/2 teaspoon Italian seasoning
- 1 teaspoon poultry seasoning
- 3 cup chicken breast cooked and shredded (rotisserie)
- 3 cup dry egg noodles
- Heat oil in a stock pot. Add onions, carrots and celery and cook until onions are translucent. Add chicken stock and seasonings and bring to a boil. Add noodles and cook according to package. Add chicken right before serving.
