    Easy Pizzelle Ice Cream Sandwiches

    Pizzelle ice cream sandwiches are the perfect summer treat. Crispy, sweet, and easy to customize. Set up an ice cream bar and let guests make their own!

    Pizzelle ice cream sandwiches are the latest trend in the Nelson home. We simply can't get enough of them! The kids like coming up with their favorite combinations.

    Vanilla pizzelles with peanut butter cookie dough ice cream is a top contender right now. Along with pizzelles, we are a bit obsessed with Blue Bell ice cream. It's a dangerous combination, for sure!

    A pizzelle maker is on my wishlist. I love these crispy cookies so much, and need to start making my own. For now, I buy them from Aldi and they come in both chocolate and vanilla (vanilla is my favorite). If you'd like to make your own, here is a recipe from Culinary Hill.

    Easy Pizzelle Ice Cream Sandwiches

    These ice cream sandwiches are a bit self explanatory, but here are our tips for making your own. For a fun vacation, roll the edges in sprinkles or dip them in chocolate like we do for our It's It ice cream sandwiches.

    • Place a generous scoop of ice cream on to a pizzelle.

    • Gently press the ice cream down with your hands--- yes your hands! Then place the second cookie on top and gently press the sandwich together. Using your hands prevents the cookie from cracking.
    • Cover pizzelle ice cream sandwiches with plastic wrap in freezer if not eating right away. This keeps the ice cream fresh. We've made pizzelles and eaten them the next day, and they were delicious. A little softer, but I like them that way. We haven't tried eating them two days later because they simply don't last that long over here!

    I store mine in the freezer in a glass loaf pan covered with plastic wrap until ready to serve.

    Ingredients

    • 12 pizzelle cookies
    • 3 cups ice cream

    Instructions

    • Place a generous scoop of ice cream on to a pizzelle.
    • Gently press the ice cream down with your hands--- yes your hands! Then place the second cookie on top and gently press the sandwich together. Using your hands prevents the cookie from cracking.
    • Freeze for 15 minutes to allow ice cream to harden again.
    • Cover pizzelles with plastic wrap in freezer if not eating right away. This keeps the ice cream fresh.

      Hi everyone, Brandy here, and these are the prettiest and easiest ice cream sandwiches to make. Pizelles are so yummy, loaded with vanilla flavoring and crispy.
