    Cake Mix Cookie Bars that Kids Can Make

    This might just be the easiest recipe for kids to bake! 1 box of cake mix, 2 eggs, ⅓ c. melted butter and 1 bag of chocolate chips. Pat in a pan and bake for 20 minutes at 350 degrees. These cake mix cookie bars are a fun spin on the traditional cake mix cookie recipe!

    So we kind of go through a lot of flour over here, and sometimes I forget to refill the flour canister before we run out! We make cookies every Sunday night and this week Kaylee asked if she could make chocolate chip cookies. The flour canister was empty, but we had a few boxes of cake mix! We decided to make cake mix cookies in bar form. This is the same cake mix cookie concept that's been around FOREVER, only we put them in a 9x13 pan. I'm positive that isn't anything new either (is anything a new idea these days?), but it was a new idea for us. We've made chocolate, lemon, red velvet, and Funfetti cake mix cookies over the years, but never tried using a plain old yellow cake mix with chocolate chips. The verdict?

    These cake mix Chocolate Chip cookie bars taste JUST LIKE CHOCOLATE CHIP COOKIES!

    Ingredients

    • 1 box of cake mix
    • 2 eggs
    • ⅓ cup melted butter
    • 1 10 oz. bag of chocolate chips
    • ½ cup nuts (optional) pecans, walnuts

    Instructions

    • Mix wet and dry ingredients in a large bowl. You can also stir in a handful of nuts (optional).
    • Pat cookie dough mixture into a greased (sprayed with cooking spray or lined with parchment paper) 9 x 13 baking dish.
    • Bake in the oven at 350 degrees for 20-25 minutes or until the top begins to brown.
    • Cool 10 minutes before cutting.
    • Makes 15 bars. Store cookie bars in an airtight container at room temperature.

    Red velvet with white chocolate chips, lemon with white chocolate chips, Devil’s food with chocolate chips (mini peanut butter cups would be good too!), chocolate cake with peanut butter chips—the possibilities are endless!

    Can you make cake mix cookie bars with oil?

    We’ve made cake mix cookies (and bars) with both oil and butter. I prefer butter, but oil works too!

    This is such a kid-friendly dessert recipe because they don't need a stand mixer or even a hand mixer. A big bowl and wooden spoon work just fine, and there is virtually no measuring involved. Even with the butter. Just look at the side of the stick and cut at the ⅓ mark. Kaylee already loves baking and said that she liked making these because it was a recipe that she could make completely on her own.

    (Side note, if you want to see something absolutely adorable check out her "cooking show" video that she asked me to videotape when she was 4 years old. I still die every time I see it. What a doll!)

        I always use salted, but you can use either.
