I know what you're thinking, "She's saying TWIX bites, but they are made with Rolos. What the heck?" It's true. These Twix bites are made with Rolo candies, but taste JUST LIKE TWIX candy bars! I was inspired by the ones made by Mama Bear's Recipes and recreated them with a few tweaks! My version went mega viral a few years ago and has become a household treat in thousands of homes.

- Perfect for holiday treat platters. They are such a fun treat to make, and I can see this being added to holiday treat platters right alongside their friend---pretzel Rolos.
- 3-Ingredients. Twix candy bars start with a cookie base, a caramel center, and are dipped in chocolate. These homemade Twix bites are made the same way, but use shortcut ingredients like vanilla wafers and Rolos.
- Easy to make. Dipped in chocolate, they look like fancy chocolate candies, but there's nothing fancy about them. It only takes 3 ingredients to make these semi-homemade treats. One batch makes 36.

Tips and Tricks
- Only bake for 90 seconds. Now hear me out, I know that 90 seconds sounds very specific, but trust me on this. I experimented with baking temps. 2-3 minutes is too long, and the caramel will begin to ooze out of the cookie. 1 minute isn't long enough to soften the Rolo. 90 seconds is just right to soften the chocolate slightly, but the caramel is still a little firm. We're NOT squishing or completely flattening the Rolo, just adding a cookie on top and slightly pressing down.
- Use mini nilla wafers. You can purchase Nilla wafers in two sizes, mini and original. I prefer mini cookies or this recipe because you get more chocolate and caramel in each bite. The mini cookies are the perfect size and balance of flavor.
- How to melt chocolate for dipping. Melt chocolate in a double boiler or in the microwave. You can use melting chocolate wafers or chocolate chips. I used 8 ounces of chocolate chips and a teaspoon or two of coconut oil, then microwaved it for 60 seconds and stirred it until everything was melted and smooth.
- Use a chocolate dipping tool. The swirly design on the top of my Twix bites comes from using the chocolate dipping tool that I use. It's easy to use and makes dipping items in chocolate a breeze. If you use a fork, the tops of yours will be smooth.
Ingredients

- 72 MINI Nilla Wafer cookies: you can use regular-sized cookies, but I think the mini ones are a better cookie-caramel ratio. The smaller size also makes them easier to dip, and they are the perfect size to pop into your mouth.
- 1 (7.6-ounce) bag of Rolos: grab the unwrapped ones if you can. It'll save you a step!
- 8 ounces chocolate chips or melting chocolate wafers: I used milk chocolate chips and added a couple of teaspoons of coconut oil to make it extra smooth for dipping.

How To Make Homemade Twix Bites

Step 1: Preheat your oven to 300 degrees. Place vanilla wafer cookies onto a baking sheet lined with parchment paper. Place 36 cookies onto the sheet. Place a Rolo candy in the center of each one. Heat in oven for 90 seconds.

Step 2: Remove from the oven and place another cookie on top of each Rolo candy, pressing down slightly. Chill the tray of cookies in the refrigerator for 15-20 minutes, or until the chocolate has set.

Step 3: Dip cookie sandwiches into chocolate using a chocolate dipping tool or fork. Tap the tool or fork against the side of the bowl to allow the excess chocolate to drip off before transferring the cookie back to the baking sheet.

Step 4: Refrigerate cookies until the chocolate has hardened.

Store homemade Twix bites in an airtight container for up to 2 weeks.
You can use melting chocolate wafers or chocolate chips. I used 8 ounces of chocolate chips and a teaspoon or two of coconut oil to slightly thin out the melted chocolate.
I highly recommend using a chocolate dipping tool. It's easy to use and makes dipping items in chocolate a breeze. The metal is thin and allows the chocolate to easily drip off, giving you a nice even coating of chocolate on each Twix bite.

Ingredients

- 1 teaspoon coconut oil (optional to add with chocolate chips when melting)
Instructions
- Preheat your oven to 300 degrees.
- Place 36 mini Nilla wafer cookies onto a baking sheet lined with parchment paper.
- Place a Rolo candy in the center of each one.
- Heat in oven for 90 seconds. Note: DO NOT heat longer than 90 seconds. You want the Rolo only slightly soft. I've experimented with 3 minutes, 2 minutes and 1 minute. 90 seconds was the sweet spot.
- Remove from the oven and place another cookie on top of each Rolo candy. We're NOT squishing or flattening the Rolo, just adding a cookie on top and slightly pressing down.
- Immediately chill the tray of cookies in the refrigerator for 15-20 minutes, or until chocolate has set.
- Melt chocolate in a double boiler or in the microwave. You can use melting chocolate wafers or chocolate chips. Note: if using chocolate chips you can add a teaspoon of coconut oil if you'd like to thin them out a little.
- Dip cookie sandwiches into chocolate using a chocolate dipper tool or fork. Tap the tool or fork against the side of the bowl to allow the excess chocolate to drip off before transferring the cookie back to the baking sheet.

I made these yesterday. They are so good! But...using dark chocolate wafers and choc. chips for the coating wasn't the best. Once out of the fridge, the coating got soft and on my fingers. So I put them back in the fridge until today. Now I have used almond bark as someone else mentioned and they are much better. (I recoated the ones I made yesterday) So, my suggestion would be to use a coating chocolate that hardens.

My friend sent me a video on how to make these, well I wanted to look at other recipes idk I guess just to see how other people are making them and I’m glad I did, the recommendation to only put them in over for 90 seconds really is crucial, it is perfect. If using chocolate almond bark, is coconut oil still needed?

No, I just find it easier to use when melting down chocolate chips. You probably don’t need it with almond bark!

Hi Karen! You can just leave the coconut oil out if you'd like! The chocolate chips are usually smooth enough to dip on their own, or you can use chocolate melting wafers (candy melts).
