    Chocolate Peanut Butter Cookie Bars (Video)

These peanut butter cookie bars are easy to make and pack a punch of peanut butter flavor. We start out with an oatmeal peanut butter cookie base, then spread peanut butter over it evenly, then add a layer of melted chocolate chips.     Chocolate Peanut Butter Cookie Bars

    Ingredients
    • 1 cup butter
    • 1 cup packed brown sugar
    • ¾ cup white sugar
    • 1 cup peanut butter
    • 2 eggs
    • 1 ½ cups all-purpose flour
    • 2 teaspoons baking soda
    • 1 teaspoon salt
    • 1 cup quick-cooking oats
    • 1 ½ cups peanut butter
    • 3 cups chocolate chips
    • ½ cup chopped peanuts (optional)

    1. Mix the dough ingredients together and spread into a half sheet pan. Bake 20-25 minutes.
    2. Next, we'll add a layer of peanut butter over the warm cookie bars.
    3. IMPORTANT: let the cookie bars stand 10 minutes before spreading peanut butter over them. Add peanut butter by small spoonfuls across cookie bars and let stand for a few minutes to allow the peanut butter to soften and begin to melt. THEN spread over bars. 
    4. Melt chocolate chips and pour over bars. Spread the chocolate evenly.
    5. Sprinkle with chopped nuts.

    Ingredients

    • 1 cup butter softened
    • 1 cup packed brown sugar
    • ¾ cup white sugar
    • 1 cup peanut butter
    • 2 eggs
    • 1 ½ cups all-purpose flour
    • 2 teaspoons baking soda
    • 1 teaspoon salt
    • 1 cup quick-cooking oats

    Spread

    • 1 ½ cups peanut butter

    Toppings

    • 3 cups chocolate chips melted
    • ½ cup chopped peanuts

    Instructions

    • Preheat oven to 350 degrees.
    • In a large bowl, cream together butter, brown sugar, white sugar, and peanut butter until smooth.
    • Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined.
    • Spread dough in ungreased half sheet pan.
    • Bake 20-25 minutes. Let cool 10 minutes.
    • Dot 1 ½ cups of peanut butter over cookie bars by small spoonfuls. Let sit 10 minutes to allow peanut butter to soften and melt. Spread across cookie bars.
    • Melt chocolate chips and pour over cookie bars. Spread. Sprinkle with chopped peanuts.

    Notes

    Cookie bars can be served immediately or after they've cooled and chocolate has had a chance to set up.
