If you’re looking for a rich and delicious treat to feed a crowd, look no further. These peanut butter cookie bars are easy to make and pack a punch of peanut butter flavor. We start out with an oatmeal peanut butter cookie base, then spread peanut butter over it evenly, then add a layer of melted chocolate chips. Finally, a handful or two of chopped peanuts is sprinkled over the bars before cutting into squares!
Chocolate Peanut Butter Cookie Bars
Ingredients
- 1 cup butter
- 1 cup packed brown sugar
- 3/4 cup white sugar
- 1 cup peanut butter
- 2 eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup quick-cooking oats
- 1 1/2 cups peanut butter
- 3 cups chocolate chips
- 1/2 cup chopped peanuts (optional)
Directions
- Mix dough ingredients together and spread into a jelly roll pan. Bake 20-25 minutes.
- Next we’ll add a layer of peanut butter over the warm cookie bars.
- IMPORTANT: let the cookie bars stand 10 minutes before spreading peanut butter over them. Add peanut butter by small spoonfuls across cookie bars and let stand for a few minutes to allow the peanut butter to soften and begin to melt. THEN spread over bars.Â
- Melt chocolate chips and pour over bars. Spread chocolate evenly.
- Sprinkle with chopped nuts.
These are delicious served warm and gooey, and just as good after the chocolate has had a chance to cool and set up. Chocolate peanut butter cookie bars can be stored, covered, at room temperature up 5 days.

Ingredients
- 1 cup butter softened
- 1 cup packed brown sugar
- 3/4 cup white sugar
- 1 cup peanut butter
- 2 eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup quick-cooking oats
Spread
- 1 1/2 cups peanut butter
Toppings
- 3 cups chocolate chips melted
- 1/2 cup chopped peanuts
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, cream together butter, brown sugar, white sugar, and peanut butter until smooth.
- Beat in the eggs one at a time until well blended. Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined.
- Spread dough in ungreased 15x10" jelly roll pan.
- Bake 20-25 minutes. Let cool 10 minutes.
- Dot 1 1/2 cups of peanut butter over cookie bars by small spoonfuls. Let sit 10 minutes to allow peanut butter to soften and melt. Spread across cookie bars.
- Melt chocolate chips and pour over cookie bars. Spread. Sprinkle with chopped peanuts.
