    Easy Sheet Pan Fajitas (Video)

    Sheet pan fajitas are made with seasoned chicken, bell peppers, onions, and sliced chicken all baked together on a sheet pan for the perfect blend of flavors. A great weeknight meal. Serve with warm flour tortillas, guacamole, and sour cream.  This post was originally shared in 2016 and now includes a step by step video.

    This easy weeknight recipe is my kind of comfort food. I love fresh Mex and all of the flavors and warmth of it. We've been swamped lately with marching band practice, piano lessons, and Boy Scout activities. Our evenings are definitely not our own so easy weeknight dinner recipes like this are golden over here!

    My oven fajitas come together in a little over 30 minutes, and really hit the spot! To make a vegetarian version substitute veggies, extra onions, and sliced onions for the chicken. I like using a variety of red, yellow, and orange bell peppers because they are so pretty, but green is easily accessible and generally what I have on hand.

    The icing on the cake is that they bake up using one pan. Don't you love one-pan dinners? Fewer dishes for those busy nights. Be sure to make a batch of homemade guacamole to go with these oven fajitas!

    Sheet Pan Fajitas Ingredients

    • 1 lb. boneless skinless chicken breasts
    • 4 bell peppers
    • 1 medium yellow onion
    • 2 T. fajita seasoning (homemade or store-bought)
    • 3 T. olive oil
    • flour tortillas or corn tortillas

    How To Make Sheet Pan Fajitas

    Slice peppers and onions thinly. You can use any variety of bell peppers you'd like, but I like my fajitas colorful so I bought a variety pack with orange, green, yellow, and red.

    Arrange on a baking sheet.

    Slice chicken into thin strips.

    Arrange chicken on top of peppers and sprinkle 2-3 T. of fajita seasoning over the entire tray.

    Drizzle olive oil over the chicken, peppers, and onions, and use tongs to give everything a nice toss before baking.

    Bake at 425 degrees for 30 minutes, stirring once mid-way through the cooking process.

    I use store-bought fajita seasoning, but Culinary Hill has a recipe for making your own using basic spices like chili powder, cumin, paprika, sugar, garlic powder, onion powder, cayenne pepper, and salt and pepper---recipes you probably already have on hand!

    Ingredients

    • 2 Tbsp. fajita seasoning homemade or store bought
    • 3 Tbsp. olive oil
    • flour tortillas fajita size

    Instructions

    • Slice peppers and onions thinly. You can use any variety of bell peppers you'd like, but I like my fajitas colorful so I bought a variety pack with orange, green, yellow, and red.
    • Arrange on a large rimmed baking sheet.
    • Slice chicken into thin strips.
    • Arrange chicken on top of peppers and sprinkle 2-3 tablespoons of fajita seasoning over entire tray.
    • Drizzle olive oil over chicken, peppers, and onions, and use tongs to give everything a nice toss before baking.
    • Bake at 425 degrees for 30 minutes, stirring once mid way through the cooking process.
    • Serve with warm tortillas and sprinkle with fresh cilantro, lime juice (or lime wedges), and sides of avocado, cheese, and salsa. We like serving these with Spanish or Mexican rice.

    Notes

    To make a vegetarian version substitute veggies, extra onions, and sliced onions for the chicken.
    Calories are for fajita filling only, tortillas are not included.
