Raisin Nut Bran Muffins
These are my six-year-old’s favorite muffins. He prefers these to a sandwich for lunch and often has one for a quick breakfast. Raisin nut bran muffins are made with cereal, sweetened with honey and brown sugar, and are soft with sticky tops. They are perfection. You can use any kind of bran flake cereal for this muffin recipe, but I usually use Raisin Nut Bran cereal because it’s my favorite bran cereal. I’m not a big raisin fan, but I love the coated raisins and crunch from the almonds in this cereal.
The trick to perfectly incorporating the bran flakes cereal into the muffin batter is to let the cereal soak in milk for 15-20 minutes. Soggy cereal is everyone’s favorite right? I know, I know—it’s gross, but it totally works in this recipe.
This recipe makes 12 muffins, can easily be doubled, and the muffins freeze well.
Tip for Sticky Top Muffins
The muffin tops may seem a little dry when they first come out of the oven, but if you let them cool until they are slightly warm (NOT HOT) and place them in a gallon ziploc bag, or airtight container, the condensation will soften them and give them a moist and sticky outer texture. This works great for any muffin recipe!
Raisin Nut Bran Muffin Ingredients

- 2 cups bran flake cereal
- 1 1/4 cup milk
- 1 3/4 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup honey
- 1/2 teaspoon vanilla extract
- 1/3 cup oil
- 1 large egg
How To Make Raisin Bran Muffins
Cover the bran flake cereal with milk and set aside. Let soak for 15-20 minutes.
Preheat oven to 400 degrees. Line a muffin pan with muffin liners or spray with nonstick cooking spray.
Combine flour, baking powder, salt, and brown sugar in a separate bowl.
Add vanilla, oil, egg, and honey to the cereal and milk mixture. Stir.
Add dry ingredients and mix thoroughly.
Divide batter among 12 muffin cups.
Bake muffins for 17-20 minutes (ovens vary). Tops should be lightly golden and the toothpick inserted should come out clean.
Allow muffins to cool in the muffin pan until barely warm (NOT HOT) then transfer to a ziploc bag or airtight container. The condensation gives the muffins a soft and sticky texture.

These muffins were very good. I doubled the recipe and made 12 jumbo size muffins. I filled them 3/4 full and cooked for 25 minutes. I don’t know why you would want them sticky, but they are good dry too. Thank you for the great recipe Brandy!
