    Ritz Carlton Chocolate Chunk Pecan Cookie Recipe

    The Ritz-Carlton has shared several of its famous cookie recipes over the years, and every one I've tried has been worth making. After baking the hotel's chocolate chip and oatmeal raisin cookies, I couldn't wait to try these irresistible chocolate chunk pecan cookies.

    Loaded with rich chocolate chunks and crunchy pecans, these bakery-style cookies have crisp, buttery edges and soft, chewy centers. As always, I'm sharing the recipe as originally published, along with any tips and notes I discovered while baking them at home, so you can get the very best results.

    Why I Love This Recipe

    • An authentic Ritz-Carlton recipe. One of several cookie recipes the hotel has shared with guests over the years. The hotel would often share the recipes on printed cards for guests to take with them; however, I stumbled across a copy of this recipe on Reddit. It is said that this recipe originates from the Ritz Carlton Marina del Rey in California, but I do not have a concrete source to confirm.
    • Chocolate in every bite. Chocolate chunks melt into rich pools instead of staying perfectly shaped like chocolate chips.
    • Crunchy pecans. Toasted pecans add buttery flavor and just the right amount of crunch.
    • Freezer friendly. Freeze the dough or baked cookies for fresh cookies anytime.

    Tips & Tricks

    • Chill the dough. With the exception of the Ritz Carlton oatmeal raisin cookies, I've found that all of the recipes I've tried from Ritz Carlton yield better results when the dough is chilled. The recipe does not state whether they chill the dough for the cookies served at the hotel, but I'd imagine they do. I've made this recipe a few times and found that chilling the dough for 1-2 hours prevented the cookies from spreading too much when baking.
    • Use chopped baking chocolate instead of chips for bigger pockets of melted chocolate.
    • Don't overbake. The centers should still look slightly underdone.
    • Let the cookies cool completely on the baking sheet. Because the centers are soft, they will continue to bake while on the hot baking sheet. That's a good thing.
    • Reshaping cookies. If your cookies spread unevenly, use a round biscuit cutter or bowl to gently swirl them into shape while they're still hot.

    Bowls of butter, pecans, eggs, baking soda and salt, flour, dark brown sugar, light brown sugar, baking chocolate bars.
    • Butter: You can use salted or unsalted butter.
    • Sugar: This recipe uses only brown sugar for soft, chewy cookies. You might notice that it calls for dark brown and light brown sugar. I had both on hand so I made the cookies as written, but I do not think it was necessary to use two types of brown sugar.
    • Flour: Basic all-purpose flour works great. 
    • Eggs: For richness and texture.
    • Baking soda and salt: For leavening and flavor.
    • Vanilla extract: Gives the cookie dough a delicious flavor.
    • Chocolate: Chopped semisweet bars give these cookies an indulgent chocolate flavor and texture in every bite. You can also use semisweet chocolate chips.
    • Pecans: I love the addition of pecans, and there are a lot of them! Pecans add buttery flavor and crunch to the cookies.

    How to Make Ritz Carlton Chocolate Chunk Pecan Cookies

    Step 1: Cream butter and brown sugar in a bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla.

    Step 2: Add baking soda, salt, and flour. Mix in chocolate chunks and chopped pecans.

    Note: For best results, use a 2 Tbsp. cookie scoop, portion dough onto a large cookie sheet and refrigerate the cookie dough balls for 2 hours before baking.

    Step 3: Preheat oven to 325 degrees. Bake 6 cookies at a time on each baking sheet.

    Step 4: Bake cookies for 13-15 minutes. Cool on the baking sheet.

    This recipe makes 44 cookies. Store cooled cookies in an airtight container.

    Are these the actual Ritz Carlton chocolate chunk pecan cookies?

    While I do not have an actual post from the hotel to cite, like I have in the past for Ritz Carlton cookie recipes, it has been mentioned that this cookie recipe comes from the Ritz Carlton Marina del Rey in California and used to be printed on cards for guests to take home.

    Should I toast the pecans first?

    I did not toast the pecans, but you can! It enhances the nutty flavor and adds extra crunch. Let the pecans cool before stirring them into the dough.

    Can I use chocolate chips instead of chocolate chunks?

    Yes! Chocolate chips work well if that's what you have. Chocolate chunks create larger pockets of melted chocolate, resulting in a more bakery-style cookie.

    Can I freeze these cookies?

    Yes. Freeze baked cookies for up to 3 months. You can also freeze scooped cookie dough and bake directly from frozen.

    Why do these cookies have chewy centers?

    The combination of butter, brown sugar, and slightly underbaking creates soft, chewy centers. Letting the cookies cool on the baking sheet helps them finish setting without drying out.

    Ingredients

    • 1 ¼ cups butter 2 ½ sticks
    • ¾ cup dark brown sugar
