Tips & Tricks
- Chilling the dough. The recipe does not specify chilling the dough, so it's up to you. I prefer to chill the dough for 2 hours, as it's very sticky to work with. I think they bake up a little better after being chilled as well. No matter what you do, they are a thinner peanut butter cookie, my favorite kind.
- No need to crisscross the tops of the cookies. These cookies bake flat and uniform; no need to flatten or crisscross with a fork.
- Light metal baking sheets. I always bake on light-colored baking sheets (light metal). If you use dark metal you'll need to adjust the cooking time.
- Storage tip. Wrap them individually in plastic or store them in an airtight container after they've been baked and cooled to keep them fresh for days.
Ingredients

- Butter: The recipe doesn't state which type of butter to use. I always bake with salted butter, but you can use unsalted butter if you'd like.
- Sugar: A combination of brown sugar and granulated white sugar (mostly brown sugar for moisture and chewiness).
- Peanut Butter: You can use creamy peanut butter or crunchy peanut butter. I use creamy. I haven't tried making these with natural peanut butter, but I'd imagine they'd be delicious with natural peanut butter as well.
- Egg: For richness and flavor.
- Vanilla: I laughed when I saw that it called for ⅝ teaspoon of vanilla. Just use 1 teaspoon. Nobody is measuring ⅝ teaspoon of anything!
- Baking soda, baking powder and salt: for texture and leavening.
- Flour: all-purpose flour works great.

How To Make Ritz Carlton Peanut Butter Cookies

Step 1: Cream butter and sugars. Add eggs, vanilla, and peanut butter. Beat until smooth.

Step 2: Add dry ingredients and mix until soft dough forms.
Tip: Chill the dough for 1-2 hours before baking. It's easier to scoop, and the cookies bake up sturdier.

Step 3: Preheat the oven to 350 degrees. Use a 2 Tbsp. sized cookie scoop to scoop dough onto parchment-lined baking sheets.

Step 4: Bake cookies for 12-14 minutes. Cool completely on baking sheets.
