The Ritz-Carlton has become known for generously sharing many of its signature cookie recipes, and this peanut butter cookie is another one that's too good not to make. Originally shared by The Ritz-Carlton Half Moon Bay, it's a simple, classic peanut butter cookie with the perfect balance of crisp edges and soft, chewy centers.

As always, I'm sharing the recipe as originally published, along with any notes and baking tips I discovered while testing it in my own kitchen. Whether you're a peanut butter cookie fan or a collector of Ritz Carlton cookie recipes, this one deserves a spot in your recipe box.

    Why I Love This Recipe

    • An authentic Ritz-Carlton recipe. This recipe has been shared by The Ritz-Carlton Half Moon Bay.
    • Loaded with peanut butter flavor. Nearly 2 cups of peanut butter make these cookies rich and satisfying.
    • Soft and chewy. Crisp around the edges with tender centers. There is nothing dense or crumbly about these cookies.
    • Simple pantry ingredients. Nothing fancy—just classic baking staples.
    • Perfect for freezing. The dough and baked cookies freeze beautifully.

    Tips & Tricks

    • Chilling the dough. The recipe does not specify chilling the dough, so it's up to you. I prefer to chill the dough for 2 hours, as it's very sticky to work with. I think they bake up a little better after being chilled as well. No matter what you do, they are a thinner peanut butter cookie, my favorite kind.
    • No need to crisscross the tops of the cookies. These cookies bake flat and uniform; no need to flatten or crisscross with a fork.
    • Light metal baking sheets. I always bake on light-colored baking sheets (light metal). If you use dark metal you'll need to adjust the cooking time.
    • Storage tip. Wrap them individually in plastic or store them in an airtight container after they've been baked and cooled to keep them fresh for days.

    Ingredients

Bowls of brown sugar, eggs, white sugar, baking soda, baking powder and salt, vanilla, flour, peanut butter and two sticks of butter.
    • Butter: The recipe doesn't state which type of butter to use. I always bake with salted butter, but you can use unsalted butter if you'd like.
    • Sugar: A combination of brown sugar and granulated white sugar (mostly brown sugar for moisture and chewiness).
    • Peanut Butter: You can use creamy peanut butter or crunchy peanut butter. I use creamy. I haven't tried making these with natural peanut butter, but I'd imagine they'd be delicious with natural peanut butter as well.
    • Egg: For richness and flavor.
    • Vanilla: I laughed when I saw that it called for ⅝ teaspoon of vanilla. Just use 1 teaspoon. Nobody is measuring ⅝ teaspoon of anything!
    • Baking soda, baking powder and salt: for texture and leavening.
    • Flour: all-purpose flour works great.

How To Make Ritz Carlton Peanut Butter Cookies

Stand mixer with butter and sugar in bowl.

Step 1: Cream butter and sugars. Add eggs, vanilla, and peanut butter. Beat until smooth.

Stand mixer bowl with peanut butter cookie dough.

Step 2: Add dry ingredients and mix until soft dough forms.

Tip: Chill the dough for 1-2 hours before baking. It's easier to scoop, and the cookies bake up sturdier.

Step 3: Preheat the oven to 350 degrees. Use a 2 Tbsp. sized cookie scoop to scoop dough onto parchment-lined baking sheets.

Ritz Carlton Peanut Butter Cookies FAQs

Are these the actual Ritz Carlton peanut butter cookies?

This recipe is based on the peanut butter cookie recipe shared by The Ritz-Carlton Half Moon Bay on their social media account.

Can I freeze the cookie dough?

Yes! Scoop the dough into balls before freezing. Bake straight from frozen, adding 1–2 minutes to the baking time.

Why do my peanut butter cookies crack on top?

Small cracks are completely normal and are a sign that the cookies are baking properly.
