Sometimes I question what the difference between a muffin and a cupcake is. Is it simply the lack of frosting? Is it because they are thicker with more of a quick-bread texture? Whatever it is, I’m team muffin and these double chocolate chip muffins are TO DIE FOR and rival anything from a local bakery. They would be delicious as jumbo muffins, you’d just need to alter the baking time. An adaptation of our favorite chocolate pumpkin muffins, these muffins are rich, chocolatey, and easy to make.
Double Chocolate Muffins
This recipe makes 12 double chocolate muffins. We like adding a few extra chocolate chunks to the top of each muffin as soon as they come out of the oven, but you can use chocolate chips if you’d like. We start with a basic chocolate muffin base with the additions of sour cream and applesauce and flavored with regular cocoa powder, then we stir in a handful of chocolate chunks (or semisweet chocolate chips). They are delicious and served warm or at room temperature, but our favorite way to eat them is warm. You can reheat them for a few seconds in the microwave to achieve this.
