These cherry turnovers with homemade puff pastry are buttery, flaky, golden, and filled with sweet cherry filling. Making puff pastry from scratch takes a little patience, but the result is worth every minute. Once you taste a warm cherry turnover made with homemade puff pastry, you'll understand why these are worth making from scratch.

This recipe shows you how to make homemade puff pastry and turn it into individual cherry turnovers with crisp, flaky layers and a sweet cherry center. The pastry is made with simple ingredients, then rolled and folded several times to create those beautiful layers. I learned how to make puff pastry from my friend, Amalia, who was born and raised in Sweden. She taught a puff pastry class at church and showed us how versatile the dough can be! I adapted my current recipe from Emeril Lagasse.
Don't let homemade puff pastry intimidate you! The process is simply a matter of rolling, folding, and chilling the dough. You don't need special equipment, and you can work through the steps gradually throughout the day.

Tips and Tricks
- Keep the butter cold. Cold butter is essential for creating flaky layers. If the butter becomes soft while you're working with the dough, put everything back in the refrigerator before continuing.
- Don't rush the chilling time. Chilling keeps the butter firm and allows the dough to relax, making it easier to roll and fold.
- Don't overwork the dough. Mix the initial dough just until it comes together. Overworking it can make the pastry tougher.
- Use only a little flour when rolling. A lightly floured surface keeps the dough from sticking without incorporating too much extra flour.
- Don't overfill the turnovers. Too much cherry filling can make the pastries difficult to seal and can cause the filling to leak during baking.
- Seal the edges well. Run a little water along the edges before folding and press firmly to seal the turnovers.
- Keep the finished pastries cold before baking. If the pastry becomes warm while you're assembling the turnovers, refrigerate the baking sheet for a few minutes before placing it in the oven.
- Bake in a fully preheated oven. Puff pastry needs a hot oven to create the steam that separates the layers and gives the turnovers their beautiful rise.
What Is Puff Pastry?
Puff pastry is a laminated dough made by layering butter between sheets of dough. The dough is repeatedly rolled and folded, creating many thin layers of butter and pastry.
When the pastry is baked, the water in the butter turns to steam. The steam pushes the layers apart, creating the flaky, crisp texture that makes puff pastry so delicious.
The process may sound complicated, but it really comes down to roll, fold, chill, and repeat.
Ingredients
- All-purpose flour: Forms the base of the puff pastry dough.
- Salt: Enhances the flavor of the pastry.
- Butter: Creates the flaky layers. Keep it cold throughout the process.
- Ice water: Brings the dough together while keeping it cold.
- Cherry pie filling: Provides the sweet cherry center. You can use store-bought or homemade cherry filling.
- Egg: Used to make an egg wash that gives the turnovers a beautiful golden finish.
- Water: Thins the egg for brushing over the pastry.
- Sugar: Adds a little sweetness and crunch to the tops. You can use regular or coarse sugar. I use whatever I have on hand.

How to Make Homemade Puff Pastry
Homemade puff pastry takes some time, but most of that time is hands-off chilling. The rolling and folding process is what creates the flaky layers.

Step 1: Prepare the butter. Measure the butter according to the recipe. Place the portion that will be incorporated into the dough in the refrigerator. Place the remaining butter between sheets of wax paper and gently pound and shape it into a square. Refrigerate until firm.

Step 2: Make the dough. Combine the flour and salt in a large mixing bowl. Cut the chilled butter into the flour mixture until it resembles coarse crumbs.

Step 3: Add the water. Make a well in the center and gradually add the ice water. Mix with a rubber spatula just until a rough dough forms. Do not overmix. Wrap the dough and refrigerate for 1 hour.

Step 4: Enclose the butter. Roll the chilled dough into a large circle. Place the chilled butter square in the center and fold the dough over it, pressing the seams together so the butter is completely enclosed.

Step 5: Roll the dough. Roll the dough into a long rectangle. If the butter is very firm, gently pound the dough with your rolling pin to help soften it enough to roll without tearing.

Step 6: Fold the dough. Fold the rectangle into thirds, like folding a letter. Rotate the dough a quarter turn.
Step 7: Roll and fold again. Roll the dough into another rectangle and fold it into thirds again. Wrap the dough and refrigerate for 30 minutes.

Step 8: Repeat the process. Continue rolling and folding until you've completed six total rolls and folds, chilling the dough as needed between rounds.
Step 9: Chill the finished dough. Wrap the completed puff pastry and refrigerate it for at least 1 hour before making the turnovers.
How to Make Cherry Turnovers
Once the puff pastry is ready, the turnovers are quick to assemble.

Step 1: Roll out the pastry. Place the chilled puff pastry on a lightly floured surface and roll it to about ¼-inch thick.
Step 2: Cut the pastry into squares. Use a pizza cutter or sharp knife to cut the dough into squares. Larger squares will make larger turnovers, while smaller squares can be used for mini turnovers.

Step 3: Add the cherry filling. Place a small amount of cherry pie filling in the center of each pastry square. Leave plenty of room around the edges for sealing.

Step 4: Fold the turnovers. Fold each square diagonally to create a triangle. Lightly moisten the edges with water and press firmly to seal.
Step 5: Transfer to a baking sheet. Place the turnovers on a parchment-lined baking sheet, leaving space between each one.

Step 6: Brush with egg wash. Whisk the egg with water and brush it over the tops of the turnovers. Sprinkle with coarse sugar.
Step 7: Bake. Bake at 400°F for about 22–25 minutes, or until the turnovers are puffed and golden brown.

Step 8: Cool slightly. Let the turnovers cool on the baking sheet for several minutes before transferring them to a cooling rack. The cherry filling will be extremely hot straight from the oven.
Cherry Turnover Variations
Once you've made these homemade turnovers, it's easy to switch up the filling.
Try apple, peach, lemon raspberry, or blueberry filling for a different flavor combination. A thick filling works best because it is less likely to run out of the pastry while baking. You can also use the homemade puff pastry for savory turnovers filled with cheese, vegetables, or seasoned meat.
How to Serve Cherry Turnovers
Cherry turnovers are delicious warm or at room temperature. For a bakery-style finish, dust the cooled turnovers with powdered sugar or drizzle them with a simple vanilla glaze.
Frequently Asked Questions
Yes. The puff pastry can be prepared ahead of time and refrigerated until you're ready to use it. Keeping the dough chilled also makes it easier to work with.
Yes. Wrap the finished dough tightly in plastic wrap and place it in a freezer-safe bag or container. Thaw it in the refrigerator before rolling it out.
Yes. You can freeze baked cherry turnovers once they have cooled completely. Wrap them well and store them in a freezer-safe container. Reheat them in the oven to help restore their crisp texture.
Store baked turnovers in an airtight container at room temperature for up to a couple of days. They are best when eaten fresh because the pastry gradually loses some of its crispness.
Yes. Reheat them in a 350°F oven or toaster oven until warmed through. This helps crisp the pastry better than microwaving.
Absolutely. Store-bought puff pastry is a convenient shortcut when you don't have time to make the dough from scratch. Follow the same filling, folding, and baking instructions.
Puff pastry needs cold butter and a hot oven. If the butter became too warm during preparation or the oven wasn't fully preheated, the pastry may not puff as much.
If the dough is very cold, let it sit at room temperature for a few minutes before rolling. If the butter starts becoming soft or squeezing out of the dough, refrigerate it again.
Some amount of leaking is normal. However, if all of the filling seeps out, overfilling is one of the most common causes. Use a modest amount of filling and make sure the edges are firmly sealed before baking.
Yes. Homemade cherry pie filling works beautifully. Let the filling cool completely before adding it to the pastry.
Yes. Cut the pastry into smaller squares to make mini cherry turnovers. Begin checking them earlier since smaller pastries will bake more quickly.
Apple, peach, blueberry, raspberry, and lemon fillings all work well. You can also make savory turnovers with cheese, vegetables, or meat.
The recipe makes about 9 large turnovers. You can make more if you cut the pastry into smaller squares.
Yes. Homemade puff pastry can be used for many sweet and savory pastries. It's especially useful for turnovers, Danish-style pastries, and other filled pastries.

Cherry Turnovers With Homemade Puff Pastry
Ingredients
- 3 ½ cup flour
- 1 teaspoon salt
- 1 ½ cup plus 2 tablespoons chilled butter 3 ¼ sticks, divided
- 1 cup ice water plus more as needed
- 1 can cherry pie filling
- 1 large egg
- 1 Tbsp. water
- sugar for sprinkling coarse or granulated
Instructions
- Measure out 6 tablespoons of butter and place back in the refrigerator.
- Place the remaining chilled butter on a work surface, in between two pieces of waxed paper. Using a rolling pin or the heal of your hand, smash the butter into the surface until pliable, taking care not to over work the butter as it should stay chilled. Work butter into a 5-inch square. Wrap and place in refrigerator.
- Sift together flour and salt into a large mixing bowl. Dice the 6 tablespoons of chilled butter.
- Remember the 6 tablespoons of butter that you set aside? Go ahead and get that out and dice it into small cubes. Place the diced butter into the mixing bowl and, using a pastry blender, blend until the mixture is a coarse meal.
- Make a well in the center of the mixture and add the water. Use a rubber spatula to gradually blend the water with the flour mixture, mixing just until a rough, sticky dough is formed. Wrap dough in plastic wrap and refrigerate for 1 hour.
- Remove the rested dough from the refrigerator and place on a lightly floured work surface. Roll out dough into a 12-inch circle, being careful not to pull or tear the dough. Unwrap the butter square and place into the center of the circle and fold the edges of the dough over the butter, pressing to seal the edges.
- You should now have a square of butter wrapped in dough.
- Now we will begin the rolling process. The dough will be rolled out a total of 6 times.Using a rolling pin, roll the square into a 16 by 8-inch rectangle. (The dough may need to be pounded with the rolling pin several times to allow the butter to become more pliable.) Be careful not to tear the dough. Sprinkle any sticky areas with a tiny amount of flour.
- Fold the rectangle into thirds, as you would a business letter.
- Rotate the dough a quarter turn and roll into ANOTHER 16 by 8-inch rectangle.
- Fold again as you would a business letter.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes. Note: you can write a "2" on the plastic wrap with a permanent marker to help you remember that you already rolled the dough out two times.
- Return the rested dough to a lightly floured surface and repeat the process of rolling the dough into a rectangle, making business-letter folds, giving it a quarter turn and rolling and folding once more.
- Wrap the dough in plastic wrap and refrigerate for at least another 30 minutes. Note: you can write a "4" on the plastic wrap with a permanent marker to help you remember that you already rolled the dough out four times.
- Remove the dough from the refrigerator and place on a lightly floured work surface. Roll into a 16 by 8-inch rectangle and fold again like a business letter. Roll out again and fold again. You have now rolled and folded the dough a total of 6 times. Wrap and refrigerate for 1 hour. Now the pastry is ready to be rolled and used in the desired puff pastry recipe.
- Roll dough ¼" thick and cut it (using a pizza cutter) into 5" squares. Add 1-2 tablespoons of filling in the center, then fold the square in half to form a triangle.
- Dip a finger in water and run it along the seam and press to close. Place pastries on a parchment paper lined baking sheet.Mix egg and water to create an egg wash and brush the tops of pastries using a pastry brush. Sprinkle with sugar.
- Bake @ 400 degrees for 22-25 minutes or until golden.

Can you freeze the dough?
Brandy says
Hi Lori! I haven't ever frozen the dough, but a good friend of mine who made and sold her turnovers would freeze her dough on occasion. Hope that helps!
Daniel Ellis says
Why wont mine puff up really? I used country crock because it was all I had. Is that wrong? Email me at hidef.built@gmail.com
Brandy says
Hi Daniel! A lot of the time you can substitute margarine in baking, but there are some recipes that it just won't work the same. Puff pastry is one of those and needs the butter for flavor and texture. It has just enough fat for taste and buttery melt in your mouth feel, but enough water to create steam for the pastry to 'puff' and be all flaky and tender. The texture of cold butter is also critical to the formation of all those layers. I wouldn't give up on the recipe! Try it again with butter and let me know how it goes!
I will reply on the post here and then send you the e-mail as well incase anyone else had the same question! Have a great week!
