Scotcheroo truffles are easy to make and are rich and delicious. This is the same filling that I use for my white chocolate peanut butter truffles. It's made from peanut butter, butter, powdered sugar, and Rice Krispies cereal. It got me thinking...scotcheroos are also made from peanut butter, sugar, and Rice Krispies cereal. I'd already made scotcheroos in several forms---it was time to make a truffle. Instead of dipping them in white chocolate, I dipped them in melted chocolate and butterscotch chips!
Why I Like This Recipe
- Tastes like scotcheroos: All of the classic components of scotcheroos are in these truffles. The only difference is that instead of being crunchy like a Rice Krispies treat, they have a soft filling with a slight crunch from the rice cereal.
- Easy to make: These truffles look fancy, but couldn't be easier to make! They come together quickly, and one batch makes 3 dozen delicious truffles.
- Make-ahead treat. These are a great treat to make for the holidays because they can be made and stored in advance. Store truffles in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

Tips and Tricks
- Use a dipping tool. If you don’t have one of these candy dipping tools, I’d highly recommend getting one. It leaves a pretty swirl on the top of each truffle, making dipping them in chocolate a breeze.
- Do not overheat the chocolate. I usually use my microwave and heat the chocolate chips and butterscotch chips for 30 seconds, then I stir and heat them in additional 15-20 second intervals until smooth and creamy. Every microwave is different. My advice is to go low and slow in short intervals.
- Butterscotch drizzle. If you'd like to add a butterscotch drizzle, melt ¼ cup of butterscotch chips and spoon the butterscotch into a plastic baggie. Make a small cut in the corner of the bag and drizzle over scotcheroo truffles. This is an easy way to set these apart from other truffles on holiday treat platters.
- Easy variations. Try dipping your truffles in the following melted compounds: Melted butterscotch chips, milk chocolate, and dark chocolate.

Ingredients

- Peanut butter: smooth or crunchy
- Butter
- Powdered Sugar
- Semisweet chocolate chips: I prefer semisweet to cut the sweetness, but you can also use milk chocolate chips or chocolate melting wafers.
- Butterscotch chips: You'll need some for dipping and a small amount for drizzling.

How To Make Scotcheroo Truffles

Step 1: Combine all ingredients (except chocolate) until a soft dough forms.

Step 2: Form the dough into 1″ balls. Place truffle balls on a baking sheet lined with parchment paper or wax paper. Freeze them for at least an hour. This makes them easy to dip without getting sticky.

Step 3: Melt chocolate chips and butterscotch chips in a double boiler or microwave. I usually use my microwave and heat the chocolate chips and butterscotch chips for 30 seconds, then I stir and heat them in additional 15-20 seconds intervals until smooth and creamy. Every microwave is different, my advice is to go low and slow in short intervals. DO NOT OVERHEAT CHOCOLATE.

Step 4: Dip the truffle balls in chocolate, tapping the fork or tool against the edge of the bowl to allow excess to drip off.

Step 5: Place the truffles back onto the baking sheet to allow the chocolate to harden.

Step 6: Melt ¼ cup of butterscotch chips and spoon the butterscotch into a plastic baggie. Make a small cut in the corner of the bag and drizzle over scotcheroo truffles.
Store truffles in an airtight container at room temperature or in the refrigerator for up to 2 weeks.
Scotcheroo Truffle FAQs
If you haven't had Scotcheroos before, you are in for a treat. Many claim them as a Midwest treat, but I grew up in California, and we had them there, too. Scotcheroos are a combination of peanut butter, sugar, Karo syrup, and Rice Krispies cereal. After combining those ingredients, you slather them with melted chocolate and butterscotch chips. PERFECTION, and oh so rich. These truffles are a variation on the original recipe.
Chocolate melting wafers or almond bark are best for dipping as they easily melt down smoothly and are the perfect consistency. I like using chocolate chips as well. If the chocolate chips need to be thinned out, I add a small amount of coconut oil or shortening.
Store truffles in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

Scotcheroo Truffles
Equipment

Ingredients
- 1 cup creamy peanut butter
- 1 cup powdered sugar sifted
- 2 Tbsp. butter softened
- 1 ½ cup rice crispies cereal
- 1 cup semisweet chocolate chips (or melting chocolate wafers)
- 1 cup butterscotch chips (+ ¼ cup for drizzling, optional)
Instructions
- Combine peanut butter, butter, and sugar in a mixing bowl. Add cereal. Mix well.
- Roll into 1" balls and place on parchment lined baking sheet. Freeze 1 hour.
- Melt your chocolate chips and butterscotch chips in a double boiler or microwave (stirring every 30 seconds until smooth). Dip peanut butter balls into chocolate.
- Tap the side of the bowl to let excess drip off.
- Place truffles back onto baking sheet.Note: If the truffles start to get sticky while you are dipping them, place back in the freezer for 15 minutes.
- If you'd like to add a butterscotch drizzle, melt the remaining ¼ cup of butterscotch chips and drizzle over the truffles.

These were way sticky and impossible to roll. I had a scoop I used to make them a little more rounded. Used exact measurements so not sure if not enough powdered sugar and maybe hands and house were just too warm but was if peanut butter was melting.

These are GREAT! but I feel I’m missing something. It’s impossible to shape into balls prior to freezing. Way too sticky
