Pumpkin cookies don’t get any easier than these! Our 3 ingredient pumpkin cookies are made with spice cake mix, canned pumpkin, and chocolate chips. That’s it!

When @HouseofSmiths shared these 3 ingredient pumpkin cookies last year on Instagram (I think she first saw them on TikTok) I knew I had to make them too! The recipe is so simple and easy to remember. They whip up quickly and are the perfect fall cookie. These are, by far, my favorite kind of cake mix cookies.

I used chocolate chunks this time, but semisweet mini chocolate chips are actually my favorite because they disperse throughout the entire cookie. White chocolate chips would be delicious as well.

3 Ingredient Pumpkin Cookies

I love using cake mixes to make semi-homemade desserts. I took a series of cake decorating classes twelve years ago and my instructor said that when she ran her business she used cake mixes and doctored them up. I’ve been doing this ever since in many of my dessert recipes. I use cake mix to make cosmic brownie cookies, mini carrot bundt cakes, and our lemon loaf (copycat Starbucks). A cake mix is used in this pumpkin cookie recipe. Easy and delicious and the cake mix already has the pumpkin spices in it.

3 Ingredient Pumpkin Cookies Ingredients

Spice cake mix, canned pumpkin, and chocolate chips.

  • Spice cake mix: you’ll need 1 (15 oz.) box of spice cake mix. You can use carrot cake or spiced cake to get the pumpkin pie spice flavors.
  • Canned pumpkin: 1 (15 oz.) can of pumpkin puree (NOT pumpkin pie filling)
  • 1 cup chocolate chips: semisweet chips or chunks

How to Make the Easiest Pumpkin Cookies

  1. Preheat your oven to 350 degrees and spray a cookie sheet with nonstick cooking spray (or line it with parchment paper).
  2. Stir cake mix and canned pumpkin together in a large bowl with a hand mixer or Danish dough whisk until just mixed.
  3. Stir in chocolate chips.
  4. Scoop cookie dough using a medium cookie scoop (2 Tbsp.) onto the baking sheet.
  5. Bake cookies for 13 minutes. Allow them to stand on the cookie sheet for 2-3 minutes before transferring the cookies to a wire rack.

This recipe makes 28 cookies. Store cookies in an airtight container.

Easy Pumpkin Cookie Variations

  • Use milk or white chocolate chips.
  • Add a handful of chopped pecans or walnuts
  • Drizzle cookies in maple glaze
  • Sprinkle cookies with cinnamon and sugar before baking (omit chocolate chips)

  • 1 can pumpkin 15 oz.
  • 1 cup chocolate chips or chocolate chunks

Instructions

  • Preheat your oven to 350 degrees and spray a cookie sheet with nonstick cooking spray (or line it with parchment paper).
  • Stir cake mix and canned pumpkin together in a large mixing bowl until just mixed.
  • Stir in chocolate chips (you can reserve some to add on top of the cookies before baking if you'd like).
  • Scoop using a medium cookie scoop (2 Tbsp.) onto the cookie sheet.
  • Bake cookies for 13 minutes. Allow them to stand on the cookie sheet for 2-3 minutes before transferring the cookies to a wire cooling rack.
