Have you ever had a layered eclair dessert? Some call it chocolate eclair cake. No matter what you call it, it’s amazing. This is one of our family’s favorites, and it is so simple to make. As an added bonus, it’s no-bake! This is one of those desserts that seems like it might be complicated to make, but it isn’t. Trust me!

What Is a Layered Eclair Dessert?

  • Graham crackers are placed in a single layer into a baking dish for a crust.
  • A mixture of vanilla instant pudding and whipped cream (or Cool Whip) is spread over the crackers.
  • This is followed by a second layer of crackers and a second layer of pudding.
  • A third layer of crackers is then added, and a homemade chocolate ganache glaze (smooth chocolate frosting) is poured over the final layer of graham crackers.
Two delicious layers of pudding mixed with cream, 3 layers of graham crackers, and one layer of chocolate. The crackers soften, and the chocolate sets up as the dessert refrigerates. Perfection.

Can You Make This Dessert Ahead Of Time?

Absolutely. It actually needs to refrigerate for a few hours before you serve it. 8 hours is idea, so it’s a great dessert to make the day before!

Layered Chocolate Eclair Dessert

Ingredients

Filling

  • 1 box graham crackers
  • 1 5.1 oz. box instant vanilla pudding (or two small boxes)
  • 3 cups milk
  • 1 12 oz. container whipped topping

Chocolate Topping

  • 1/3 cup cocoa
  • 1 cup sugar
  • 1/4 cup milk
  • 1 stick butter
  • 1 teaspoon vanilla

Instructions

  • Whisk milk and pudding mix together. Fold in whipped topping.
  • Place a layer of graham crackers in the bottom of a 9x13" casserole dish or baking pan. Spread half of the pudding mixture over graham crackers.
  • Add another layer of graham crackers. Spread remaining pudding mixture on top of graham crackers.
  • Top with a final layer of graham crackers.

Chocolate Topping

  • Bring cocoa, milk, and sugar to a boil in a medium saucepan; boil on medium heat about 1 minute, stirring very frequently. Remove from heat.
  • Add butter and vanilla; stir until butter is melted. Pour over the top layer of graham crackers.
  • Refrigerate over night (6-8 hours).

    This was my Grandma’s “go to” recipe for desserts. We only did the vanilla pudding though. It is still a family favorite here and the recipe is always asked for when we have this dish. =0)
