    Pie Crust Cookies Sprinkled With Cinnamon and Sugar

    There is usually a bit of pie dough leftover after assembling your pie. Don't toss it! Sprinkle with cinnamon and sugar and bake to make deliciously flaky little pie crust cookies!

    To me, pie crust is the best part of the pie!  I remember swapping pie crust and pie filling with my cousin at the Thanksgiving table. I'd give her my pumpkin pie filling and she would give me the crust off of her pie. What can I say? I'm a pastry girl through and through.

    What Are Pie Crust Cookies?

    My mom would take the pie crust scraps, roll them out, cut them into shapes then spread butter over them. She'd then sprinkle them with cinnamon and sugar and bake in the oven. She didn't make pies very often, so it was such a treat to have those little pie crust cookies! I make them for my kids, too. My girls are always right there asking for the scraps when I'm done assembling my pie.

    You can usually get 6-8 tiny cookies (mine were 1 ½" teddy bears) from the leftover scraps of pie dough. It all depends on how thin you rolled it out. So go ahead and make a batch of pie crust JUST for making your own cookies. I won't judge. If you do this you'll easily get 20 (4 inch) cookies.

    Cook Time: 6 minutes minutes
    Total Time: 11 minutes minutes
    Servings: 20 cookies

    Ingredients

    • 2 cups flour
    • 1 teaspoon salt
    • ⅔ cup shortening
    • 3 Tbsp. butter
    • 2 teaspoon vegetable oil
    • ⅓ cup buttermilk

    Instructions

    • Mix flour and salt in a bowl. Cut in shortening using a pastry cutter. Cut in butter. Add oil and milk and stir until a soft dough forms.
    • Roll dough out to ¼" thickness. Cut into 20 (4") cookie shapes using a small cookie cutter.
    • Spray with butter spray (or brush with butter).
    • Sprinkle with cinnamon and sugar.
    • Bake at 425 degrees for 6-7 minutes.

    Notes

    If you do not have buttermilk, substitute milk. Add 1 T. vinegar or lemon juice to the milk before pouring it into the bowl.

      Those are super-cute. We always roll it all out, smear it with butter add sugar and cinnamon then roll it up and cut it out like cinnamon rolls...

      My mom used to do that, too. 🙂 I'd kinda forgotten about it, though. In fact, I made 4 pies this weekend and tossed all the scraps in the chicken bucket...darn! Thanks for the reminder, they look tasty!

      What a fun idea! Too bad I hardly ever make pie crusts from scratch, the Pillsbury ones are just too easy!
