What’s an It’s It?
It’s It ice cream sandwiches are made with oatmeal cookies and are completely dipped in chocolate. They come in a variety of flavors, but original and chocolate chip mint are my favorite. I love them so much that we made sure to stop at the headquarters and factory shop when we lived in California. The shop is small, but they sell all of the flavors and you can buy them individually. The kids had a great time picking out some new flavors to try. You can also find them at your local grocery store, but the whole point of this post is to show you how to make them yourself so here we go…
Our version is just as good as the original and are made out of my FAVORITE oatmeal cookie recipe. You’ll notice that I only dip half of the sandwich in chocolate. It’s easier to make them that way and easier to eat because you have a place to hold it without having your fingers touch the chocolate.
The BEST Ice Cream Sandwich Cookie Recipe
Do you have desserts that take you back to your childhood? I remember my mom making these delicious oatmeal cookies when I was a kid. She found the recipe in an issue of “Country Magazine”. They were called “Poor Man’s Cookies” because they contain no eggs, butter, or milk. They are the cookie to make when your refrigerator is bare! I still make these cookies for my family and they are always a hit. These are the best cookies for making your own ice cream sandwiches. Nice and flat and they stack beautifully.
Not everyone is a fan of baking with shortening, or using shortening at all. You’ll be surprised how much flavor these cookies have without butter (and we all know that I use butter in EVERY other recipe that I have on here so I don’t say that lightly). There is almost a coconut-y flavor to them. It doesn’t make any sense, but I don’t question it.
Ingredients
Cookies
- 3/4 cup shortening
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoons salt
- 2 cups rolled oats
Ice Cream
- ice cream
- Smucker’s Magic Shell Topping
Directions
In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats.
Drop onto greased baking sheets using medium cookie scoop. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.
This cookie recipe yields enough for 12 sandwiches (24 cookies).

Return to baking sheet (lined with parchment or wax paper) and freeze until ready to serve!

Copycat It's It Chocolate Dipped Ice Cream Sandwich Recipe
Ingredients
- 3/4 cup shortening
- 1 cup packed brown sugar
- 1/2 cup sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cup rolled oats
- Ice Cream
- Smucker's Magic Shell Chocolate Fudge Flavored Topping
Instructions
- In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats.
- Drop onto greased baking sheets using medium cookie scoop. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool.
- Arrange cookies on a baking sheet lined in parchment paper. Add one scoop of ice cream onto a cookie and press down with a second cookie.
- Freeze ice cream sandwiches for at least 1 hour.
- Pour Smucker's Magic Shell Chocolate Fudge Flavored Topping into a small bowl and dip each ice cream sandwich half way into chocolate.
- Return to parchment lined baking sheet and freeze until ready to serve.
