Soup is the ultimate comfort food, and this recipe SO easy to make! If you like chicken pot pie, you'll love this soup. Everything goes in the slow cooker at the same time, and simmers all day! This soup was inspired by our easy individual chicken pot pies recipe that my family loves. If you are anti-cream of chicken soup from a can you can make your own. I grew up on canned, and use it for my family. It makes such a creamy (and EASY) base for chicken pot pie filling.

Chicken Pot Pie Soup Ingredients

I love soup recipes because most can be customized to fit your tastes. My husband doesn't care for peas so I leave them out completely. Feel free to add them if you'd like! You can also use a bag of frozen vegetables instead of the fresh carrots and celery that I used.

• 2 chicken breasts, cut into bite-sized pieces
• 5-6 medium red potatoes, cut into bite-sized pieces
• 1 onion, diced
• 1 cup celery, chopped (2 sticks)
• 2 cups carrots, chopped
• 3 cans cream of chicken soup
• 2 cups chicken broth
• ½ teaspoon pepper
• 1 Tbsp. dried parsley

Slow Cooker Directions

Combine everything into a slow cooker and cook on HIGH for 5 hours or LOW for 8 hours. This soup makes 8 generous servings of soup, heats up well for leftovers, and is so delicious served with fresh baked biscuits. We can't decide which ones pair better with this soup; our garlic cheddar drop biscuits or our 3-ingredient butter biscuits (pictured below). Both are fantastic!
