Slow cooker lasagna is ridiculously easy to make! You don't even need to boil the pasta. Layer everything in the slow cooker and cook on LOW for 4-6 hours!

I first had slow cooker lasagna at church. One of the ladies demonstrated just how simple it was to layer everything into the slow cooker and my mind was blown. No boiling the pasta? No messy pan to clean up afterwards? Count me in. And it was delicious!

I'm putting together a cookbook of easy slow cooker recipes for the girls that I work with in our church's youth group who are graduating high school. I knew that this recipe needed to be included. I altered the ingredients to make it as simple as possible for college students. A jar of this, a package of that. EASY.

    Slow Cooker Lasagna Ingredients

    • 1 lb. ground beef or turkey
    • 1 teaspoon garlic powder
    • 1 teaspoon Italian seasoning
    • 2 (24 oz.) jars spaghetti sauce
    • 1 (16 oz.) package lasagna noodles
    • 16 oz. cottage cheese (2 cups)
    • ½ cup. grated parmesan cheese (the cheap stuff)
    • 16 oz. mozzarella cheese (2 cups)

How to Make Lasagna in the Slow Cooker

    1. Brown beef in skillet. Drain fat. Add garlic powder, Italian seasoning and spaghetti sauce. Bring to a simmer then remove from heat.
    2. In a separate bowl, mix cottage cheese with mozzarella cheese and parmesan cheese.
    3. For easy clean up, line the slow cooker with a cooking liner.
    4. Pour ⅓ of the sauce mixture into the slow cooker.
    5. Add 5-6 lasagna noodles over sauce. Break them to fit if necessary.
    6. Spoon ⅓ of the cheese mixture over noodles.
    7. Repeat layering the sauce, noodles and cheese until the ingredients are gone.
    8. Cook on LOW 4-6 hours, or until noodles are tender.

One pot of lasagna will serve 6-8 people. I like serving it with a Caesar salad and French bread or quick parmesan breadsticks.
