- Simple ingredients. These quick cookies are a semi-homemade treat. In other words, I used a cake mix to achieve maximum simplicity. They are made from a spiced cake mix, chocolate chips, and a can of pumpkin puree. The pumpkin puree gives the dough the richness and texture that eggs and fat normally would.
- Easy to customize. I used chocolate chunks this time, but semisweet mini chocolate chips are actually my favorite because they disperse throughout the entire cookie. White chocolate chips would be delicious as well.

- Use a cake mix. I love using cake mixes to make semi-homemade desserts. I took a series of cake decorating classes twelve years ago, and my instructor said that when she ran her business, she used cake mixes and doctored them up. I’ve been doing this ever since in many of my dessert recipes. I use cake mix to make cosmic brownie cookies, mini carrot bundt cakes, and our lemon loaf (copycat Starbucks). A cake mix is used in this pumpkin cookie recipe. Easy and delicious, and the cake mix already has the pumpkin spices in it.
- Easy variations.
- Use milk or white chocolate chips.
- Add a handful of chopped pecans or walnuts
- Drizzle cookies in the maple glaze that I use for my baked pumpkin donuts.
- Sprinkle cookies with cinnamon and sugar before baking (omit chocolate chips)
- Grease the baking sheets. Most cookie recipes don't require greased baking sheets, but these pumpkin cookies don't have the normal amount of butter or oil. Spray a baking sheet with non-stick spray or use parchment paper on your baking sheet.

How to Make 3-Ingredient Pumpkin Chocolate Chip Cookies

Step 1: Preheat your oven to 350 degrees. Stir the cake mix and canned pumpkin together in a large bowl using a hand mixer or Danish dough whisk until just combined. Stir in chocolate chips.

Step 2: Scoop cookie dough using a medium cookie scoop (2 Tbsp.) onto the parchment paper-lined baking sheet.

Step 3: Bake cookies for 13 minutes.

Step 4: Allow cookies to stand on the cookie sheet for 2-3 minutes before transferring the cookies to a wire rack.
This recipe makes 28 cookies. Store cookies in an airtight container.
Pumpkin Cookies FAQs
Use 100% canned pumpkin puree, not pumpkin pie filling for pumpkin cookies.
Because the spiced cake mix already contains spices, there is no need to add pumpkin pie spice to these cookies.
You'll want a cake mix that has spices in it to complement the pumpkin flavor. I like using spiced cake mix or carrot cake mix. You could even use a chocolate cake mix and add pumpkin spice.
