Ice Cream

You'll find two types of ice cream recipes. Recipes that require churning (in an ice cream machine) and those that don't (no-churn). No-churn ice cream simply means that it does not require an ice cream machine to thicken the mixture and get creamy. It does not need to be stirred constantly while it cools. No-churn ice creams are typically made with cream and sweetened condensed milk, which replaces the custard base in traditional homemade ice cream recipes.

Some ice cream machines require rock salt, others don't. The recipes on here are made using a Cuisinart ice cream maker, which does not require rock salt. Rock salt lowers the freezing point, and when mixed with ice on the outside of the ice cream maker, it aids in cooling and freezing the custard base. It just depends on the style of ice cream maker that you have.

Homemade ice cream should be stored in an airtight freezer container to prevent freezer burn and ice crystals.
