    Sidewalk Paint Rockets: A fun backyard science activity!

    We made an entire rainbow of them and had fun setting them off and decorating the sidewalk in the backyard. The kids had friends over and everyone got involved with the mess!

    We've made sidewalk paint out of corn starch, water, and food coloring many times. Did you know that if you add an antacid tablet and capture it in a small container that the gasses will build up and explode? I saw this idea in a kids magazine years ago and it was so easy!

    Here's how to do it!

    Sidewalk Paint Rockets

     Supplies:

    antacid tablets

    cornstarch

    film canisters

    food coloring

    water

    Add 2 drops of food coloring to each container, followed by ½ tsp. cornstarch.

    Fill with water until canister is ⅓ full. Stir.

    Break an antacid tablet into 3 or 4 smaller pieces. You will need one full tablet (broken into smaller pieces) per canister.

    And now for the fun part!

     

    Place the canister on the ground with plenty of clearance space. QUICKLY add the antacid tablet pieces, snap the lid onto the canister, turn it over so that the lid is against the ground, and RUN!

    The canister will shoot high into the air, leaving behind a colorful starburst behind! You can't stop at just one rocket. Keep setting them off until your sidewalk looks like it has been beautifully tie-dyed!

    Hose down the sidewalk with water when you are ready to clean up.

    Ruby loves farm animals, especially pigs and the color PINK! We combined both of loves into a darling farm party for her for her 4th birthday. It was such an EASY party to plan and super cute too!

    Farm Party Decor

    The decor mostly consisted of items we already had. We used our Little People farm as well as all her farm-themed puppets and toys to decorate the table and for the kids to play with.

    I ordered the cow tablecloth and barn treat boxes from Oriental Trading. The boxes doubled as party decor and party favors.

    Party Favors

    We filled the treat boxes with candy eggs, rubber ducks, jelly beans, and leftover bubblegum from the pig ice cream cones.

    Party Activities

    We only did a couple of activities and gave the kids plenty of time to play.

    These farm sticker pages were a fun activity to do while we waited for everyone to arrive.

    They put on a puppet show using our doorway theater and puppets.

    After lunch, we had pig ice cream cones! I was inspired by Hungry Happenings, and they were so easy to make.

    I recommend making these cones the same day, not too much in advance, as ice cream cones soften in the freezer. I made mine 3 hours before the party, but they would have been fine up to 6 hours or so.

    Pig Ice Cream Cones

    These pig ice cream cones are darling and made from 3 ingredients: ice cream, bubble gum, and candy eyes!

    Ingredients

    • 6 ice cream cones
    • strawberry ice cream or any pink ice cream
    • 9 Dubble Bubble bubble gum
    • 12 candy eyes

    Instructions

    • To create a nose, cut a piece of bubble gum in half. Make 2 indentations on one of the slices for nostrils.
      Tip: Use the end of a lollipop stick or fondant tool to make the indentations.
    • To create the ears, cut a piece of bubble gum in half.
      Tip: You can use a lollipop stick or a small tool to give the ears a bit more shape in the center so that they "fold".
    • Scoop large scoops of pink eye cream and press onto ice cream cones.
    • Press the nose and ears onto the scoop of ice cream. Press candy eyes into the ice cream above the nose.
    • Immediately place the ice cream cone into the freezer.
      Repeat for the remaining ice cream cones.

    Notes

    I recommend making these cones the same day, not too much in advance, as ice cream cones soften in the freezer.
    Prepare the candy details ahead of time and only work on one ice cream cone at a time to prevent the ice cream cones from melting.

    Baked Jalapeño Poppers

    Crispy jalapeño poppers that are baked, not fried! Stuffed with two types of cheeses and rolled in crushed corn flakes. Crispy, spicy, yummy!

    Baked Jalapeño Poppers
    This guy loves his jalapeño peppers. Jalapeño bread, jalapeño egg rolls, you name it---he loves it. We had a few jalapeños that needed to be used up the other day so he got on his gloves and began slicing and dicing those peppers to make a small batch of baked poppers. These are easy to make, only require a few ingredients, and are nice and crispy! Make a batch for your next get together and they'll be gone quickly. Promise.

    Baked Jalapeño Poppers

    Baked Jalapeño Poppers

    Ingredients:

    6 jalapeño peppers, sliced in half (lengthwise) and seeded (12 pieces)

    3 oz. cream cheese, softened

    ⅓ c. shredded Mexican cheese blend

    2 eggs

    2 T. milk

    ⅔ c. flour

    1 ½ c. crushed corn flakes cereal or panko bread crumbs (we've used both and they are equally as delicious)

    ½ tsp. garlic powder

    Directions:

    Preheat oven to 350 degrees. Lightly spray a baking sheet with non stick cooking spray.

    Heat a small pot of water to a boil. Blanch sliced peppers for 3 minutes. Immediately place peppers in a  bowl of ice water to cool down. Pat dry with paper towels and set aside.

    Mix cheeses together. Divide cheese mixture among peppers, pressing the mixture into each pepper cavity.

    Pour flour onto a plate for dipping. Add garlic powder.

    Beat eggs and add milk and place in a bowl for dipping.

    Crush corn flakes and place on another plate for dipping.

    Roll each pepper in flour and then dip in egg mixture. Repeat for a second coating.

    Roll in crushed corn flake mixture and set on a baking sheet.

    Repeat for remaining 11 pepper pieces.

    Bake for 35 minutes.

    Baked Jalapeño Poppers
    Makes 1 dozen poppers. Serve with ranch dressing if desired. This recipe can easily be doubled to accommodate a crowd.

    It seems like all children, boys and girls, go through a phase of being fascinated with dinosaurs. I'm still fascinated by them and love that we have a resident 2 year old paleontologist in the home.

    Activity #1: Ice Excavating Dinosaurs

    Step 1: Fill a balloon with water and a tiny dinosaur and then freeze!

    Step 1: Grate Ivory soap and form around a tiny dinosaur toy.

    Step 2: Use a bit of water to really make it stick together.

    I work with the 12 and 13 year old teenage girls in our church's youth group. The girls are so sweet and adorable at that age! We meet on Tuesday nights for youth group activities. I needed to come up with an activity the week that we were moving out of our house. I decided to use up some pantry ingredients at the same time and voila! Scripture Cookies in a Jar. A spiritual activity and practical one all in one. I had everything I needed already!

    Scripture Cookies In a Jar Worksheet

    I made a printable worksheet that you can use too. Just click here to print! Search the scripture references for the key ingredients. ANSWERS: flour, cinnamon, salt, baking soda, raisins, oats, white sugar and brown sugar, butter, egg.

    I had a bunch of plastic pint-sized jars leftover from a project so I customized my recipe to fit inside of them. These plastic jars are great to keep on hand for projects with kids. They don't break! Everything fits inside, with very little room to spare. If you use a Mason pint-sized jar, leave the raisins or chocolate chips out and place in a baggie. Both the plastic and mason jar are pint-size, but for some reason, the glass jars hold a little less. You can also use a larger jar.

    Layering Ingredients for Scripture Cookie Jars

    Watch our video to see how we perfectly layered everything to fit in the jar. Here is the order that works best:

    Start with flour then add baking soda, cinnamon, and salt. Add chocolate chips and oats. Pack down tightly. Finally, add the sugars. Pack down again. 

    Note: the scripture reference for oats comes from the Doctrine & Covenants. A book of scripture used by the LDS faith. If you are not of the LDS faith, you can use a scripture verse that refers to any sort of grain and have the kids use that for oats instead.

    I brought both raisins and chocolate chips and let the girls decide which ones they wanted to use. (Mostly because I don't like raisins in cookies and assume others might feel the same way!)

    The activity was a success and each girl went home with a worksheet that they had filled out together and a jar of cookie ingredients.

    When they got home all they had to do was add an egg, ⅓ c. butter, and ½ tsp. of vanilla to their mixture.

    Each jar will make approximately 15-18 cookies. And the cookies are REALLY GOOD. Double the batch and make them on your own sometime. So delicious! I had an extra jar and put it in our RV and made them for our family when we were in Oregon. You can see my easy-bake-sized oven that I'm using for baking in my RV this summer here in this photo, ha! It works pretty well though!

    Looking at the measurements of ingredients, it's hard to imagine that they'll all fit inside, but they do. Just pack down the sugar and oats and everything will fit just right!

    Chopped Italian Summer Salad

    A beautiful chopped Italian salad, paired with creamy macaroni and cheese. An ideal pairing for a summer evening!

    Welcome to my kitchen! If you've been following along you already know that we are currently living in our 27' travel trailer as we make our way across the United States over the next three months. Right now we are in Oregon for a week and will go back to California for another month before we head east to Virginia. Travel trailers have come along way over the years. The one we have now is leaps and bounds more convenient than the one we had just eight years ago.

    My pint sized kitchen has every modern convenience, minus a dishwasher. I even have a little oven. Cute, right? I'm still figuring out the learning curve for baking inside of it. It seems to bake a bit unevenly, but it reheats beautifully! I found a variety of Family Size Stouffer's entrees and they have been great for easy dinners. Right now we are still driving the kids to school everyday and staying on the Air Force Base 30 minutes away. It's really taking a toll with dinner prep on the nights that we stay late for track practice or youth group.

    Last week I made a tray of Stouffer’s Family Size Macaroni & Cheese and a big chopped Italian salad. The two paired beautifully together! You can heat the macaroni and cheese in the oven or the microwave. I prefer using the oven for heating whenever possible so that's the route I went.

    While my macaroni and cheese got all gooey and bubbly, I prepared my chopped Italian salad. Are you obsessed with chopped salads too? Shreds of romaine lettuce, black olives, red onions, artichoke hearts, grape tomatoes and dried salami. Sprinkled with parmesan cheese and drizzled in Italian dressing. I could eat a different chopped salad every night of the week and never get bored. The temps are in the mid 80s here so it seems like salad season is already upon us.

    Prepared foods are a great time saver and there are so many new dishes and flavors to choose from! To build a balanced meal, use prepared foods as your base and pair with an easy-to-make side dish made of fruits, vegetables, whole grains and/or low-fat dairy. Stouffer’s Mac & Cheese recipe includes real, simple ingredients, like freshly made pasta, cheddar cheese, milk and butter. It actually tastes about as close to homemade macaroni and cheese as you're gonna get! I think it even has the same texture as my homemade macaroni and cheese. A little more grainy vs. overly creamy because it's made with real cheese instead of processed.

    My kitchen may be small, but it is one of my favorite things about our RV. I can still make delicious meals at "home" even when we are parked along the side of the highway.  Follow our summer adventures on Instagram using the #TheNelsonsMoveAgain hashtag!

    I may not come through when it comes to preparing hearty and hot breakfasts for my family, and we're all about light and quick lunches, but dinner? Dinner is where I redeem myself. I enjoy making delicious and healthy dinners even on the busiest of weekdays. That's when I pull out all the kitchen hacks like slow cookers, pre-washed and chopped salads, and quick cooking meals like chicken breasts or pork tenderloins.

    Today I'm letting you in on a secret. See that photo of our sheet pan pork tenderloin dinner? That came together in under 45 minutes, start to finish! That even included the prep time! These pork tenderloins from the grocery store are already marinated and make dinner prep SO EASY. I picked out a cracked black pepper and roasted garlic one and it was delicious, but any of the marinated pork tenderloins would be fantastic.

    1 (1.5 lb. ) Smithfield Roasted Garlic & Cracked Peppercorn Tenderloin

    2 lbs. red potatoes, cut into bite-sized pieces

    1 lb. brussels sprouts, quartered

    olive oil, to taste

    kosher salt

    ground black pepper

    Pre-heat oven to 425 degrees. Cut your vegetables into bite sized pieces. Toss with olive oil and salt and pepper.

    Arrange on a sheet pan, leaving an area in the center for the tenderloin.

    Place tenderloin in the center of the pan.

    Roast, uncovered until internal temperature reaches 145-160 degrees (about 35 minutes).

    Remove pan from the oven and let pork sit for 10 minutes before slicing.

    Traveling from California to Virginia: Our first Road Trip Stops

    It's hard to believe we've already been living in our RV for two weeks. Change is hard, even when we know that it is coming. This isn't our first time leaving friends behind to start a new life in a new state, we've done it several times before, but it doesn't get any easier to leave loved ones behind.

    Our moves with the military generally take us coast to coast. There are SO MANY things to see between the Pacific and Atlantic oceans. We live in an absolutely amazing country. Growing up in California, I rarely traveled more than an hour outside of my hometown. My family just didn't travel, but my husband grew up traveling and went on two cross country trips from Alaska to Florida with his family. He has wonderful memories of these trips, so we've carried on that tradition with our own children. When we move we turn it into an exciting family adventure instead of a sad event, and try to make positive memories for our children to look back on.

    In thier short lives our kids have seen Niagara Falls, Mount Rushmore, The Grand Canyon, Yellow Stone, The Gila Cliff Dwellings, White Sands National Monument, Carlsbad Caverns, Victoria B.C., Alaska, Laird Hot Springs, Devil's Tower, The Indianapolis Raceway, many of the LDS church history sights, waterfalls in Oregon, food factories across the U.S., the Redwoods in California, and many other sights.

    This year we are adding a few more to the list! We're still working on our final trip itinerary, but have already mapped out a few places in Utah, Colorado, and Kansas that we'd like to see. We are always looking for neat places to explore, so if you have any suggestions of places to check out between California and Virginia---we're all ears!

    We have family in Utah, so we've been around Cache Valley and the Salt Lake areas a handful of times, but we haven't really been anywhere else! Utah is such a diverse state with beautiful mountains, canyons, the desert, and the snow. We added Moab to our list of places to visit and can't wait to see the amazing rock formations and I've been researching other areas like Tooele County.

    Tooele County is just south of I-80 as you enter from Nevada. I recently had a friend post on Facebook about attending their Lantern Festival last year, and I immediately thought of the movie, "Tangled". It would be so neat to go to with our family! At The Lantern Fest, thousands of revelers join together armed with lanterns for one unforgettable spectacle. Before sundown friends and families can enjoy food, live music, a stage show, familiar princesses, face painters, s'mores, balloon artists and more. Then, when the time is just right, we will light the sky with our highest hopes and fondest dreams. Unfortunatly it is happening on May 20th and we aren't going through that area until late June. Bummer!

    My oldest loves race cars. Have you heard about the Bonneville Salt Flats?  April-June is the Salt Flats Racing Association's Test and Tune.

    Other activities include: Deseret Peak Facility, Pony Express Trail, Donner-Reed Trail, ATV & OHV trails, Scuba diving - Salt Water underground diving, and Sailing on the Great Salt Lake. If you're a country music fan, be sure to check out the Country Fan Fest happening from July 27th-30th! Artists include Billy Currington, Old Dominion, Tucker Beathard, Blackhawk and more!

    It never ceases to amaze me what each state in the U.S. has to offer. You just have to know where to look, and be willing to travel! I hope our kids look back on these road trips with fond memories and want to continue them with their own families!
