    I am so stinkin' proud of these cookies! A simple adaptation of our rocky road cookies, which are an adaptation of our double chocolate cookies. I'm telling you, when you figure out a good basic cookie dough you'll find yourself using it a million different ways. Our Texas Sheet Cake cookie version is, hands down, my favorite version using this chocolate cookie dough. These are unbelievable and SO easy to make.

    I love the glossy layer of melted chocolate frosting on Texas Sheet Cake that you pour onto the hot cake. These cookies are made these made the same way! Fudgey in the center, and coated in a smooth frosting that hardens as it cools.

    Texas Sheet Cake Cookie Ingredients

    Cookies:

    • melted butter
    • cocoa powder
    • white sugar
    • brown sugar
    • eggs
    • vanilla
    • salt
    • baking soda
    • flour

    Frosting

    • butter
    • powdered sugar
    • cocoa powder
    • vanilla
    • milk

    How To Make Texas Sheet Cake Cookies

    I use my stand mixer for making cookies, but a hand mixer or Danish dough whisk works as well.

    Combine melted butter and cocoa powder in a large bowl and mix. Add sugars and mix until smooth. Add eggs and vanilla. Add dry ingredients.

    Allow dough to chill in the refrigerator for about 45 minutes. You don't need to chill very long, just enough for the dough to set up enough to form into cookie balls.

    While the dough chills, beat the frosting ingredients together. Set aside.

    Use a medium cookie scoop (2 Tbsp. size) to drop cookies on a parchment paper-lined baking sheet.

    Bake at 350 degrees for 9 minutes (DO NOT OVERBAKE!) Leave cookies on a baking sheet instead of moving them to a cooling rack. They will set up slightly as they stay on the hot sheet.

    As soon as the cookies come out of the oven, spoon on a tablespoon of frosting onto each cookie. I use a small cookie scoop (1 Tbsp. size). Let stand 3 minutes. It will become glossy and soft.

    Spread frosting over cookie and sprinkle with chopped nuts.

    Allow cookies to cool completely. The frosting will harden slightly making it the perfect texture.

    Store cookies at room temperature in an airtight container or covered with plastic wrap. They will stay soft for 3 days.

    COOKIES

    • 1 cup melted butter

    • Combine melted butter and cocoa powder. Stir until smooth.
    • Cream brown sugar and white sugar with the butter/cocoa mixture.
    • Add eggs and vanilla.
    • Stir in salt, baking soda, and flour.
    • Chill dough for 45 minutes. Preheat oven to 350 degrees.
    • Mix frosting ingredients and beat until smooth and creamy.
    •  Scoop dough onto cookie sheets using a medium cookie scoop (2 Tbsp. size).
    • Bake cookies for 9 minutes.
    • As soon as cookies come out of the oven scoop 1 tablespoon of frosting onto each cookie. Allow cookies to sit 3 minutes to allow frosting to soften and begin to melt.
    • Spread frosting over cookies.
    • Sprinkle with chopped nuts, if desired.

    Chocolate Shortbread Heart Cookies (Video)

    Chocolate shortbread heart cookies are the perfect Valentine's Day treats! Homemade shortbread cookies are dipped in chocolate then sprinkled in chopped pecans. Buttery, decadent and delicious!

    I love the simplicity of shortbread cookies, just 3 ingredients and you don't need to chill the dough! The melt-in-your-mouth texture can't be beat and they are so fun to customize. I love cutting them into heart shapes and sprinkling with chopped pecans. Pecans give them a crunch as well as a rich, buttery flavor. These cookies remind me of our toffee bars recipe!

    Dip or drizzle, either way is delicious and easy to do. I used semi-sweet chocolate chips, but you can use melting chocolate wafers if you'd like.

    Once the chocolate hardens you can stack the cookies for storage or place in a cookie jar. These cookies would be the perfect addition a Valentine's dessert board or charcuterie tray with our heart shaped strawberries! 

    SHORTBREAD COOKIE INGREDIENTS

    • 1 cup butter (salted butter)
    • ¾ cup powdered sugar (confectioners' sugar)
    • 2 cups flour
    • 1 ½ cups chocolate chips (semi-sweet or milk chocolate)
    • ½ cup chopped pecans

    How to make chocolate shortbread heart cookies

    Combine butter, powdered sugar and flour in a large bowl using an electric mixer (I use my stand mixer with paddle attachment). The dough may appear crumbly, but keep mixing and it will turn into a soft dough. Trust me! You can also form the dough with your hands.

    Roll dough out on a lightly floured surface using a rolling pin. Dough should be ¼"- ½″ thick.

    Cut out using a small heart cookie cutter and place on ungreased cookie sheet.

    Bake at 325 degrees for 13-15 minutes. Let cool on baking sheet 5 minutes before transferring to a wire rack. Cool completely.

    Melt chocolate chips in the microwave in a microwave-safe bowl. Heat for 30 seconds then stir. Heat an additional 30 seconds and stir once more. It should be smooth and almost completely melted. Stir until the remaining chocolate chips are melted and smooth. If it needs more time heat an additional 10 seconds.

    Dip cookies halfway in chocolate, allowing excess chocolate to drip off,  and place on parchment paper. Sprinkle with chopped pecans.

    To drizzle, fill a ziplock baggie with melted chocolate and cut a TINY piece off of the corner of the bag. Drizzle chocolate over cookies then sprinkle with chopped pecans.

    This recipe makes 30 shortbread hearts. Feel free to mix things up using white chocolate, dark chocolate or milk chocolate! You can even dip in dark chocolate and drizzle in white chocolate. Yum!

    What is it about circus animal cookies that make them so insanely delicious? They've been one of my favorites since I was a child. I love that they now come in fun seasonal shapes and colors, too! We revamped one of our favorite sugar cookie recipes with sprinkles, white chocolate, and circus animal cookies to create these colorful and delicious cookies!

    Circus Animal Sugar Cookies

    These cookies start out with the SOFTEST sugar cookie. These aren't rolled sugar cookies, but rather the ones that you'd find at the bakery with frosting and sprinkles.

    I normally frost them with marshmallow frosting (which is SO easy to make), but switched things up with white chocolate this time. Both versions are delicious, depending on what you're going for! If you want a soft frosting, make our marshmallow frosting for the circus animal sugar cookies. If you'd like a thin white chocolate coating, use melted white chocolate chips!

    How To Make Soft Circus Animal Sugar Cookies

    You'll start out by beating the butter until it's soft and fluffy, followed by the sugars. Add in the eggs and mix thoroughly before mixing in the oil, vanilla and almond extract.  You might wonder why you need oil AND butter in this recipe. This, my friends, is what makes these cookies insanely soft. Don't skimp!

    Add the dry ingredients, and finally a handful of sprinkles.

    Scoop dough into balls and bake at 325 degrees for 12 minutes.

    Once cookies have had a chance to cool, melt white chocolate chips and spread a thin layer over each cookie followed by more sprinkles and a circus animal cookie!

    Circus Animal Sugar Cookies

    • 1 cup  butter softened

    • 16 oz. Marshmallow Creme
    • 4 cups powdered sugar
    • 2 teaspoons vanilla
    • 2 Tbsp. milk

    Instructions

    • Preheat oven to 325 degrees.
    • Beat butter in a large bowl with a stand or hand mixer until nice and fluffy, continue to beat (lowering speed) and add in sugars.
    • Stop mixer and scrape the sides of the bowl. Add eggs, 1 at a time, followed by vanilla and almond extract, then oil. Add baking soda, cream of tartar and salt.
    • Add flour 1 cup at a time until soft dough forms. Add in sprinkles and mix just until sprinkles have dispersed throughout dough. Do not overmix.
    • Roll dough into walnut sized balls (or drop onto baking sheets using a cookie scoop) and bake on an ungreased cookie sheet for 12 minutes.
    • Cool 1 minute on pan and transfer to a wire rack to cool completely.

    Frosting Option #1- White Chocolate

    • Melt white chocolate chips in a microwave-safe bowl for 30 seconds. Stir. Heat an additional 30 seconds. Stir until smooth and creamy.
    • Spread a small amount of white chocolate over each cookie. Add sprinkles and a circus animal cookie.

    Frosting Option #2- Marshmallow Frosting

    • Mix butter and powdered sugar together using an electric mixer until fluffy.
    • Stir in vanilla, milk, and marshmallow creme and mix well.
    • Spread or pipe over cookies. Add sprinkles and a circus animal cookie to each sugar cookie.

    Note: if you are going to pipe the marshmallow frosting over the cookies, make a full batch of frosting. If you'd prefer to spread a thin amount over each cookie using a butter knife, you can make half batch of frosting.
    Optional mix-in: If you want more circus animal cookie flavor, add a handful of crushed animal cookies to the dough mixture before rolling into balls.

    Slow Cooker Cowboy Stew (Video)

    Hearty Cowboy Stew

    I love a good soup or stew on a cold day and this Cowboy soup is so hearty and delicious. It's SIMPLE too---my favorite kind of recipe. Cowboy stew has been around for a long time, and there are quite a few different ways to make it. Most recipes include ground meat (turkey or beef), sausage, potatoes, tomatoes, spices and beans. Some use pinto beans, others use baked beans. I've also seen some recipes that use bacon.

    I feel like this is the perfect dish for cleaning out the refrigerator. Add any veggies you'd like (frozen or fresh) like carrots or mixed vegetables.

    My version makes a large batch, enough for 8 people, and the leftovers are fantastic! I find that it's best to allow the stew to stand for 30 minutes before serving. This allows it to slightly cool off and thicken. I like preparing mine in my slow cooker, but I'll include stove top directions as well.

    Cowboy Stew Ingredients

    • 1 lb. ground beef or turkey: I buy ground turkey 99% of the time so that is what I use.
    • 1 large onion, diced
    • 1 (12 oz.) package keilbasa: I use turkey kielbasa, but you can use smoked sausage, polish sausage, etc.
    • 2 (16 oz.) cans chili beans in mild sauce
    • 2 teaspoons minced garlic cloves
    • 1 (4 oz.) green chiles
    • 1 ½ cups frozen whole kernel corn or 1 can of corn (drained)
    • 14 ounces crushed or diced tomatoes in juice (I prefer crushed)
    • 1 ½ lbs. red potatoes (3-4 medium potatoes)
    • 1 cup beef broth (can also use water)
    • 1 Tbsp. Worcestershire sauce
    • salt and black pepper (to taste)

    How To Make Slow Cooker Cowboy Stew

    1. Brown turkey in a large skillet with diced onion on medium-high heat. Cook until meat is done and onions are clear.
    2. Cut potatoes into 1 inch pieces and kielbasa into small bite sized pieces.
    3. Add meat to slow cooker. Add remaining ingredients and stir. Cover, and cook on HIGH for 5 hours or LOW for 8 hours (until potatoes are tender).

    Stew will thicken as it cools to a chili/stew consistency.

    How To Make Stove Top Cowboy Stew

    1. Brown turkey in a large pot or dutch oven with diced onion on medium-high heat. Cook until meat is done and onions are clear.
    2. Cut kielbasa and potatoes into bite sized pieces.
    3. Add remaining ingredients to the pot, stir, and bring to a boil.
    4. Reduce heat, cover, and allow stew to simmer for 1 hour.

    Stew will thicken as it cools to a chili/stew consistency.

    Quick Apple Turnovers (Homemade Pastry Dough) Video

    Homemade puff pastry dough in an hour? It can be done! These quick apple turnovers with homemade puff pastry are flaky and delicious. Use canned apple pie filling or make your own! Makes 8 apple turnovers. This post contains an affiliate link.

    If you’ve been here for more than a minute you know how much I love pastry. Pies, croissants, turnovers—-they are my favorite dessert, bar none. That being said, I was thrilled to stumble across a puff pastry recipe from the Food Network a few years ago that only takes an hour to make. 1 HOUR.

    The puff pastry dough that my friend from Sweeden taught me how to make twelve years ago takes about 4 hours to make. Honestly, I like this recipe just as much! There aren’t AS many layers, but the layers are ridiculously flaky and buttery. You can always make quick turnovers with pre-made puff pastry sheets from the freezer section at the grocery store, but there's just something about making your own, and when you can make your own dough in an hour (and still get that flaky crust), it's definitely worth doing!

    You can make your own apple pie filling or use store-bought. Both are delicious!

    Quick Apple Turnovers Ingredients

    • COLD butter: DO NOT use margarine. You'll want butter, and I always use salted butter.
    • flour: all purpose flour works great.
    • COLD water
    • salt
    • apple pie filling: you can make your own homemade apple mixture or use store-bought pie filling. You’ll only use ½ of the can.
    • egg + water (egg wash): brushing pastries with an egg wash gives it a shiny finish and a golden color.
    • coarse sugar (or clear sugar sprinkles): this makes for a pretty finish, a sweetness, and a bit of a crunch. You can also use granulated sugar and mix in a pinch of cinnamon.

    HOW TO MAKE QUICK PUFF PASTRY

    There are 3 things to remember when making puff pastry:

    1: Use COLD BUTTER

    2: Don’t over-work the dough

    3: Refrigerate Dough

    If you have a food processor, follow the instructions in this post. If not, scroll to see how I make mine by hand.

    We’re going to start out with 2 sticks of COLD BUTTER. Chop it into tiny pieces and place it back into the refrigerator.

    Grab a half stick of COLD butter (4 Tbsp.) and chop it into tiny pieces. Add it to 2 cups of flour in a medium mixing bowl, and use a pastry cutter to blend until it resembles coarse sand.

    Remember the 2 sticks of butter that you chopped and refrigerated? Pull that out and toss with the flour mixture. Don’t cut it in with the pastry cutter. Just coat with flour.

    Mix ½ c. cold water and 1 teaspoon of salt together and pour into bowl. Blend until all water has been absorbed and a rough dough has formed. I use my pastry cutter or Danish dough whisk to do this. Gently mix and press. It’s ok if it looks rough, just make sure there isn’t a lot of dry flour on the bottom of the bowl. You may add an extra tablespoon of water (if needed) to help the dough come together. It will be crumbly, but you shouldn't a lot of flour leftover in the bowl.

    Roll dough out between two pieces of plastic wrap. It doesn’t need to be perfect, you are just pressing all of those butter cubes into the dough. It might still be a little crumbly along the edges. That’s fine.

    Remove the plastic wrap and use your hands to shape dough into a ball on a floured surface. Flour your hands to avoid the butter sticking to it.

    Roll out dough to a 6″x18″ rectangle (see image above). Cover the rolling pin in flour to prevent any butter from sticking to it. Fold dough into thirds like you would a business letter.

    Wrap with plastic wrap and refrigerate for 1-2 hours.

    When the dough has had time to chill, place on a floured surface and pound with a rolling pin to make it a bit softer. Watch my video to see how I do this. Then roll out to a long rectangle, ¼″ thick. My rectangle was about 11″x22″ and I trimmed it down with a pizze slicer to 10″x20″.

    Slice the dough into 5″ squares. Spoon a small amount of apple pie filling onto each square.

    Fold the turnover on a diagonal and press down with your fingers to seal. Then press down along the edges with a fork.

    Use a sharp knife to cut an "x" or small slits on the top for venting. Place turnovers on an ungreased baking sheet or a baking sheet lined with parchment paper.

    Brush the tops of each turnover with an egg wash and sprinkle with coarse sugar. I use clear sugar sprinkles.

    When baked for 22-24 minutes they puff up and turn golden. The filling stays HOT for quite awhile. Let them rest a bit before serving. So yummy! This recipe makes 8 (5″) turnovers.

    Note: you can drizzle the turnovers in icing if you'd like, but I like mine plain. Here's a simple glaze recipe:

    • 2 cup powdered sugar
    • ⅓ cup butter or margarine melted
    • 1 ½ teaspoon vanilla
    • 2-4 Tbsp. hot water

    Quick Apple Turnovers Recipe

    Homemade puff pastry dough in an hour? It can be done! These quick apple turnovers with homemade puff pastry are flaky and delicious. Use canned apple pie filling or make your own! Makes 8 apple turnovers.

    Ingredients

    Puff Pastry

    • 1 ¼ cups cold butter (2 ½ sticks divided)
    • 2 cups flour
    • ½ cup cold water (plus an extra Tablespoon if needed)
    • 1 teaspoon salt
    • 1 can apple pie filling (you will use ½ of a can)

    Egg Wash

    • 1 egg
    • 1 Tbsp. water
    • coarse sugar

    Instructions

    • Cut 2 sticks of butter into small pieces. Place on plate and refrigerate.
    • Cut the other ½ stick of butter into small pieces. Add to mixing bowl with 2 cups of flour and use a pastry cutter or two butter knives to blend. Should resemble coarse crumbs/sand.
    • Add refrigerated butter cubes to flour mixture. Toss to coat with flour. DO NOT cut in with pastry cutter.
    • Mix cold water and salt together. Add to bowl. Mix until water has been absorbed and a rough dough forms. Use hands or Danish dough whisk to mix dough. Dough won't look completely formed and there will be butter chunks, and that's okay.
      You may add an extra tablespoon of water (if needed) to help the dough come together. It will be crumbly, but you shouldn't a lot of flour leftover in the bowl.
    • Dump dough onto a piece of plastic wrap. Place a second piece of plastic wrap on top and press with hands to flatten. Roll with a rolling pin until butter has flattened and dough is flat across the top.
      This step will help press the butter into the flour.
    • Remove plastic wrap and place dough onto floured surface. Flour hands to prevent dough from sticking and form dough into a ball. Flatten slightly with hands into a disc shape.
    • Cover rolling pin with flour to prevent butter from sticking and roll dough into a 6" x 18" rectangle. Fold dough into thirds, like a business letter.
    • Wrap dough in plastic wrap and refrigerate for 1 hour.
    • When dough has refrigerated for 1 hour, preheat oven to 400 degrees.
    • Flatten dough on floured surface by pounding with rolling pin a few times. Roll out until dough is ¼" thick. Trim edges of dough to a 10" x 20" rectangle. Cut into 8 (5 inch) squares.
    • Add a small amount of apple pie filling to the center of each pastry square.
    • Fold pastry in half (diagonally). Press down with fingers. Press fork around the edge of each pastry to seal. Place turnovers onto ungreased baking sheet or baking sheet lined with parchment paper.
    • Mix egg with 1 Tbsp. water to create an egg wash. Brush over turnovers and sprinkle with sugar (I use coarse sugar sprinkles).
    • Bake for 22-24 minutes, or until golden brown. Cool on a wire rack. These are delicious served with a scoop of vanilla ice cream.

    Tips for making puff pastry: Do NOT over mix/work dough. Use COLD butter. Use COLD water. Never use margarine. Make sure dough refrigerates for at least an hour.

    Brown Butter Chocolate Chip Cookies

    Chocolate chip cookies have, and always will be, my favorite cookie. Classic, delicious, and loaded with my favorite food---chocolate. These brown butter chocolate chip cookies are chewy and create a burst of flavor in your mouth. A slight caramel flavor, and the best combination of sweet and salty.

    Why Brown Butter for cookies?

    Brown butter ads a richness and nuttiness to anything it is added to. It can be used in both savory and sweet recipes. When you add brown butter to a cookie recipe it adds a depth of flavor, and yields a soft, chewy cookie. Once you start browning butter you won't be able to stop! It's liquid gold.

    Let's talk about this cookie dough for a minute. I'm not usually a raw cookie dough fan so you won't typically find me sneaking a taste of the dough---but this dough changed that.  Oh my goodness. It's so good and you can totally taste the brown butter. You've been warned.

    Chilling the Dough

    This cookie dough needs to be chilled at least 4 hours to achieve its full flavor. Chilling the dough allows the flavors from the brown sugar and the brown butter to meld, and the sweet and saltiness really comes through. If you're going to take the time to brown the butter, then chill the dough. You won't be sorry!

    Many recipes recommend chilling this type of cookie dough for 24 hours. I did that with one batch, just to see if it made a difference. I don’t think it was noticeable enough to be worth waiting the 24 hour chill time for a cookie. 4 hours worked perfectly.

    No time to chill? Make our classic chocolate chip cookies instead! No chilling required.

    Tip: instead of chilling the entire bowl of cookie dough, scoop out cookie dough balls onto a parchment lined baking sheet and cover with plastic wrap. No need to space them out. Refrigerate the entire pan. Your cookies will be ready to bake as soon as they are done chilling. Preheat the oven and place the cold cookie dough balls onto cookie sheets and bake. This is easier than scooping cold cookie dough.

    Brown Butter Chocolate Chip Cookie Ingredients

    • butter
    • brown sugar
    • white sugar
    • eggs
    • milk
    • vanilla
    • all purpose flour
    • baking powder
    • baking soda
    • kosher salt

    How To Make Brown Butter Chocolate Chip Cookies

    The Butter: Salted or unsalted butter? I use salted butter for ALL of my baking, but I'll leave it up to you. Slice butter into pieces and heat in a skillet on medium heat. Stir frequently. Butter will foam as it cooks. Continue to stir until you see brown specks forming. It’s easy to go from perfectly browned butter to black, burnt butter so watch carefully and remove from heat as soon you smell the nutty aroma and see the amber color and brown bits form. Pour into a bowl to allow the butter to cool to room temperature before baking.

    The dough: Whisk flour, baking soda, baking powder and kosher salt together in a bowl. Set aside. Mix brown sugar, white sugar and cooled brown butter together in a stand mixer (or with electric mixer) until smooth. Add eggs and mix. Add vanilla and milk. Add flour mixture and mix completely. Last, but not least, stir in the chocolate chips.

    Chill: Scoop dough using a medium cookie scoop then roll into balls and place on parchment paper lined cookie sheet (and cover with plastic wrap). Chill 4 hours. Once chilled, simply place the cookie dough balls on an ungreased (or parchment-lined) baking sheet.

    Baking: Preheat oven to 350 degrees and bake cookies 12-14 minutes or until edges are golden brown. Allow cookies to cool on pan for 3-5 minutes before transferring to a wire rack.

      In a separate mixing bowl cream brown sugar, white sugar and cooled brown butter. Mix in eggs. Add vanilla and milk and mix until smooth.
      Add dry ingredients and mix completely.
      Stir in chocolate chips.

    Chill

    • Use a medium cookie scoop to scoop dough then roll each into a ball. Place all 36 cookie dough balls on a parchment-lined cookie sheet (and cover with plastic wrap).
      Chill 4 hours. Once chilled, simply place the cookie dough balls on an ungreased (or parchment-lined) baking sheet.

    Bake

    • Preheat oven to 350 degrees and bake cookies 12-14 minutes.
      Allow cookies to cool on pan for 3-5 minutes before transferring to a wire rack.

    Note: If you'd prefer to chill the entire bowl of dough, cover it in plastic wrap. Once chilled, let it sit on the counter for 10 minutes to slightly soften the dough enough to scoop into balls.

    Creamy Slow Cooker Pepperoncini Chicken (Video)

    Creamy slow cooker pepperoncini chicken is ridiculously easy to make, full of flavor, and delicious served over rice or noodles or on a toasted bun. The perfect meal for busy families and makes great leftovers.

    If you’re looking for a comforting and flavorful meal—this is it! You might mistakenly think that this is a spicy meal, but it’s not. It’s family-friendly and so delicious over white rice or noodles. You can even serve it in hoagies. I first used pepperonis in a meal like this when we made Mississippi pot roast. I loved the unique flavor they added to the dish and knew they'd be delicious mixed with chicken or even a pork tenderloin in other crockpot meals.

    Our pepperoncini chicken differs from any Mississippi chicken recipe or Mississippi pot roast recipe because I do not use butter or packets of au jus gravy mix, and I use a lot less dry ranch seasoning. Ours is a creamy version that is perfect to ladle over rice.

    What are Pepperoncini Peppers?

    You might recognize these peppers from salad bars, pizza boxes, or from behind the glass at your local Subway sandwich shop. We love pepperoncini peppers and always keep a jar in our refrigerator. They are delicious on sub sandwiches and pizza! You'll most often find pickled pepperoncini peppers, and that is what we're using today for this dish. Grab a jar and reserve some of the juice for the sauce!

    Pepperoncini peppers have a sweet and mild flavor. On their own, they have a bit of heat (hotter than a banana pepper, but much more mild than a hot pepper), but in a dish like this, where they are allowed to simmer all day, they are mild and add a sweet taste to the meal.

    Creamy Pepperoncini Chicken Ingredients

    boneless skinless chicken thighs: I prefer chicken thighs for this recipe, but you can also use boneless skinless chicken breasts or tenders. You'll need 2 pound (about 8 thighs) for this recipe.

    canned cream of chicken soup: I realize not everyone is a fan of canned cream soups. If this applies to you, feel free to make your own. Canned is easy so that's what we're using. You'll need 2 cans.

    pepperoncini peppers: You'll want to grab a 16 ounce jar of sliced or thinly sliced peppers. You can find these next to pickles in the condiment aisle at the grocery store. You'll use 1 cup of the peppers and ½ cup of the juice in this recipe.

    dry ranch dressing mix: Buy a 1 ounce packet and use half in this recipe, saving the rest for next time.

    How To Make Slow Cooker Pepperoncini Chicken

    Place everything in the slow cooker, cover with the lid, and cook on HIGH for 4 hours or on LOW 6-8 hours.

    Shred chicken with 2 forks and return to slow cooker.

    Server over steamed rice, mashed potatoes, noodles, riced cauliflower, or on a hamburger bun (add a slice of your favorite cheese to the sandwich version. Melted provolone cheese is a good choice!).

    • Sprinkle with ranch seasoning mix.

    • Shred chicken and return to slow cooker.
    • Serve over steamed rice or cooked noodles.

    Alaska Northern Lights

    When I think of winter, I think of Alaska. Long winters, cold temps, snow, but a beauty that is truly found nowhere else in the United States. While Alaska is part of the United States, it is truly set apart by location and culture.

    The northern lights, or the aurora borealis, are a magnificent sight to see! I don't know the science behind it, but if you are lucky enough to see it in person it is a gift! The northern lights are visible across the world in places like Norway, Iceland, Greenland and Yukon (Canada). My husband is from the Yukon Territory just across the Canadian border in Alaska. He was born and raised in a tiny town on the Alaska-Canada border called Eagle. Population: 100.

    A Few Facts About Alaska

    We lived in Kodiak, Alaska as a family for four years and enjoyed the scenery, small town atmosphere, and animals that we grew to love. It has been almost 8 years since we've lived there, but we've gone back to visit a few times and will continue to do so forever.

    Aaron was our only child born in Alaska. He is very proud of that and talks about it frequently. It is truly a fascinating place. Did you know that if Alaska was placed on top of the lower 48 states that it would span from Florida to California?

    Alaska has more coastline than the rest of the U.S. With over 3 million lakes, the tallest mountains, 730,000 residents, and more caribou than people, it truly is the last frontier.
    We decided to combine some of the wonders of Alaska into a fun craft for kids to make and shared it with our friends at Little Passports blog many years ago! The links to the silhouettes no longer work on their site so you can find them here, as well as the step by step instructions.

    Northern Lights Watercolor Silhouette Tutorial

    Now it's time to make your own northern lights! This craft is the perfect activity to incorporate some of the animals you’d likely encounter in Alaska. Ones that we saw in person quite a few times are bears, moose and salmon. You could even cut out a silhouette of a mountain range and glue that over the watercolor project at the end instead of an animal silhouette! Create snowy mountains using a piece of chalk, white pastel or a white crayon on the mountain shape!

    How To Make a Northern Lights Watercolor Craft

    Step 1: Have the kids paint a piece of white paper with watercolors in beautiful hues and designs. Cover the entire page in wavy lines of paint.

    Step 2: Choose your favorite Alaska silhouette and glue it to the painting once it has dried.

    Step 3: Glue to a black frame made out of black construction paper or cardstock and hang!

    There are so many neat things to share and discover about this magnificent state. Take some time and study it for yourself with the kids! 

     

    Winter Olympics Craft: Felt Olympic Flag

    Here's fun little Winter games Olympics craft to make with the kiddos before the opening ceremonies. Do you know what the colored rings represent? When the symbol was created in 1913, the 6 colors (including the white background) represented the colors of every nation’s flag!

    The Winter Olympics are just about here! We can’t wait to watch some snowboarding and bob sled racing over here! I remember looking forward to watching the olympics as a child, and enjoy watching with my own children as we cheer on the USA. I always look forward to the inspiring stories behind the athletes too, those who beat all odds to be able to represent their country.

    Here is a simple felt Olympic rings flag activity that kids can use over and over (perfect for little hands and preschoolers), arranging the rings in order, or glue together for a festive decoration come August!

    What Do The Colors In The Olympic Flag Represent? 

    The Olympic flag, with its colorful rings, are an iconic symbol when the Olympics comes around, but do you know what the colored rings represent? 

    It’s really simple, actually! The 6 colors (including the white background) represent the colors of EVERY nation, without exception! In the flag you’ll find red, white, and blue for America and England, blue and white for Greece, red and white for Japan, and yellow and red for China! What other colors do you recognize for different nations?

    You can create an Olympic flag of your own to show off your olympic spirit and have the kids call out the countries as they recognize them while watching the Olympics.

    How To Make A DIY Felt Olympic Flag

    Cutting out the rings may seem daunting, but it’s actually pretty simple! I used a toilet paper roll for the pattern for the larger circle. Then I folded each circle in half and cut out a smaller semi circle in each one. When I unfolded the felt, I had a perfect ring!

    Glue the rings on in order. Blue, black, red, yellow, and green.
