Wassail Recipe: Slow Cooker or Stove Top (Video)

    November 29, 2021 By Brandy 4 Comments

This holiday spice wassail recipe not only tastes delicious but makes your home smell amazing as it simmers! Prepare over the stove or in a slow cooker.

You might also like our sparkling cranberry juice punch or slow cooker hot chocolate for the holidays. You can even make your own apple cider in your instant pot!

    Homemade Wassail

For decades I was a hot chocolate girl. Nothing swayed me from reaching for a hot cup of cocoa when the temps began to drop except for the occasional cup of hot apple cider. That is until I tried wassail at a friend’s house. It totally hits the spot without being too rich or sweet and it’s the perfect blend of all of my favorite holiday scents and spices.

    What is Wassail?

Wassail is a hot beverage made from mulled cider and spices (and sometimes alcohol). It originates in English drink associated with Yuletide. There are many ways to create this delicious drink by combining juices and spices (ginger, cinnamon, allspice, cinnamon, nutmeg, etc). Many recipes call for sugar or honey, but I don't think that it really needs that. Pineapple juice is naturally sweet and the apple and orange juice contain enough natural sugar already. My wassail recipe mulls apple juice, orange juice and pineapple juice.

pot of wassail and sliced fruit

My wassail recipe is super simple, can be stored in the refrigerator, and can be prepared in a slow cooker or simmered on the stove.

bottle of apple juice and orange juice

My 15-year-old says that it smells like I'm burning a candle every time I make it. It's better than a candle because I not only get to enjoy the scent, but I can drink it too, ha! (Note: it's more fragrant when simmered over the stove with the lid off vs. in a slow cooker)

mug of wassail with a cinnamon stick

    Wassail Recipe Ingredients

    scroll down for printable recipe

    Serves: 12

    6 c. apple juice

    4 c. orange juice

2 c. pineapple juice (I used canned pineapple juice)

    ½ tsp. ground cinnamon

    ¼ tsp. ground nutmeg

1 tsp. whole cloves (you can use a dash of ground cloves if you prefer)

3 cinnamon sticks (can also add star anise)

Optional: sliced orange, apple, or cranberries for garnish

bottle of apple juice, bottle of orange juice and container of pineapple juice

    How To Make Wassail

You can make wassail in the slow cooker or on the stove top. I've made it both ways and it is equally delicious. It just depends how quickly you'd like to drink it. Using a slow cooker is a great way to serve it to a crowd. I also like using my slow cooker to make and serve hot chocolate.

    Slow Cooker:

Mix all ingredients into a slow cooker, except for the fresh fruit. Heat on low-heat for 6 hours or high for 3 hours.

    sliced oranges and apples

Add fresh fruit slices before serving. These are decorative and are completely optional.

Skim cloves off of wassail before serving. Remove cinnamon sticks.

mug of wassail with an orange slice

    Stove Top:

Mix ingredients and heat in a large pot or large saucepan. Bring to a boil and simmer on medium-low heat for 30 minutes.

Add fresh fruit slices before serving.

Skim cloves off of wassail before serving. Remove cinnamon sticks. Can serve in a punch bowl, but I usually ladle it straight from the pot.

Refrigerate any remaining wassail. Heat over the stove or in the microwave.

Make a batch to enjoy after playing in the snow, driving around to see Christmas lights or going Christmas caroling! I'm going to make some on Christmas Eve this year.

What is your favorite holiday drink to sip?

It wouldn't be the holidays without the Grinch. These mint Grinch sundaes are ridiculously easy to make. Prefer Santa? Use vanilla ice cream! You can even add a whipped cream beard!

    grinch ice cream sundae

I found these cute Santa suit ramekins at Michaels for $1 each about 10 years ago. They no longer carry them, but you really don't need them. The magic is all in the ice cream cone hat! If you'd like some inexpensive red paper cups, these treat cups would fit the bill, but any small bowl would work.

    Grinch ICe Cream Sundaes

grinch ice cream sundae in Santa cup

    Ingredients

    • red candy melts: You can buy these at any craft store. I found mine at Walmart for $2.50 a bag.
    • sugar cones: sugar cones work best for making Santa hats. They are the perfect cone shape and size.
    • mini marshmallows: each hat is topped with a mini marshmallow pom pom.
    • ice cream: mint for a Grinch and vanilla for Santa.
    • whipped cream: add details around the hat or a Santa beard with whipped cream!red ice cream cone hats with mini marshmallows on top

Ice Cream Cone Santa hat Directions

Let's make some sugar cone hats!

Melt the candy melts in the microwave. I like heating them in 30-second increments, stirring after each increment.

sugar cone spread with melted red candy melts

Spread over each sugar cone. Place cones on parchment lined platter or baking sheet. Press a mini marshmallow onto the tops of each hat and let cool until firm.

Don't worry about covering the edge in candy melts. You are going to press the cone into the ice cream and add whipped cream around the hat. You won't see the bottom edge of the cone.

melting chocolate hearts on parchment paper

Note: You'll probably have some extra melted candy melts so add a spoonful into a small plastic bag. Cut the corner off of the bag and make tiny hearts on parchment paper! Let those set up and you can add one to your Grinch sundae.

whipped cream bursts around cone hat

Add two scoops of mint ice cream into a small bowl. Press a hat into the ice cream. Add whipped cream bursts around the edge of the hat.

Add a small candy melt heart!

    Serve sundaes immediately.

These Milky Way teddy sleds are so fun! I'm sitting here having a hard time believing that the first time we made these my oldest, who is getting ready to graduate high school, was in second grade! We made these for a class Christmas party and they were a huge hit. It was fun to make them with my youngest this year. If you're looking for something even EASIER be sure to check out our snowboarding polar bears. Yes, SNOWBOARDING polar bears, haha!

    Instructions

    candy bar cut into thirds

    • Step 1: Cut a fun sized candy bar in thirds. Take the center piece out. (This helps the little sled fit onto the candy canes better.)

candy bar cut in half with teddy graham

    • Step 2: Sandwich a little teddy graham cracker in between the two candy bar pieces with a bit of chocolate frosting.
    • Step 3: Spread a small amount of chocolate frosting on two mini candy canes. We always have a giant tub of these during the holidays and add them to our Operation Christmas Child Shoe Boxes!

fingers placing candy bar on candy canes with frosting

    • Step 3: Place candy bar on top of the candy canes.
Note: You can use royal icing instead of chocolate frosting if you want them to dry faster or transport them to a party. Because they are made with a cracker, these are best eaten the day that they are made to avoid the cracker softening or going stale.

Kids would have a great time making teddy sleds at a class party treat station! Have an example made ahead of time and all of the supplies laid out assembly style and let the kids make their own Milky Way teddy sleds. Teddy Grahams come in a variety of flavors so pick out a few to give the kids options!

    Homemade Caramel Corn

Homemade English toffee and baked caramel corn have been our go to gifts during the holidays for over about 15 years. Forget making cookies, a bag of caramel popcorn is where it's at! I've tried microwaved versions, sticky caramel corn, etc. but nothing has been as good as this recipe. What family wouldn't want a bag of fresh baked caramel corn to snack on during a Christmas movie night?

    baking sheet with caramel corn

The caramel coated popcorn is buttery, crunchy, and so delicious. I stumbled across it online back in 2006 on Paula Dean's website and quickly memorized it after making it SO many times. I love that it is a no-nonsense recipe. 6 ingredients, minimal prep work, made on the stovetop, and no candy thermometer!

Here's what one reader said, "Used this recipe for my daughter’s wedding last fall. Made enough for 100 people, everyone raved about it. In fact right now I’m making some for my son’s wedding this weekend. It’s the only thing he insisted on. Plus he wants a little bin for himself after the wedding!"

small bowl of baked caramel corn on kitchen table
It's great for gifts and get-togethers. It stores well too. If kept in an airtight container or bag it will stay fresh at least a week. Ready to make a big batch? Let's get started!
bottle of corn syrup, bowls of salt and baking soda, 2 sticks of butter and bowl of brown sugar

    Baked Homemade Caramel Popcorn Ingredients

    Adapted from: Paula Dean
    Scroll down for printable version
    • 6-8 quarts of popped popcorn (about ⅔ cup unpopped kernels, popped)*
    • 1 cup butter
    • 2 cups brown sugar
    • ½ cup light corn syrup
    • 1 teaspoon salt
    • 1 teaspoon baking soda

*You can also use microwave popcorn. If you go this route, use a homestyle one that doesn't have a lot of butter and salt already on it.

hand picking up piece of caramel corn

    Instructions

Pop popcorn kernels in air popper.

Pour popped popcorn into a large roasting pan or baking pan (you just need a pan large enough to stir the popcorn and caramel without it spilling out onto your table). Set aside.
saucepan with butter, brown sugar, salt and corn syrup
Melt butter, sugar, salt and corn syrup in a medium saucepan, and heat over medium heat to medium-high heat. When bubbly, set timer for 5 minutes and boil, stirring constantly.
    boiling caramel sauce in pan
Remove the mixture from the heat and stir in baking soda.
    caramel corn in roasting pan
Pour caramel over popped corn and stir to coat evenly.
Note: If you want to add mix-ins, now is the time (peanuts, etc.)
Now we're going to bake it low and slow.
Bake caramel corn at 200 degrees (F), stirring every 15 minutes, for 1 hour. Pour out onto waxed paper or parchment paper-lined baking sheets and cool.
baked caramel popcorn in white bowl
Fill up your favorite popcorn bowl and start snacking!

Why do you need to use baking soda in this recipe?

The baking soda reacts with the caramel to create a softer texture, even after baking. Making it easier to bite into!

Can you make caramel popcorn with margarine?

No. For any caramel recipe you must use butter. For flavor and texture.

Why do I know that National Popcorn day is this month? Because I married into a popcorn loving family. The kind who don't believe in sharing a bag of microwave popcorn and use large mixing bowls as individual popcorn bowls. dual popcorn bowls. Now I have 5 kids (and a dog) who all love popcorn so you start to keep up on things like this. You know we will be enjoying a few bowls of popcorn come January 19th!

    DIY Sock Gnomes (no Sew)

Looking for a quick and easy craft to brighten a shelf? These sock gnomes are just the thing. They take less than 10 minutes to make and are so fun. The best part? There's no sewing involved, minimal supplies, and can be made from any adult crew sock! You can totally make mini gnomes from kids' socks, but this one is intended to be made using an adult sock and includes a printable beard template!

My girls love gnomes. We found some cute ones at Target last year and put them on the shelf in the kitchen. Now they can make their own for any holiday or occasion. How fun would these be for a craft night? Everyone would go home with their own gnome to add to their holiday decor. In February, grab some pink and red socks to make Valentine's Day gnomes!

    two sock gnomes on table

Best Socks To Use for Sock Gnomes

Solid socks work great for the gnome's body. I love these ones. This is a great project for mismatched socks!

It's fun to use printed socks for the gnome's hat. I found mine at Target for $3 a pair. Walmart and Dollar Tree also sell inexpensive patterned socks. Crew socks work the best for sock gnomes. The banded edge is perfect for the hat since it's a finished edge and squeezes onto the gnome's head just right. If you'd like a long, droopy, hat that folds over you can use a knee-high sock. You can use an ankle sock for the body, but definitely use a crew sock for the hat.

You only need one sock from each pair so save the others for a second gnome!

After making this project you'll have two unmatched socks. Save them for a later date or make a couple of extra gnomes to give as gifts.

    Sock Gnome Supplies

sock gnome supplies: scissors, felt, socks, stuffing, rice, wood bead

One solid adult crew sock: for the body.

One patterned adult crew sock: for the hat.

Rice: can also use dry beans. This will give the gnome a bit of weight, making it stand easily. Check out the jar method for filling the sock with rice. It's definitely easier than scooping rice into the sock with a spoon and even faster than using a funnel.

Pillow stuffing (Polyfil): Just a bit to add on top of the rice. You can use all rice, but the more rice you use the heavier the gnome will be. I like using about ⅔ rice and ⅓ pillow stuffing for my gnomes. If you don't have pillow stuffing you can use scrap fabric or cotton balls. I save the stuffing from my old throw pillows for craft projects like this.

Hair ties or rubber bands: These are used to tie off the socks. You can also tie off the ends with string, but I like using hair ties.

Wood bead or half bead: You can use a wooden bead, half bead, or pom pom for the nose. I prefer using half beads. They don't have holes in the sides like beads and sit nice and flush. I ordered them from Amazon, but you can find wood beads at your local craft store like Hobby Lobby or Joann.

Felt: One thing that makes our little gnomes different than others is the fact that we don't use craft fur. Felt is something that I always have on hand, it's $.25 a sheet and you can easily get 4 beards from one sheet. Easier to find and cheaper than faux fur.

Printable beard pattern: feel free to print out our cutting template to use for the beard.

Caramel Apples With Homemade Caramel (Video)

    tray of caramel apples

Caramel apples are the perfect fall treat. These are made with buttery homemade caramel. So delicious! Makes 8-10 caramel apples per batch. Leftover caramel can be poured onto parchment paper and sliced into pieces of candy. This post contains affiliate links.

You might also like our 10-minute caramel candies, our English toffee or our easy caramel apple dip gift idea!

    tray of caramel apples

I absolutely love the sweetness of caramel mixed with with a tart Granny Smith apple. These caramel apples with homemade caramel are absolute perfection. The caramel sticks right to the apples, sets up quickly, and makes the most delicious leftovers. I use the same exact ingredients list as our 10-minute microwave caramels, but altered the cooking method and times for a stove-top version, perfect for dipping.

Caramel apples made with homemade caramel definitely take longer than melting down caramel candies, but it's definitely worth the effort. These taste SO MUCH BETTER.

How To Make Homemade Caramel Apples

caramel dripping off fresh dipped apple

    Basic Supplies

Saucepan: You need a good, heavy-bottomed saucepan. I recommend the same when making English toffee. We're going to be simmering this caramel for quite awhile so we want a pan that heats evenly without any hot spots.  My favorite one is an old pan that Derrick's grandma gave us. It's 50 years old and is still in perfect condition, nice and thick. I've also made toffee and caramel in my stainless steel pans with success.

Wooden spoon: I've always use wooden spoons for toffee and candy making because wood doesn't conduct heat.

Candy thermometer: Having a candy thermometer takes the guess work out of making caramel. You can make caramel without it by using the water trick (dipping a small amount into cold water, and if it forms a ball it's done), but I highly recommend using a thermometer for best results. We're looking for a temperature of about 245 degrees which leaves a small margin for error. A thermometer makes it easy to know when to pull the caramel off of the heat.

Popsicle sticks or lollipop sticks: I used 6" lollipop sticks which worked perfectly.

salt dish, brown sugar, two sticks of butter, corn syrup and can of condensed milk

    Caramel Apple Ingredients

    • 8-10 Granny Smith apples*
    • 1 cup butter (salted)
    • 2 cups brown sugar
    • 1 cup light corn syrup
    • 1 (14 oz.) can sweetened condensed milk
    • pinch of salt (I use kosher)

*You can use any kind of apple that you'd like. My go to apple is Granny Smith, but Honey Crisp, Gala, or Fuji would be delicious too!

Begin by washing apples thoroughly in water to remove wax coating. Store bought apples have this coating, and removing it is important to help the caramel stick to the apples. Dry apples thoroughly and remove stems. Insert a stick into each apple, pushing at least halfway down.

Place apples on parchment paper lined baking sheet.

apple dipped into pan of caramel

Combine butter, brown sugar, corn syrup, sweetened condensed milk and salt in a saucepan on medium/high heat until it begins to boil. Clip candy thermometer to pan. Reduce heat to medium and continue to stir, also scraping the sides of the pan to prevent burning.

Cooking times vary depending on the type of stove you have. I've noticed that it takes awhile for caramel to hit 220 degrees, but then it gains heat quickly after that. Cook and stir caramel (almost constantly) until it reaches 240-245 degrees. This takes about 20 minutes on my stove, but may take more or less time for you. Go by caramel temperature, NOT time. If you stove tends to cook hotter than normal, adjust the temperature a bit lower. Just try to maintain a steady heat and stir frequently.

Once caramel is ready, remove from heat.

Hold onto the pan handle and tip the pan on a slight angle to allow the caramel to pool on one side. This makes dipping the apples easier.  Dip apples and twirl the apple to help excess caramel drip off.

Place apples on prepared baking sheet. Allow caramel apples to cool completely before eating.

Additional Caramel Apple Toppings And Garnishes

The caramel is so delicious on its own, but it's still fun to drizzle them with chocolate or add chopped nuts for variety. If you'd like to add toppings (chopped pretzels, Oreos, nuts, sprinkles, mini chocolate chip, mini M&M candies etc.) roll the apple in toppings before placing it onto the pan. Work quickly as the caramel will begin to thicken.  You can also drizzle them in melted chocolate or white chocolate for gourmet caramel apples.

    Caramel Apple Frequently Asked Questions

I have leftover caramel. What should I do with it?

Pour leftover caramel onto parchment paper (on a baking sheet or in a baking dish) and let it cool. Slice into bite-sized pieces for delicious caramel candy.

Why won't my caramel stick to the apple?

There are a couple of factors that can be contributing to this. If there is a wax coating on the apples it could prevent the caramel from sticking properly. Also (and this is usually the case) if the caramel didn't heat properly to 245 degrees it may end up more like a caramel sauce consistency.

Why is my caramel hard and difficult to eat?

Caramel that is HARD (more like a toffee texture) was heated well past 245 degrees.

How long will caramel apples last?

When stored in the refrigerator, caramels will last up to 3 weeks. Remove apples from fridge about an hour before you want to eat one. This gives the caramel a chance to soften.

If you want to wrap the apples or package in a cellophane bag, make sure apples are chilled and caramel is hard before placing in a bag.

How Do You Clean The Pan After Making Toffee or Caramel?

Immediately fill pan with warm water and allow pan to soak. The sugar will break down, making it easier to wash.

You don't need fancy equipment to make the cutest Halloween sugar cookies! Use our two favorite piping tips to create 3 adorable shapes! Buttercream frosting and our top rated sugar cookie recipe are a winning combination! This technique is perfect for kids (recommended 8+) and moms, alike! This post contains affiliate links.

How do you make the CUTEST Halloween cookies? It starts with the best sugar cookie dough, add in a few adorable cookie cutters, sprinkle in two basic piping tips, and end with a creamy buttercream frosting. It's a wining combination---promise.

Gone are the days of spreading frosting on with a butter knife or spoon. A piping bag and tip is easy to use and creates clean lines and adorable designs! This technique is simple and works for decorating ANY sugar cookie, no matter the shape! All you need is a small round tip (#5 or #7) and a large 1A tip (which is a REALLY LARGE round tip). We also like using star tips---check out these adorable llama sugar cookies!

    Best Halloween Sugar Cookie Recipe

    sugar cookie dough rolled out

Make up a batch of our no chill bakery style sugar cookies and our favorite vanilla buttercream frosting. This sugar cookie recipe is simply the best. The sugar cookie dough is flavored with vanilla extract and almond extract and taste amazing!

I don't use royal icing for my sugar cookies. Buttercream works just fine and I prefer the flavor. No need to flood or use multiple consistencies of icing. Make one batch of frosting and it will be the right consistency for everything! Buttercream frosting sets up after an hour, but still remains soft. I prefer to not stack these cookies, but they can be wrapped in cellophane bags to give as gifts. A sweet Halloween treat to share with friends and teachers!

For vivid colors try using gel food coloring. A little goes a long way to tint frosting without watering it down.

Best Frosting Tips for Easy Cookie Decorating

For these cookies we are using 2 different tips: 5 (or 7), and 1A. These are standard tips that are easy to work with and are very forgiving.

Amazon is the best place to order a 1A tip, but you can find the others at Joanns or Michael's. You might even find a great little starter set that includes both. Again, tip 1A is optional, but makes decorating large areas (like pumpkins) a breeze!

Tip: Buy 2 of each kind of piping tip. This makes it easier to work with a variety of frosting bags filled with different colors!

    • 5 and 7 are small round tips. They are very similar in size, so just use what you can find!
    • 1A is a large round tip.

Tips for using round tips: apply firm pressure for a smooth application. Keep the piping tip close to the cookie.

Other Useful Items for Cookie Decorating

    • Disposable Frosting Bags: a disposable piping bag is convenient to have and you can just toss it after using.
    • Couplers: couplers attach to the frosting bag and make it easy to switch out the frosting tip that you are using. With a coupler you can switch from a round tip to a star without filling a new bag with frosting!

How To Fill a Frosting Bag And Use a Coupler (Easy Tips)

    Frosting

    • 1 cup butter softened
    • 6 cups powdered sugar
    • 2 teaspoons vanilla
    • 6-8 Tablespoons milk

    Instructions

    • In a large mixing bowl combine butter, shortening and sugar. Beat until fluffy. Turn mixer down and add egg, vanilla and almond extract. Add baking powder. Sift in flour* and cornstarch until mixed thoroughly.
**Start with 3 ½ cups of flour, and if the dough seems too soft add the last ½ cup of flour. If it seems too dry, add a tablespoon or two of water.
    • Lightly flour your working surface and shape dough into a large ball.
    • No refrigeration necessary.
    • Roll dough out on floured surface to desired thickness (I usually do ¼-1/2") and cut into shapes. Add flour to dough if it feels too sticky but a nice soft dough is what you want. Carefully transfer cut out cookie shapes with a spatula to a baking sheet.

    Recipe Inspiration

We all know that fried donuts are the best, but bake donuts are pretty dang good too. I've shared my love for our favorite pumpkin batter; the one that I use for bread, muffins and mini loaves. I altered it to create pumpkin donuts, and they are perfection. Soft, delicious, and the perfect thing to dip in brown sugar and maple glaze (this is the same glaze that I use for making maple bars).

pumpkin donut with bite out of it

Unlike fried donuts, these baked donuts will stay fresh for a few days. You can heat them up in the microwave for a few seconds on day 2 for a warm donut. Yum.

unbaked donut batter in donut pan

Most donut pans will make 6 donuts. This recipe makes 12 so you can make them in batches or grab two pans. These pans are so easy to use and make perfect-looking donuts every time. I've had this set of 2 for a few years and love them.

How To Make Easy Pumpkin Donuts

No rolling or shaping necessary! This donut batter comes together like a quick bread of muffin batter.

Simply mix the ingredients together in a large bowl then pipe the batter into a donut pan and bake!

Because they are thin they bake up very quickly (about 10 minutes).

Once they've had a chance to cool slightly, dip in maple glaze.

    Ingredients

bowl of pumpkin donut ingredients on table

The ingredients are simple and you probably already have them on hand.

    Easy Pumpkin Donut Batter

    • All purpose flour
    • Brown sugar
    • Baking Soda
    • Salt
    • Cinnamon, Nutmeg and Ginger: if you'd rather use a pumpkin spice mix you totally can.
    • Pumpkin puree: NOT pumpkin pie filling. Just pureed pumpkin from a can.
    • Oil
    • Eggs
    • Water
    • Vanilla

whisk dripping with brown sugar maple glaze

    Brown Sugar and Maple GlazE

    • Butter
    • Brown sugar
    • Maple syrup
    • Milk
    • Maple extract*
    • Powdered Sugar

The butter, brown sugar and syrup are heated in the microwave and mixed until smooth. This is the perfect base and give the glaze a caramel flavor. Add milk,, and a bit of maple extract, then whisk in powdered sugar.

*If you don't have maple extract on hand you can leave it out. I only use ½ teaspoon. It won't have as much maple flavoring, but the brown sugar and maple syrup give the glaze an amazing flavor on their own.

donut being dipped into maple glaze

If you notice the glaze thickening while dipping, you can add a splash of milk, whisk, and keep dipping.
