    Baked Chicken Nuggets With Steamed Dill Potatoes

    A kid-friendly dinner idea for any night of the week. These baked chicken nuggets are easy to make and made with Italian breadcrumbs for extra flavor. Serve with steamed dill potatoes and fresh green beans for a dinner the whole family will love!

    I like finding ways to treat my kids to a favorite meal item and do it in a healthier way. This time in the form of chicken nuggets. Baked chicken nuggets are a favorite over here. They come together in 30 minutes and pair perfectly with our dill potatoes. My mom made Italian bread crumb coated chicken (her own version of Shake and Bake) all the time when we were kids and we loved it! This recipe is inspired from her baked Italian chicken. Only in nugget form.

    Baked Chicken Nuggets

    Ingredients:
    • 1 ¼ lb. boneless, skinless chicken tenders
    • ½ c. melted butter
    • ¾ c. Italian bread crumbs
    • ⅓ c. Parmesan cheese
    • ½ tsp. kosher salt
    Directions:
    In a shallow dish, melt butter.
    In another shallow dish combine dry ingredients.
    Cut chicken tenders into 1 ½" cubes. Toss in melted butter and dip roll in bread crumb mixture. Bake on a lightly greased baking sheet at 400 degrees for 15-20 minutes or until golden brown.

    Steamed Red Potatoes with Dill

    Cube up as many red potatoes as your family will need. I used 8 for our family of six. I have a steamer stacking pan that I use for these. You can boil your potatoes if you don't have a way to steam them. Sprinkle kosher salt on your potatoes and steam until fork tender. Toss with 3 tablespoons butter and sprinkle with dill.
     Be sure to serve this dinner with our homemade Amish dinner rolls!

    Notes

    Air Fryer Version: Preheat air fryer to 390 degrees for 5 minutes. Place in a single layer in the air fryer basket. Set timer to 8 minutes. You may need to make these in 2-3 batches.

    The Perfect Ice Cream Sandwich Cookie

    Crispy, chewy and the perfect cookie to stack for ice cream sandwiches! Make a batch and serve with your favorite flavor of ice cream this summer!

    These are "Poor Man" Cookies. There aren't any eggs, milk, or nuts in them. Just plain, basic ingredients and somehow they end up being the richest, melt in your mouth, oatmeal cookie...EVER. Crispy on the outside, soft in the center, and a hint of toasted coconut flavor, although they do not contain coconut. Maybe it's all of the brown sugar that makes them so rich in flavor? I'm not sure, but they are amazing. So if you have allergies, these cookies are for you. If you don't have allergies, add a scoop of ice cream because they make a delicious sandwich cookie!
    3 oatmeal cookies
     They stack well and hold up perfectly to the weight and pressure of the ice cream in the center.

    1 cup shortening**
    1 cup packed brown sugar
    ½ cup sugar
    ¼ cup water
    1 teaspoon vanilla extract
    1 cup all-purpose flour
    1 teaspoon baking soda
    ¼ teaspoons salt
    2 cups rolled oats
    In a large bowl, cream shortening and sugars until light and fluffy. Beat in water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in oats.
    Drop dough by tablespoonfuls onto greased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Allow to stand 2 minutes before removing to a wire rack to cool. Yield: 3 dozen.
     
    My Notes & Tips for Making Bigger Cookies for Ice Cream Sandwiches:
    **No-name brands of shortening seem to work better than Crisco. Don't ask me why, they just do. I've found this to be true with some frosting recipes that I make.
    A cookie scoop (medium sized) works great for getting a nice standard cookie that flattens nicely. No more than 6 to a cookie sheet as they spread. This recipe will make 24 cookies using a medium scoop which turns out to be a dozen ice cream sandwiches.

    Make sure to allow cookies to set for a minute or two before removing to a rack.

    When cookies have cooled, completely, add a small scoop of ice cream on top of one cookie and GENTLY press another cookie on top. Freeze 5-10 minutes and serve!

    A few years ago we had one of the best staycations for summer break! We only made one trip out of town so we had many days to hang out at our favorite local places.

    I created this fun Summer Bucket List (Phineas & Ferb Style) to give us a fun jump start to summer.

    Along with the suggestions from the Phineas & Ferb theme song, we added our own ie: go to the zoo, have a picnic, etc. It took us until the last day of summer to complete the list since we didn't want to rush through it and do you now what? It was one of THE BEST summers we've had!

    Building a Rocket

    For this task we made balloon rockets and shot them across the living room. I have an entire post on quick and easy science experiments for kids. You can get the details on our rockets there!

    My FAVORITE one so far. I love when I can persuade my husband to make a fool of himself for the sake of the children. The kids were all camped out in the same room that night so it was easy to scare them all in one swoop!

    This one was pretty simple. There are several parks in our town with structures like this. We simply had a day at the park and marked this one off the list! It's the closest thing to a tower as we were going to get.

    Discovering Something That Doesn't Exist

    It's pretty hard to discover something that doesn't exist. So we created something new. Something that hadn't existed before. This one was dad's idea and involved lots of chocolate. The kids filled up mini loaf pans with a layer of melting chocolate, then added marshmallows and a small store-bought brownie followed by another layer of melting chocolate to seal it all up. Then they added sprinkles and let it set up. These chocolate loaves were pretty good!

    I bought this monkey on ebay from a party supply company. He was perfect and water proof. So hung him in the kids' shower before sending them to take their evening showers. They thought it was hilarious and soaped him right up.

    Surfing Tidal Waves

    These aren't exactly tidal waves, but we did the best we could one afternoon at a local lake. The kids loved when the boats went by and the wakes came in. They were like mini waves!

    Creating Nanobots

    These cute wind up robots (nanobots) were from a kids craft kit that we purchased. They could design, add stickers and wind them up!

    Locating Frankenstein's Brain

    Who knew that the location of Frankenstein's brain was actually in our house! I blew up a small green balloon and added squiggly lines with a permanent marker to make it look like a brain. Then I put it in a plastic cake saver container and hid it upstairs. Aaron randomly walked past it one afternoon and was pretty proud that he was on the one to find it!

    Finding a Dodo Bird

    Finding a Dodo bird was one that I had to think about for a bit. I printed Jojo the Dodo from cardstock, and he arrived in an envelope telling the kids about his world travels, where he came from, and facts about Dodo birds. He also let them know that he was pretty special since he is the only living Dodo bird (they are extinct).

    The kids painted an earth on our back patio with chalk paints. Not only did they paint one continent, they ended up with all of them! They finished this one the day before school started. In the nick of time!

    Goodness, this girl makes the best faces! She insisted on sitting IN the shopping cart one afternoon, and I told her she'd get squished. I don't play around! She thought it was hilarious, and it was the perfect "Driving Your Sister Insane" photo.

    Tissue Paper Vase: A Quick and Easy Kids Craft!

    This tissue paper vase is such a fun project for kids! Just brush mod podge over the glass, add the tissue paper circles, then add another coat of mod podge to make it water resistant!

    Kaylee has an unhealthy obsession with flowers, so I decided to enable the obsession a bit more and help her make her own little vase.

    Tissue Paper Vase: A Quick and Easy Kids Craft!

    Supplies Needed:
    Vase or glass jar
    mod podge
    sponge brush
    tissue paper cut or torn into any shape
    brush dipped in Mod Podge
    She brushed the vase with a light coat of mod podge and began applying small circles of tissue paper to it. You could use ANY shape of tissue paper or even just tear the tissue into small squares or pieces. Mod podge dries quickly, so just work in small sections as you go.

    We let the edges overhang so that every edge was covered and just trimmed them later when they were dry.

    Every last inch was covered in tissue dots. Layered all over each other, making sure to press them down as we went for a smooth finish.

    After it had dried, we added a layer of mod podge on top to seal the vase and water-proof it.

    After it dried she had a beautiful little confetti vase. She kept telling me how awesome it was and how fun it was to make. I think we will be making more.

    Even though we sealed it to protect it from water dripping on it, it is not dishwasher safe. She added a  sweet smelling flower from the front yard, and it was immediately the center of attention on our kitchen table.

    Make Your Own Yogurt Drinks

    I buy yogurt almost every time I go to the grocery store. Fridge packs for school lunches, larger tubs to scoop out and add to smoothies, and whole milk baby yogurts for Ruby. I eat it every day too. My kids love the drinkable yogurts that come in a 6-pack, but I rarely buy them because I think they are  over-priced. Then I got to thinking that all it is is yogurt diluted down. How easy is that? It would sure taste better if we used our favorite yogurts instead of the crazy flavors that they sell for kids like blue raspberry, etc.

    To make your own yogurt drinks, just mix yogurt with milk until it is the consistency to go though a straw. Pour some in a small drink container for school lunches (be sure to add a little ice pack to keep it chilled) or just sip out of a cup. Ruby, who is about 18 months old, loves yogurt and is too independent to let me feed it to her. She usually makes a HUGE mess every morning and yogurt ends up being wasted as it hits the floor. After I started adding a tablespoon of milk to it and putting it in a small cup with a lid and straw, the mess and waste has been completely eliminated and she still has her independence.

    Spaghetti with Brown Butter and Mizithra Cheese {a lighter version}

    My all time favorite pasta dish has always been the Spaghetti with Brown Butter and Mizithra Cheese that is made at the Spaghetti factory. Until I had it there, I hadn't ever heard of Mizithra (or Myzithra) cheese. The flavor is amazing! I splurged and bought a package of cheese when we went there last time, but I have also purchased it from the specialty cheese section at the grocery store. If you are local here to Sacramento you can find it at Sprouts.
    My kids absolutely love it and I love that it only requires 3 ingredients to make a quick dinner that everyone is excited to eat. Here is my lighter version of the dish (much less butter left on the plate this way). The Mizithra Cheese blend at the Spaghetti Factory has Parmesan cheese mixed in with it. Mizithra is very pungent and I prefer it mixed with the Parmesan. It's the perfect blend. So when I make it on my own I grate up both hard cheeses and blend them together in a 3 to 1 ratio (Mizithra being the smaller amount).

    1 box spaghetti, cooked according to directions
    ¼. c butter
    Mizithra  & Parmesan cheeses, grated

    While pasta is boiling, melt butter on med heat. Once all butter has melted, kick the heat up to med-high until it begins to brown and then immediately remove from heat and set aside.
    Drain pasta and toss with butter. Serve with a handful of the Mizithra cheese blend.

    Serve with a nice big green salad. So simple, yet SO good.

    DIY Dress-Up Box | Organize Your Kids Dress Up Clothes

    This DIY dress-up box is like a mini closet that can be moved anywhere. It's sturdy and when they grow up you can use it in your mudroom for coats and shoes! Every kid loves the fun of dressing up in play clothes to go on an adventure.

    I posted a question to my facebook readers a couple of months ago, asking them how they organize the dress up clothes in their home. Clearly, our system was NOT working! The over-flowing pink bucket made it hard to find anything without dumping it all on the floor. Needless to say, it was always a mess in their room.

    I received many wonderful suggestions and links! It was fun to go through them, but one definitely stood out.

    When I saw this dress up box from Craftiness is Not Optional, angels sang.

    I have ZERO power tool ability. Staple guns make me nervous and mine isn't even electric, but that's ok because I am married to a handyman. Lucky us! He glanced at the plans and said he could make us a dress up box, no problem. Being the perfectionist and carpenter that he is, he added his own spin and finishing touches to create a beautiful piece of furniture for our little girls.

    We looked over the dress up box plans as a basic guide and drew up our own specs with modifications to meet our needs.

    Here are the modifications that we made to our dress-up box:

    With 2 little girls and lots of costumes, we decided to make it 12" taller and 12" wider.

    We also added a shelf, trimmed it out to hide the hanger rod, and added a shallow shelf backing.

    The rod is held in place with brackets and the entire box was put together with wood biscuits, glue, and a couple of nails.

    To create a beautiful finish, he routered around all of the edgings.

    When the dress-up box was done he handed it over to me for the finishing touches. I sanded it down, applied 2 coats of primer and 1 coat of the lightest shade of pink that I could find. Then I sprayed it with 2 coats of clear spray paint.

    Here is our finished dress-up box. I am so in love with it and the girls and I had a great time sorting through costumes, shoes, and accessories to fill it up! It has made playing dress up so much easier for them. Even Ruby, who isn't quite 18 months old yet, loves sorting through the dresses and choosing what to wear. It is all so easily accessible and looks so darling in their bedroom. Kaylee calls it her dress up closet.

    Homemade Pinata Party Favors

    I have the fun opportunity to teach preschool in my home twice a month! Some friends and I do a co-op and we are each teaching about a different country during the month of May. I chose Mexico.
    We had a great time learning about our neighboring country, the food, music, customs...and pinatas!
    When I was coming up with me lesson plan, I had the ridiculous idea to help the 6 children (3 and 4 years old) paper mache a small balloon and each make a pinata. Yeah, that idea lasted about 2 seconds until I decided to do a more realistic project for children that age.

    The kids each made one of these little pinatas to take home and here is how we did it!

    Supplies

    brown paper
    stapler/staples
    tissue paper, cut into small squares
    school glue
    hole punch
    ribbon
    candy
    kids making mini pints
    Cut out 2 pieces of brown paper in any shape you'd like. I went with a circle, but it would be fun to make one in any shape!
    Staple the edges, all the way around, leaving a space to add candy.
    Punch a hold in the top section and string with a ribbon.
    Fill with candy and staple closed.
    Drizzle glue across and let the children decorate with tissue paper. Crumpled, or simple glued flat. Eiteher way looks cute.
    Flip over and decorate the other side.

    Ruby, who is 18 months old, made one too. She wasn't sure why we were putting the candy inside and was more interested in just eating it as she went.
    When they are ready to break it open, they simply have to rip it in half and all of the candy falls out!

    May Day Flower Cake

    We are preparing a fun little tea party for Kaylee and her closest 4 and 5 year old girlfriends. It just happened that the day we scheduled it happened to be May 1st. May day!  She is so excited. We are expecting 6 little girls to show up at noon for sandwiches, yogurt, fruit and this sweet daisy cake that Kaylee made.Here is how she did it!

    I baked 10 cupcakes and a small round cake. Kaylee made sure that 10 cupcakes would fit around and they did, perfectly. Then she frosted the center in yellow and I piped swirls of white frosting on the cupcakes. She added sprinkles (notice Ruby is "helping") and the cake was finished.

    We ended up only being able to put 9 around the cake because SOMEONE stole a cupcake, unwrapped it, and began eating it while I was putting frosting in the piping bag! Little stinker 😉
