    Candy Truffle Wreaths

Ok, how cute are these chocolate wreaths? They took just minutes to make and were so fun. If you're looking for a sweet treat to give out during the holidays these wreaths fit the bill.

Each wreath is made with 6 Lindt truffles. They make perfect gifts for teachers, neighbors, bus drivers---anyone! You can customize these truffle wreaths in so many ways by changing up the ribbon. I used fishing line to tie off each individual piece of candy, but you can use ribbon or twine if you'd like. I just didn't want to see the string so fishing line worked great to conceal it.

    Lindt Truffle Wreath Supplies

Chocolate Truffles or Candy: I used a variety of chocolate truffles from Lindt, but you can honestly use any kind of candy you'd like. Chocolate Bells, Ferrero Rocher, See's Chocolate Balls, etc. I found the Lindt truffles to be the best for the wreath shape and size that I was looking for.

    bowl of Lindt chocolate truffles

Cellophane: a roll of cellophane from the Dollar Tree is enough to make about 15 wreaths and is probably the cheapest place to buy it.

Fishing Line: if you don't want to see the ties you can use clear string or fishing line like I did. You can also tie off each candy section with twine or colored ribbon. It's up to you!

Ribbon/Trim: you'll need ribbon or trim (or both) to tie off the top of the wreath. I used this striped ribbon and a roll of white pom pom trim from Home Goods.

Scissors: to cut the strings. These are my favorite craft scissors. They come in a 3-pack and are super affordable.

Clear tape (scotch tape): to tape the cellophane into a tube shape around the candy.

    Easy Gingerbread House Cookies

    October 22, 2024 By Brandy 1 Comment

    Decorated gingerbread house cookies

Gingerbread house cookies are easier to make than traditional gingerbread houses, but are just as cute and taste better!

You might also like our gingerbread cookie bars or our iced gingerbread man cookies!

Confession: I've never made a gingerbread house from scratch. The kits are hard enough to work with! That's why I created the Pop Tart gingerbread house back in 2020. It went viral so I think a lot of families feel the same way about! Even though they can be a pain to put together, there is something so nostalgic about gingerbread houses. Gingerbread house cookies are the best of both worlds. Cute, nostalgic and EASY to decorate.

    Why I Like This Recipe

    • Tried and true gingerbread cookie recipe. My gingerbread cookie dough is a good one. The cookies are so soft and flavorful! Their recipe is an old one that originates in Nauvoo, Illinois, at the historic Scovil Bakery.
    • Fun to decorate. How cute are these sugar gingerbread men? They are perfect to add to holiday cookies! Mini red cinnamon candies are always a must. The flavor pairs great with buttercream and gingerbread cookies. I also pulled out a variety of sprinkles from my stash. You can find all sorts of darling royal icing decor, colored sugar, and sprinkles during the holidays.
    • Cookies stay fresh. Gingerbread cookies stay fresh for up to a week (I think they taste BETTER on day 2!) and freeze well.
    [feast_advanced_jump_to]
Edible gingerbread decorations come in packages, and a frosting piping bag is filled with buttercream.

    Tips and Tricks

    • Best gingerbread house cookie cutters. I bought a set of gingerbread house cookie cutters that come in a variety of sizes so that I'd have options. Gingerbread house cookies are fun to decorate, fun to eat, and fun to give as gifts during the holidays. Let's get started!
    • Best frosting for gingerbread cookies. You can use royal icing or buttercream frosting to decorate your cookies. Buttercream is always my go-to for cookies. It's soft, but crusts making it easy to transport.
    • Chill the dough. The dough needs to chill for an hour or so, but it's worth the wait! If you'd like a quicker gingerbread cookie dough, you can try this recipe that only needs to chill for 15 minutes.
    • Helpful supplies. 5 and 7 are small round tips. They are very similar in size, so just use what you can find! Disposable Frosting Bags are convenient, and you can just toss them after use.

    Ingredients

Bowls of flour, sugar, molasses, spices, baking soda, salt and an egg.
    • Sugar: I typically use a combination of brown sugar and white sugar in my cookies, but for gingerbread cookies it’s white sugar all the way.
    • Molasses: regular molassses, nothing fancy.
    • Butter: I always bake with salted butter, but you can use unsalted if you prefer.
    • Water: you’ll need hot water for this recipe. Hot tap water works fine, no need to use boiling water.
    • Eggs: for richness and texture.
    • Baking Soda and Salt: for leavening and flavor.
    • Ground Ginger, Ground Cinnamon and Ground Cloves: my favorite blend of spices for gingerbread cookies.
    • Flour: all purpose flour works great.
    • Frosting. You'll need frosting for decorating. You can use store-bought or make my buttercream frosting, which uses butter, powdered sugar, vanilla, and milk.

See the recipe card for full information on ingredients and quantities.

    Gingerbread House Cookies FAQs

What is the best frosting for gingerbread?

For assembling gingerbread for making houses, I prefer royal icing because it is sturdy and hardens quickly. For decorating gingerbread cookies to eat, I use buttercream. It tastes delicious and is a dream to decorate with.

Do you need to chill gingerbread cookie dough?

You need to chill the gingerbread cookie dough for the best flavor and texture. Some recipes only require 15-30 minutes to chill, but this one needs an hour, and it is worth the wait.

How long do gingerbread cookies stay fresh?

Gingerbread cookies stay fresh for up to a week (I think they taste BETTER on day 2!) and freeze well.

Can I use shortening for gingerbread cookies?

Most gingerbread cookie recipes call for shortening or lard. You can absolutely use shortening if you’d like. I prefer using butter or a combination of butter and shortening in my cookie recipes, but my no chill gingerbread cookies call for shortening and are delicious. You can use whatever you’d like.

What kind of baking sheets are best for baking cookies?

I bake on aluminum baking sheets. The light colored sheet (vs. dark metal sheets) bake more evenly. I like these ones (with almost 40K reviews) as well as the ones sold at Sam’s Club. The darker the cookie sheet, the faster the cookies will brown on the bottoms. It’s all personal preference, but light colored baking sheets have always given me great results.

    Bakery Style Snickerdoodles

Watch our step by step video!

I almost didn't share this recipe on the blog because everyone knows how to make snickerdoodles. The version in the Betty Crocker cookbook is the standard and we all know that! BUT...I've taken that version and tweaked it slightly over the years. Betty's recipe calls for combination of shortening and butter. I use all butter. I also add a bit more flour to give them a slightly thicker consistency (but they are still soft and CHEWY). Betty doesn't use vanilla, but I like adding a splash. I also make my cookies jumbo size. My family loves these cookies, especially my husband. His all time favorite cookies are snickerdoodles and we make them for his birthday every year. Did I mention that he doesn't like cake? I stack 6 snickerdoodles in a tower on a plate and add a birthday candle.

    snickerdoodles on parchment paper

    Bakery Style Snickerdoodles

What makes these bakery style? To me, bakery cookies are larger than normal and always soft and chewy. They seem more substantial than a regular sized cookie, but don't worry! I have baking times and portions sizes for both larger cookies and regular sized cookies. Don't worry though, when I say these are jumbo snickerdoodles that's not to say that there are as big as the cookies from Crumbl (not even close). I make normal cookies with a 2 Tablespoon scoop and make these with a 3 Tablespoon scoop so they aren't THAT much bigger.

This recipe makes 18 large cookies or 27 regular cookies.

stack of jumbo snickerdoodles on plate

    Bakery Style Snickerdoodle Ingredients

Butter: you can use a combination of butter and shortening or use all butter.

Sugar: most of my cookie recipes use a combination of brown sugar and white sugar. Not snickerdoodles or sugar cookies though! All white sugar is the way to go for these.

    Eggs: for richness and texture

Vanilla: have you tried making your own vanilla extract? It's easy and delicious to add to baked good.

Cream of Tartar: this tangy acidic powder gives snickerdoodles their signature flavor.

Baking Soda and Salt: for leavening and flavor.

Flour: all purpose flour works just fine for this recipe.

Cinnamon and Sugar: the cookies dough balls are rolled in cinnamon and sugar before baking.

    snickerdoodle cookie in cooling rack

How to make the best Snickerdoodles

Preheat the oven to 400 degrees and line baking sheets with parchment paper. Set aside.

Beat butter and sugar together using an electric mixer or stand mixer. Beat in eggs and vanilla.

Mix in cream of tartar, salt, baking soda and flour.

Scoop cookie dough using a 3 Tbsp. scoop (large cookies) or 2 Tbsp. scoop (regular cookies). Roll cookie dough balls in cinnamon and sugar mixture then place onto baking sheets.

Bake cookies 10-11 minutes for large cookies or 8-9 minutes for regular cookies.

Imediately remove cookies from baking sheet and transfer to a wire cooling rack.

    snickerdoodles on baking sheet

Tips and Tricks for Jumbo Cookie

Butter: Butter yields the best flavor for cookies so I always use butter or a combination of butter and shortening in recipes. I never bake with margarine and always use salted butter (but you can use unsalted if you'd like).

Light Baking Sheets: I only bake on light colored baking sheets. My favorite are these aluminum half sheet pans that you can buy on Amazon (Sam’s Club also sells a similar one). The light colored pans bake much more evenly than dark pans.

Cookie Scoop vs. Hand Scooped: I like both methods for different reasons. Using a scoop ensures that your cookies are all the same size and the tops bake up smooth. Using your hand and dropping rustic balls of cookie dough on the pans will give your cookies those beautiful nooks and crannies. I use a cookie scoop for cookies without mix-ins like peanut butter or snickerdoodle and hand scoop cookies with mix-ins so that they look a little more rustic. Either way works, you do you!

Do Not Overbake: As soon as the cookies start to look golden around the edges, pull the pans out of the oven. The cookies may seem underdone, but will continue to bake on the pans as they cool. Sometimes I’ll transfer the cookies to a wire rack after a few minutes, other times I’ll let the cookies cool completely on the pan. It just depends on how gooey you want the centers to be.

Store Properly: I prefer wrapping my bigger cookies individually in plastic. This keeps them nice and fresh and easy to grab. I would NEVER wrap my miniature cookies individually, ha. Especially my mini chocolate chip cookies that make over 100 cookies per batch. It just isn't worth the effort, but for recipes that make 18-24 cookies it's worth it to wrap them individually vs. place them in a cookie jar or even an airtight container. They'll stay fresh a lot longer.hand holding stack of snickerdoodles

Old Fashioned Iced Gingerbread Man Cookies

    October 10, 2024 By Brandy 7 Comments

Iced gingerbread man cookies on a baking sheet.

Old-fashioned iced gingerbread man cookies are inspired by the itty-bitty cookies from the historic Scovil Bakery. Makes 150+ mini gingerbread men!

You might also like our iced OATMEAL gingerbread cookies, crispy mini gingersnaps, or soft and chewy molasses cookies.

Mini iced gingerbread man cookies on baking sheet.

Gingerbread is a classic holiday treat and my favorite way to enjoy it is in cookie form---mini cookies to be exact. My recipe makes about 180 mini gingerbread men, but you can easily make a half batch if you prefer. Inspired by the itty bitty cookies from an historic bakery in Illinois, this recipe is a keeper. Chalked full of warm spices and molasses then dipped in sweet icing which hardens, making these easy to package up!

Nauvoo Illinois is a very niche town, best known for its rich Mormon pioneer heritage. If you are from the East Coast and know anything about Colonial Williamsburg, Nauvoo is its Mormon equivalent. Originally opening its doors in the 1840's, the Scovil Bakery sold baked goods made by the women in town, but nowadays it is a Nauvoo historical site that visitors can tour. Some say that this recipe for gingerbread cookies dates back to the original bakery, but it could also simply be one they've shared with tours for the past several decades. Either way, it's yummy and makes the best gingerbread cookies.

    Why I Like This Recipe

    • Tried and true recipe. The Nauvoo Mercantile graciously shared the original recipe. I adapted the recipe to make these cute iced gingerbread men and hope you enjoy them as much as we do! The original recipe calls for lard. I make mine with butter, use more ground ginger, and add ground cloves. I also ice my cookies in a 2-ingredient icing that hardens onto each cookie. I got the idea to dip them in icing from Jill's Cookie Magic on Instagram. It really takes them up a notch!
    • Great recipe for bulk baking. This recipe makes a lot of cookies, which is perfect for the holidays. If you like making cookie platters to share or are heading to a cookie exchange, this is the recipe to make. I used a small cookie cutter and ended up with quite a few cookies, but if you use a larger cookie cutter, it will make fewer.
    • Cookies stay fresh. Gingerbread cookies stay fresh for up to a week (I think they taste BETTER on day 2!) and freeze well.

    What Others Are Saying

I made these today! They are soo good! And I used lard as you said the original recipe called for lard! I can't believe how yummy they truly are! I put a little lemon extract in my icing. Thank you for the recipe.---@Mizzcookie_64 on Instagram

I made ¼ recipe and I used lard instead of butter. And I add a little lemon extract in my glaze. these are soo good!---Shawn on Facebook

    Tips and Tricks

    • Chill the dough. The dough needs to chill for an hour or so, but it's worth the wait! If you'd like a quicker gingerbread cookie dough, you can try this recipe that only needs to chill for 15 minutes.
    • Rustic coat of icing. Dip each cookie into icing, then smooth the tops of the cookies with a small spatula or butter knife (watch my video to see how I do this). It's ok if the icing drops off the sides a little. These are meant to be imperfect. The icing will harden onto each cookie in a thin layer.
    • Gift idea. I keep these cute bakery boxes on hand at all times. You can fit at least 50 itty bitty gingerbread men in a box and tie it with a red ribbon (here is a smaller version that would be perfect for gift giving, too!). A classic holiday treat to share with friends.

    Ingredients

Bowls of flour, sugar, molasses, spices, baking soda, salt and an egg.
    • Sugar: I typically use a combination of brown sugar and white sugar in my cookies, but for gingerbread cookies it's white sugar all the way.
    • Molasses: regular molassses, nothing fancy.
    • Butter: I always bake with salted butter, but you can use unsalted if you prefer. The original recipe calls for lard or shortening. I prefer butter, but you can use whatever you'd like.
    • Water: you'll need hot water for this recipe.
The original recipe doesn't call for cloves and only calls for a teaspoon of ginger.
    • Flour: I use 6 ½ cups of all-purpose flour, but the original recipe calls for 4 cups of all-purpose flour and 2 cups of whole wheat flour.
    • Powdered Sugar and Milk: These are mixed together to make the icing.

See the recipe card for full information on ingredients and quantities.

Step 4: Roll each section of dough ¼" thick and cut with cookie cutters. I used a 1 ½-2" cookie cutter.

Place cookies onto an ungreased baking sheet.

    Pile of gingerbread man cookies.

Step 5: Bake for 7-8 minutes for soft cookies and 9-10 minutes for crunchier cookies. Let cookies cool completely on baking sheets.

Step 6: Mix powdered sugar and water together to make the icing.

Dip each cookie into icing then smooth the tops of the cookies with a small spatula or butter knife (watch my video to see how I do this). It's ok if the icing drops off the sides a little. These are meant to imperfect. The icing will harden onto each cookie in a thin layer.

Place the cookies back onto the baking sheet to dry.

Gingerbread cookies stay fresh longer than your basic chocolate chip cookie. You can store them in an airtight container for a week and in the freezer up to six months!

    Gingerbread Man Cookies FAQs

Can I use shortening for gingerbread cookies?

Most gingerbread cookie recipes call for shortening or lard. You can absolutely use shortening if you'd like. I prefer using butter or a combination of butter and shortening in my cookie recipes, but my no chill gingerbread cookies call for shortening and are delicious. You can use whatever you'd like.

What kind of baking sheets are best for baking cookies?

I bake on aluminum baking sheets. The light colored sheet (vs. dark metal sheets) bake more evenly. I like these ones (with almost 40K reviews) as well as the ones sold at Sam's Club. The darker the cookie sheet, the faster the cookies will brown on the bottoms. It's all personal preference, but light colored baking sheets have always given me great results.

What kind of molasses should I use for gingerbread?

I use regular molasses which is a great all around choice for baking. The brand I usually grab at the store is Grandma's. You don't want blackstrap molasses which has a bitter flavor to it.

    Copycat Crumbl Mom's Cookies

Mom's cookies are essentially an oatmeal chocolate chip cookie with extra add-ins like peanut butter chips and toffee bits. When I first heard of the combination I was intrigued. These aren't my mom's cookies, these are inspired by a cookie that has been on the menu at Crumbl cookies. I wanted to create my own version so I started by using my copycat Chick-fil-a chocolate chunk cookie dough as a base. It's the perfect oatmeal cookie (not too heavy on oats, but you still get the essence). The result? An amazing cookie that is crispy on the edges with a gooey center. I love the bits of toffee which add a slight crunch. Topped with flaky sea salt, these cookies are absolute perfection.

Before making this recipe check out my tips for making perfect cookies every time.

TIPS FOR MAKING THE BEST COOKIES

Butter: As mentioned before, always use butter or a combination of butter and shortening. Butter yields the best flavor!

That’s what I did for the cookies in these photos.

Store Properly: Cookies left out on the counter will dry out by day 2. I store my cooled cookies in an airtight container or wrap individually in plastic.

crumbl copycat mom's cookies on parchment paper

    Crumbl Mom's Cookies Ingredients

Butter: I always bake with salted butter or a combination of salted butter and shortening. These cookies are made with butter which yields great flavor.

Sugar: a combination of brown sugar and white sugar. Using more brown sugar creates a softer cookie.

    Eggs: for richness and texture.

Vanilla Extract: have you tried making your own vanilla extract? It's easy to do and delicious in recipes!

    All-Purpose Flour

Baking Soda, Baking Powder and Salt: for leavening and flavor.

Ground Cinnamon: I don't typically add cinnamon to recipes with peanut butter and toffee, but it really takes these cookies up a notch. Don't leave it out!

Oats: you can use quick oats or old fashioned oats. I prefer old fashioned oats for this recipe.

Chocolate Chips and Peanut Butter Chips: 1 cup of each is all you need. The cookie are sweet so I used semi-sweet chocolate chips instead of milk chocolate chips.

Toffee Bits (Heath): these can be found in the baking aisle.

Flaky Sea Salt: sprinkled on the top, the salt brings out the flavors of the cookie. This is my favorite flaky sea salt.

    How To Make Mom's Cookies

Making the dough is pretty straightforward. You’ll cream the butter and sugars then beat in the eggs and vanilla. Mix the dry ingredients together then add them to the wet ingredients. Stir in oats, chocolate chips, peanut butter chips and toffee bits.

Line a baking sheet with parchment paper and preheat the oven to 350 degrees.

balls of cookie dough on baking sheet

Scoop or roll the dough into 3 Tablespoon-sized portions. I only bake 6-8 cookies per sheet to allow room for spreading.

    mom's cookies on baking sheet

Bake cookies for 12 minutes. Allow to stand on the cookie sheet for 3-5 minutes before transferring to a wire cooling rack.

    baked cookies on parchment paper

Keep cookies fresh by storing in an airtight container or (and this is my preferred method) wrapping each cookie in plastic wrap.

    Iced Oatmeal Gingerbread Cookies

If you like old fashioned iced oatmeal cookies you'll love my gingerbread version! Loaded with brown sugar, molasses and lots of spices. This recipe makes 2 dozen crispy and chewy cookies. This recipe is a spin off Poor Man's cookies. Have you heard of those before? The recipe is decades old and came from an issue of Country Magazine. I remember them from my childhood and loved them. They get their name from the fact that they don't have butter or eggs in them. Thin and crispy oatmeal cookies with a chewy center. They aren't dipped in icing, but are delicious just the same.

gingerbread oatmeal cookies on cookie sheet

My gingerbread version uses a combination of butter and shortening, molasses instead of water, and extra spices like ginger, nutmeg and ground cloves. I stayed true to the Poor Man’s cookie recipe and don’t use an egg, but you can add one if you’d like.

iced oatmeal gingerbread cookies on cookie rack

    Iced Oatmeal Gingerbread Cookie Ingredients

    • butter and shortening: the original recipe uses all shortening, but I added butter to this version for a rich flavor.
    • sugar: a combination of brown and white sugars.
    • molasses: no gingerbread cookie is complete without molasses. It add a beautiful color to the dough and rich flavor.
    • vanilla extract: have you ever made your own vanilla extract? It's delicious!
    • all purpose flour
    • baking soda and salt: for flavor and leavening
    • cinnamon, ginger, nutmeg and cloves: of course.
    • oats: you can use quick oats or old fashioned oats.

How to make iced oatmeal gingerbread cookies

You’re going to start by creaming the shortening, butter and sugars together.  Off brand shortenings seem to work better for this recipe than the Crisco brand. I’m not sure why, but I’m also not going to mess with it. Just use the cheap stuff if you have it.
Then beat in the molasses and vanilla extract. Did I forget the egg? Nope. There aren’t any eggs in this recipe, but you can use one if you'd like.
Add the dry ingredients and fold in the oats. I've used old fashioned oats and quick oats and think they are both fine in this recipe.  You may need to use your hands to get everything mixed together. If the dough seems dry you can add a tablespoon of water (don't add more than a tablespoon).

A 2 Tablespoon-sized cookie scoop makes it easy to bake up uniform cookies. Bake at 350 degrees for 9-11 minutes, or until golden brown around the edges.

gingerbread oatmeal cookie without icingWhile the cookies are cooling, make a batch of glaze. Stir milk and powdered sugar together. Add water, 1 tsp. at a time until desired consistency is reached.

You don’t want it to be too runny, about the consistency of cake batter.

whisk in bowl of vanilla icing

Quickly dip the top of each cooled cookie in the glaze.

DO NOT PRESS down, or submerge the cookie. You just want to coat the top surface. Allow excess to drip off.
