    Copycat Reese's Peanut Butter Trees

    These copycat Reese's peanut butter trees are easy to make. Dipped in chocolate they are the perfect addition to holiday treat plates!

    Reese's peanut butter trees are such a classic holiday candy. My mini versions are just as tasty and the perfect bite-sized treat. Peanut-buttery, chocolatey, and delicious. Add these to holiday treat plates for that special "wow" factor!

    Why I Like This Recipe

    • Tried and true filling recipe. The filling is the same recipe that I use for peanut butter ghosts and peanut butter eggs. It is easy to work with and tastes amazing!
    • Easy to shape. I used a TINY cookie cutter to cut out the peanut butter filling before dipping the trees in milk chocolate. If you'd like to make larger peanut butter trees simply use a bigger cookie cutter!
    • One batch makes a lot! These come together fairly quickly, so it's easy to make 40 mini trees in no time. They store well, too, so feel free to make an entire batch to enjoy for the week!

    Tips and Tricks

    1. How to heat candy melts. I microwave chocolate chips in 20-30 second increments. When I use candy melts I microwave at 50% power in 30-second increments. This is the best method for working with candy melts. If you find that your chocolate isn't as thin as you'd like for dipping, you can add a teaspoon of solid vegetable shortening or coconut oil to thin it out (solid vegetable shortening is preferred).
    2. Tip for dipping trees in chocolate. The peanut butter filling may start to soften by the time you get to the last few trees. No worries, just pop them back into the freezer for a few minutes. You can also keep half of the undipped trees in the freezer while you dip the first half and then pull them out later.
    3. How to store peanut butter trees. Layer the trees between pieces of parchment or waxed paper in an airtight container and store in the refrigerator for up to 2 weeks.

    Ingredients

    Butter, powdered sugar, vanilla, bag of chocolate chips, bottle of milk, container of peanut butter.
    • Butter: just a small amount to make the filling smooth and easy to handle. I use salted butter exclusively for all of my baking and cooking, but you can use unsalted.
    • Peanut butter: obviously. I prefer creamy peanut butter to closely resemble Reese’s peanut butter filling.
    • Vanilla: just a splash for flavor. Have you tried making your own vanilla extract? 
    • Powdered sugar: for texture. The powdered sugar gives the dough stability and makes it easy to form into shapes.
    • Milk: This helps thin the dough a bit. You can use more or less than what I used to achieve the perfect consistency.
    • Milk chocolate: you can use almond bark, chocolate chips, or melting wafers. I used chocolate chips and thinned them out with a teaspoon of coconut oil.

    How To Make Chocolate Peanut Butter Trees

    Step 1: Combine softened butter, powdered sugar, vanilla, peanut butter, and milk in a mixing bowl. Mix until a soft dough forms. If your dough feels a little dry, you can add an additional teaspoon of milk. The dough will be soft and easy to form.

    Step 2: Lightly cover your work space with powdered sugar. Roll the peanut butter dough out to about ½" thick and cut into shapes using a cookie cutter. Transfer trees to a parchment paper lined baking sheet.

    Step 3: Freeze for 1 hour, or until hard. The colder the trees, the easier they are to dip.

    Step 4: Melt the chocolate according to the package instructions, or in a double boiler.Dip frozen peanut butter trees into the melted chocolate using a fork. Tap the fork against the side of the bowl to allow excess to drip off. Drag the fork against the side of the bowl to remove even more chocolate then slide the trees onto the parchment or wax paper-lined baking sheet.

    Note: The peanut butter filling may start to soften by the time you get to the last few trees. No worries, just pop them back into the freezer for a few minutes. You can also keep half of the un-dipped trees in the freezer while you dip the first half and then pull them out later.

    The easiest "chocolate" to work with for dipping is almond bark or candy melts. You can also use chocolate chips with a bit of coconut oil or shortening to thin them out for dipping.

    How do you store peanut butter trees?

    Layer the trees between pieces of parchment or waxed paper in an airtight container and store in the refrigerator for up to 2 weeks.

    What brand of peanut butter is best for peanut butter trees?

    The brand doesn't matter as much as the texture. Smooth peanut butter works best for a copycat Reese's, but crunchy is delicious if you'd like to add a bit of crunch to the peanut butter trees.

    Peanut Butter Trees

    Ingredients

    • ¾ cup creamy peanut butter
    • 2 Tbsp. butter softened
    • 1 ½ cups sifted powdered sugar
    • 1 teaspoon vanilla
    • 1-2 Tablespoons milk
    • 12 oz. chocolate wafers or milk chocolate chips

    Instructions

    • Mix all ingredients together (except for chocolate) using an electric stand mixer until it forms a soft dough. Start with 1 Tablespoon of milk and add more, 1 teaspoon at a time if necessary.
    • Roll dough to ½" thickness and cut out trees using a cookie cutter. Repeat until all dough has been used up.
      Note: you can sprinkle a small amount of powdered sugar onto your work surface if you find that your dough is sticking.
    • Place peanut butter trees on a baking sheet lined with parchment paper. Place in the freezer for 45-60 minutes or until hardened.
    • Melt chocolate in a microwave-safe bowl (in the microwave) in 20-30 second intervals (stirring after each interval) until melted and smooth.
      DO NOT overheat or chocolate will not be usable.
    • Dip peanut butter trees in chocolate, tapping the fork against the side of the bowl to allow excess chocolate to drip off. Drag the bottom of the fork against the edge of the bowl to allow even more chocolate to dip off.
    • Slide the trees onto the baking sheet lined with wax or parchment paper.
      If you find that the trees are softening and losing their shape while dipping, place them back into the freezer for 10 minutes to harden back up.
    • Allow chocolate to harden.

    You can add a small amount of shortening to your melted chocolate if you find that it isn't thin enough for dipping.

    Easy Snow Globe Cupcakes (Using a Plastic Ornament!)

    These snow globe cupcakes are so fun to make and easy, too! Most snow globe cupcakes involve making a sugar globe or gelatin-based globe. Not these ones. These are topped with a Christmas ornament, making them easy for anyone to make. I was inspired by a couple of reels that I saw on Facebook and knew I had to try making them too!

    I made 24 cupcakes using a boxed cake mix and homemade vanilla buttercream. You can pipe the frosting or spread it onto the cupcakes, both ways work! I piped mine on then flattened the frosting by pressing each cupcake into the sprinkles. If you don't want the crunch of sprinkles you can definitely leave them off and simply spread each cupcake with white frosting.

    There are so many ways to decorate these. I decorated mine with white nonpareils, mini marshmallows, and snowflake sprinkles then added an edible icing topper.

    You can find many cute packages of icing decorations at Walmart and Target. Just make sure that the ones you use are 1 ½" tall or less. Anything taller will be too tall and your dome won't fit. If you'd prefer to use your own decorations you can pipe buttercream trees or snowmen onto the cupcake.

    Snow Globe Cupcake Ornament Toppers

    There are several sizes of plastic ornaments. For regular cupcakes, you'll want ones that are 60mm in size, and can find them on Amazon. They open in half so one ornament will cover 2 cupcakes. Your cupcakes might puff up more than mine, leaving an edge that isn't covered by the dome. That's TOTALLY FINE and they'll still look adorable.

    Snow Globe Cupcake Ingredients

    Baked Cupcakes: store-bought or homemade. I used a boxed mix which made 24. If you don't want to make 24 cupcakes, you can freeze half to save for another day!

    Buttercream Frosting: you can find my recipe at the end of the post.

    Sprinkles, Nonpareils, and Mini Marshmallows: you can use whatever you'd like, but I think the nonpareils are cute and look like snow.

    Icing Toppers: these are pre-made and dried icing decorations that come in a variety of designs. I used mini trees, reindeer, and presents.

    How To Make Snow Globe Cupcakes

    Bake up a batch of cupcakes and let them cool completely.

    Pipe or spread buttercream frosting onto the baked cupcakes. I used a round tip to pipe the buttercream onto mine.

    Press each cupcake into sprinkles, if desired, to flatten the icing and give it a "snowy" look.

    Arrange decorations onto them, pressing them into the frosting. Add mini marshmallows and snowflake sprinkles, if desired.

    Equipment

    • 12 60mm (2.36") plastic ornaments (that open in half)

    Ingredients

    Cupcakes

    • 1 box cake mix plus water, eggs and oil according to package

    Butter Cream

    • 1 cup butter softened
    • 5-6 cups powdered sugar
    • 1 teaspoon vanilla extract
    • 4 Tbsp. milk

    Toppings

    • holiday candies under 1 ½" tall
    • TINY white nonpareils sprinkles
    • mini marshmallows

    Instructions

    • Preheat oven to 35o degrees.
      Line a cupcake pan with liners.
    • Make cupcake batter according to the instructions on the box.
    • Divide batter between cupcake liners and bake 16-18 minutes.
    • Let cupcakes cool completely.
    • Beat frosting ingredients until fluffy and smooth.
    • Spread or pipe frosting onto cupcakes then press into white nonpareils sprinkles.
    • Press holiday candies into the cupcakes to decorate. Make sure the candy is less than 1 ½" tall. Pre-made icing decorations work well.
    • Open the plastic ornaments and wash them with warm water and soap. Dry.
      Top each cupcake with half of a plastic ornament.

    Little Debbie Tree Cookies

    Little Debbie tree cookies are a sugar cookie twist on the original snack cake. Dipped in frosting, they are easy to make!

    You might also like our stacked snowman sugar cookies, our gingerbread cookie boxes, or our bakery-style sugar cookies.

    Sugar cookies, but they look like Little Debbie Christmas trees! These are in no way a substitute for the classic snack cakes; they are just a fun way to decorate Christmas sugar cookies.

    This recipe makes 30 tree cookies, each dipped in melty soft buttercream, sprinkled with green sugar, then decorated with red buttercream. I used my classic sugar cookie recipe for delicious cookies that are buttery and soft. This is the only cut-out sugar cookie recipe that I use.

    Why I Like This Recipe

    • Best sugar cookie recipe. These tree cookies start out with a sugar cookie base. You can use whatever kind of sugar cookie dough you want, but my no-chill sugar cookie recipe is pretty darn good and my most popular recipe this time of year. The cookies are bakery-style soft and loaded with vanilla and almond extract flavoring.
    • Easiest frosting. My hack for frosting these cookies is one that we've done for years and years. You'll love how easy it is!
    • They look just like the original. These cookies look just like the original snack cakes, only in sugar cookie form. So buttery and yummy with bright red swirls and green sugar sprinkles.

    Tips and Tricks

    • How to dip sugar cookies in frosting. What's easier than spreading frosting over cookies? Dipping the cookies in melted frosting! Dipping the cookies in frosting is what gives them a smooth finish. You can do this trick with store-bought frosting or homemade buttercream. I used homemade buttercream this time, but have used store-bought frosting with great results in the past. 
      • Warm up the frosting in the microwave for 20-30 seconds, stir.
      • Dip the tops of the cookies in the warm frosting.
      • Let the excess frosting drip off, then turn the cookies over and place them on a parchment-lined baking sheet to set up.
    • Red stripes. The red details are red buttercream frosting that has NOT been melted. I spooned it into a piping bag and piped the lines onto the cookies. The red buttercream will also set up enough to package or transport cookies but does not set up quite as hard as royal icing.

    Ingredients

    Bowls of flour, sugar, baking powder, corn starch, butter, shortening, egg, vanilla and almond extract.

    Sugar Cookies

    • Butter and Shortening: I use a combination of butter and shortening for the best texture and flavor. If you don't want to use shortening you can use all butter, but I highly recommend trying the recipe as written first.
    • Sugar: There are only two types of cookies that I don't use a combination of brown sugar and granulated sugar for: sugar cookies and snickerdoodles. White sugar is best for sugar cookies. It gives them great flavor and texture.
    • Egg: For richness and texture.
    • Vanilla Extract and Almond Extract: Extracts are where you can get creative when making cookies. Vanilla and almond are my favorites to use and are a wonderful flavor combination.
    • Flour: All-purpose flour is a great option for baking cookies.
    • Cornstarch: This recipe requires a substantial amount of cornstarch. Trust me, it makes a soft and tender cookie.
    • Baking powder: Baking powder gives sugar cookies life and a light texture.

    Easy Buttercream Frosting

    • Butter: For the best flavor and texture, always use butter in your frosting.
    • Powdered Sugar: Powdered sugar gives the frosting a fluffy and smooth texture.
    • Milk or Heavy Cream: A bit of milk or cream helps thin the frosting out to a spreadable consistency.
    • Vanilla: For flavoring.
    • Green sugar sprinkles
    • Red food coloring

    How To Make Little Debbie Inspired Tree Cookies

    Step 1: In a large mixing bowl (or bowl of a stand mixer*), combine butter, shortening, and sugar. Beat until fluffy.

    Step 2: Turn the electric mixer to a low speed and add the egg, vanilla extract, and almond extract. Add baking powder. Stir in the flour and cornstarch, and mix until a soft dough forms.

    Step 3: Roll the dough out to the desired thickness using a rolling pin (I usually do ¼- ⅜″) and cut into tree shapes.

    Bake at 325 degrees for 12 minutes on ungreased baking sheets.

    Cookies will be soft. Let sit on the baking sheet for 5 minutes before carefully moving to a cooling rack. Cool completely before frosting.

    Step 4: Beat frosting ingredients together with an electric mixer until smooth and creamy.

    Spoon out a heaping ½ cup of frosting into a small bowl and add food coloring to tint it red. Set the red frosting aside.

    Spoon in white buttercream frosting.

    Step 5: Heat the remaining white frosting in the microwave for 20-30 seconds. Stir.

    It should be smooth and thin.

    Step 6: Hold onto the edges of the cookie and dip the top into the warm frosting. Allow excess to drip off.

    Note: the frosting will begin to thicken as it cools. When that happens, simply reheat in the microwave for 10 seconds and stir. It'll be thin and ready for dipping again.

    Step 7: Place dipped cookies onto a parchment-lined baking sheet. Sprinkle immediately with green sugar sprinkles.

    Step 8: Once all of the sugar cookies have been dipped and sprinkled, fit a frosting bag with a small round tip and spoon the red frosting into the bag.

    Decorate the tops of the tree cookies with red lines of frosting.

    Store the cookies wrapped in plastic on the baking sheet or in an airtight container.

    Do these tree cookies taste like Little Debbie tree cakes?

    These are sugar cookies inspired by the look of the Little Debbie tree cakes. They taste like a sugar cookie and have a cookie consistency.

    Can you stack sugar cookies decorated with buttercream frosting?

    The cookies will harden slightly as they set. Enough to transport or package up. I don't recommend stacking cookies decorated with buttercream frosting more than 2 cookies tall because buttercream will never be as hard as royal icing.

    How do you dip sugar cookies in frosting?

    Dip the tops of the cookies in the warm frosting (warmed in the microwave).
    Let the excess frosting drip off, then turn the cookies over and place them on a parchment-lined baking sheet to set up.

    Does sugar cookie dough need to be refrigerated?

    Some recipes call for refrigeration, but this one doesn’t. If you’d like to make it ahead of time you can wrap the dough tightly in plastic wrap and then use it later, but this is a great last-minute recipe because refrigeration is not necessary.

    Why do you need to use cornstarch in sugar cookie dough?

    Corn starch softens the dough making it feel like a cloud. It also makes for a softer sugar cookie.

    Little Debbie Tree Cookies

    Little Debbie inspired Christmas tree sugar cookies are a twist on the original snack cake inspiration. Dipped in frosting they are easy to make!

    Ingredients

    Sugar Cookie Dough

    • 1 cup butter softened
    • ½ cup shortening
    • 1 ½ cup granulated sugar
    • 1 egg
    • 1 ½ teaspoon vanilla extract
    • 2 teaspoon almond extract
    • 4 cup flour
    • ½ cup corn starch
    • 2 teaspoon baking powder

    Frosting

    • ¾ cup butter softened
    • 4 ½ cups powdered sugar
    • 1 ½ teaspoons vanilla extract
    • 6 Tbsp. milk

    Instructions

    Cookies

    • In a large mixing bowl combine butter, shortening, and sugar. Beat until fluffy. Turn the mixer down and add egg, vanilla, and almond extract. Add baking powder. Add flour* and cornstarch and mix thoroughly.
      *Start with 3 ½ cups of flour and add the last ½ cup at the end if the dough seems too soft (I always use the full amount of flour).
    • Lightly flour your working surface and shape dough into a large ball. No refrigeration necessary.
    • Roll dough out to desired thickness using a rolling pin (I usually do ¼- ⅜″) and cut into tree shapes. Add flour to dough if it feels too sticky but a nice soft dough is what you want. Carefully transfer the cut-out cookie shapes with a spatula to a baking sheet.
    • Bake on baking sheets at 325 degrees for 12 minutes. Cookies will be soft. Let them sit on the baking sheet for 5 minutes before carefully moving to a cooling rack. Cool completely before frosting.

    Buttercream Frosting

    • Beat frosting ingredients together with an electric mixer until smooth and creamy. 
      Spoon out a heaping ½ cup of frosting into a small bowl and add food coloring to tint it red. Set the bowl of red frosting to the side.
    • Heat the remaining white frosting in the microwave for 20-30 seconds. Stir.
      It should be smooth and thin.
    • Hold onto the edges of the cookie and dip the top of the cookie into the warm frosting. Allow excess to drip off.
      Note: the frosting will begin to thicken as it cools. When that happens, simply reheat in the microwave for 10 seconds and stir. It'll be thin and ready for dipping again.
    • Place dipped cookies onto a parchment-lined baking sheet. Sprinkle immediately with green sugar sprinkles.
    • Once all of the sugar cookies have been dipped and sprinkled, fit a frosting bag with a small round tip and spoon the red frosting into the bag. 
      Decorate the tops of the tree cookies with red lines of frosting.

    Notes

    The cookies will harden slightly as they set. Enough to transport or package up. I don't recommend stacking cookies that have been decorated with buttercream frosting more than 2 cookies tall because buttercream will never be as hard as royal icing.
    Store the cookies wrapped in plastic on the baking sheet or in an airtight container.

    My youngest's favorite animal is a hedgehog. He has a stuffed animal hedgehog named Popcorn who comes everywhere with him. He'd like to have a real hedgehog, but we have hermit crabs, chickens, and a Labrador and I have to draw the line somewhere, haha. He requested a hedgehog cake for his birthday this year and so I made him one.

    I'm not a cake decorator, and honestly, I don't really enjoy making cakes but I do love my little boy, and the smile on his face when he saw his cake is all that matters. This is such an easy cake to make. 3 round layers, a batch of chocolate frosting, and a batch of peanut butter frosting.

    You can pipe the eyes on with frosting if you'd like, but I cheated and used the candy eyes and a jellybean nose.

    Easy Hedgehog Cake Ingredients and Supplies

    Ingredients

    • 3 round cakes (mine were 6", but you can make any size you'd like)

    How To Make a Hedgehog Cake

    Place one round cake on your cake stand/platter.

    Spread with a layer of chocolate frosting.

    Add the second layer and another layer of frosting.

    Add the third layer.

    Coat the cake in a thin layer of chocolate frosting and refrigerate for 30 minutes.

    You can freehand the shape of the face or use a template. If you use a template, place the paper against the cake and trace the outline with a toothpick.

    Fill a piping bag with peanut butter buttercream and a round tip.

    Frost around the edge of the face outline with a peanut butter frosting then fill in, piping horizontal lines back and forth.

    Spread the frosting smooth with a spatula.

    Place the eyes and nose onto the cake.

    Fill a piping bag with chocolate buttercream and a large round tip.

    Fill a frosting bag with both peanut butter and chocolate frosting and a grass frosting tip. There are several ways to do this. I just took the bag of peanut butter frosting and the bag of chocolate frosting and squeezed them into a third bag, fitted with the grass tip, alternating the stripes of frosting so that both colors were evenly represented.

    Cover the cake with frosting using the grass tip. Outline the edge of the face and continue working around the cake until everything is covered in quills.

    You'll probably need a couple of bags of frosting to cover the cake. If you have multiple tips you can prepare the bags ahead of time. I only have one grass tip so I just filled a new bag each time I ran out of frosting.

    If you notice the frosting warming because of the heat of your hand you can refrigerate the bag for a few minutes then continue to decorate the cake once it's had time to chill for a bit.

    I've seen so many families share how they set out a box or basket of treats on their porch for delivery drivers to enjoy during the busy holiday season. It's such a simple way to show appreciation so I decided to do the same.

    There are days when I receive 3 or 4 deliveries from various companies. The other night I noticed a notification on our doorbell camera and it was an Amazon delivery driver at 10pm walking up to our porch to deliver a package. I felt so bad! I could have waited until the next day to receive my package had I known that they'd be out delivering so late.

    Delivery Driver Treat Storage Ideas

    I used a small laundry cart that I picked up at Walmart, but if you don't already have one you can use a cooler (especially in warm and humid climates), a basket, a tote with a lid (if you're worried about critters), a delivery box, or a galvanized tub.

    Bakery Style Molasses Cookies Recipe

    Bakery-style jumbo molasses cookies are crisp on the outside, chewy on the inside, and feature a unique, melt-in-your-mouth sugar coating. These cookies smell and taste like cinnamon, ginger, and cloves, and stay soft for days.

    There is a BBQ joint in my area that sells the best homemade jumbo molasses cookies. They've been selling their famous cookies for years, which are a staple grab-and-go treat to finish off any meal. In their own words, "QDaddy’s sugar-crusted, crackled-topped, chewy molasses cookies have been a part of our family’s cookie tradition for decades". These molasses cookies have a slightly crisp exterior and is soft and chewy on the inside. They also have a unique sugar crust that is different than most molasses cookies which are rolled in granulated sugar. The sugar on these looks like snow.

    I enjoy recreating famous cookie recipes, and recently created a copycat version of Maggiano's lemon cookies at a friend's request. So when another friend brought me a jumbo molasses cookie from QDaddy's to recreate, I didn't hesitate! After all, molasses cookies are one of my absolute favorite cookies. This is NOT their actual recipe, but one that I created using their cookie as inspiration. All in all, I made twelve batches of cookies, testing everything from flour amounts to combinations of fats and spice ratios to the signature sugar coating.

    Why I Like This Recipe

    • No chill recipe. I only chill cookie dough if I'm worried about the cookies spreading too much once baked. Otherwise, I simply don't have the patience and prefer recipes that don't require chilling. These molasses cookies bake up beautifully without needing to chill the dough.
    • Crispy edges, chewy centers. This molasses cookie recipe is the best of both worlds. They have a crisp exterior and a soft and chewy interior. These cookies will stay soft for days, and are sturdy enough to pick up or package.
    • Adjustable baking time and scoop sizes. QDaddy's makes theirs jumbo-sized, but I've included baking times for regular, large, and jumbo-sized cookies to fit your needs.

    Tips and Tricks

    1. Use a combination of butter and shortening. While most molasses cookie recipes use shortening, I found the best texture and flavor outcome from using a 50/50 ratio of shortening and butter. I use this same combination for my copycat Chick-fil-A chocolate chunk cookies as well as my bakery-style sugar cookies.
    2. Roll in granulated sugar, then sprinkle with powdered sugar. What makes these cookies unique is the signature dusting of sugar over each cookie. Molasses cookies are always rolled in sugar, which hardens once baked. QDaddy's cookies have a soft, granulated crust of sugar. I'm not sure exactly how they do it, but I achieved this by sprinkling the cookies with a mixture of powdered sugar and granulated sugar. As the cookies bake, the sugars work with the fats in the cookie to melt and puff up.
    3. Storage tips. Store cookies in an airtight container for 3 to 5 days. You can also freeze the molasses cookies in a freezer bag or container for up to 2 months.

    Ingredients

    Bowls of brown sugar, sugar, shortening, stick of butter, bowls of flour, powdered sugar, spices, baking soda and salt, stick of butter, bottle of vanilla and an egg.

    • Butter and shortening: Shortening has a higher melting point, so cookies will hold their shape longer in the oven before the fat melts in the dough, which results in moist, chewy cookies. For an alternative, you can use coconut oil instead of shortening. Butter melts more quickly and releases some steam, causing the cookies to spread more and become crisper, with a distinctly buttery flavor. I use both shortening and butter for the best of both worlds.
    • Brown sugar and white sugar: I like using a mixture of brown and white sugar for the best flavor and consistency.
    • Large egg: a room temperature egg for richness and texture.
    • Molasses: obviously. Use the basic unsulphured molasses from the grocery store, not blackstrap, which has an overwhelming flavor.
    • Vanilla extract: Adding a splash of vanilla extract is always a good idea.
    • Spices: ground ginger, ground cinnamon, and ground cloves.
    • All-purpose flour
    • Baking soda and salt: for leavening and flavor.
    • Sugar: extra sugar is needed for rolling the cookie dough balls in before baking. I roll the cookies in sugar, then use a combination of sugar and powdered sugar to add a melt-in-your-mouth coating, entirely unique for my recipe.

    How To Make Bakery Style Molasses Cookies

    Step 1: Combine shortening, butter, brown sugar, and granulated sugar in a large mixing bowl. Mix with an electric mixer until smooth and creamy.

    Step 4: Scoop dough into 3 tablespoon-sized balls. Roll each ball nice and smooth with your hands. Place a cookie dough ball into the small bowl of granulated sugar, roll around, then flatten slightly into a hockey puck shape. Repeat for all cookies.

    Step 5: Place cookie dough pucks on a baking sheet, 6-8 cookies per sheet. Sprinkle the tops of the cookies with a thin layer of powdered sugar/granulated sugar mixture (2 Tablespoons sugar and 1 Tablespoon powdered sugar mixed together).

    Step 6: Bake cookies for 12 minutes (see baking chart in notes section for adjustments for smaller or larger cookies).

    Baking Time Adjustments

    • 2 Tbsp. scoop: Bake for 10-11 minutes. Makes 30 cookies.
    • 3 Tbsp. scoop: Bake for 12-13 minutes. Makes 20 cookies.
    • 4 tablespoon scoop (¼ cup): Bake for 14-15 minutes. Makes 15 cookies.

    I bake with light baking sheets, so my recipe times reflect that. If your cookie sheets are dark, you may need to adjust the baking time by baking the cookies for a shorter period.

    Molasses Cookie FAQs

    What is the difference between gingersnaps and molasses cookies?

    Traditionally, gingersnaps are a small, crispy ginger cookie, while molasses cookies are soft and rich with less of a ginger kick. Both contain molasses and ginger. Essentially, one is crispy, while the other is soft and chewy.

    Is butter or shortening better in molasses cookies?

    Shortening produces a soft and chewy molasses cookie. Butter produces one with a crispier exterior and rich flavor. I rarely suggest using shortening in a recipe, so when I do, just trust that it yields the best outcome. For molasses cookies, I recommend a 50/50 ratio of shortening and butter for the best flavor and texture. For an alternative, you can use coconut oil instead of shortening.

    Why are molasses cookies crinkly on top?

    Molasses cookies are rolled in sugar before baking, which creates a "shell" on the outside of each cookie dough ball. When the cookies bake, they spread and puff up from the leavening, which cracks the sugar shell, creating the signature crinkled look.

    Bugles are triangular in shape which makes them the perfect shape for Santa hats, elf hats, Christmas trees, and gnomes! Grab a few bags of candy melts and some holiday sprinkles and make your favorite one (or all 4!).

    Tips for Working With Candy Melts

    1. Heat: DO NOT overheat your melting chocolates. This is key. Microwave in short increments (15-20 seconds), stirring in between each increment or heat at 50% power in 30-second increments. I find that this is the best method for working with candy melts. When I use chocolate chips I microwave a full power in 20-30-second increments. A double boiler is another great method for melting chocolate evenly.

    2. Consistency: You want a perfectly smooth consistency for dipping. If you find that your chocolate isn’t as thin as you’d like for dipping you can add a teaspoon of solid vegetable shortening or coconut oil to thin it (shortening is preferred) per 8 ounces. If you use chocolate chips instead of melting chocolate wafers this is a great way to thin the white chocolate chips down a little bit more.

    Bugles Treats Ingredients

    The amount you'll need will depend on how many you'd like to make. I picked up bags of red, green, and white candy melts and used about ⅓ of each bag for about 80 treats.

    • Bugles Crispy Corn Snacks (regular-sized bag)
    • Candy Melts
    • Sprinkles: mini white nonpareils, holiday nonpareils, gnome noses, stars, and tree sprinkles.

    Ingredients

    • Bugles corn snacks (regular-sized bag)
    • red, green, and white candy melts (Wilton)
    • sprinkles (a variety)

    Instructions

    HOW TO MAKE SANTA HAT BUGLES

    • Melt red candy melts in a small bowl.
    • Dip bugles into the candy melts, leaving the tip of the bugle uncovered.

    • Dip the bottom into white nonparelis sprinkles then place onto a parchment lined baking sheet to harden.

    • Once hardened, melt white candy melts in a small bowl. Dip the tip of each Santa hat in white candy melts.

    • Return to parchment line baking sheet to set up.

    HOW TO MAKE ELF HAT BUGLES

    • The elf hats are made the same way as the Santa hats, only using green candy melts and multi colored sprinkles. See instructions above.

    HOW TO MAKE GNOME BUGLES

    • Melt white candy melts. Dip bugles halfway into the candy melts. Place on a parchment-lined baking sheet to set up.

    • Dip bugles in green melting chocolate using a fork. Tap the fork against the side of the bowl to allow the excess to drip off.

    Many know about the famous chocolate chip cookie recipe that was shared in the New York Times years ago. It was created by a French artisan chocolatier named Jacques Torres. I first made these world-famous chocolate chip cookies years ago. Did they live up to the hype? Absolutely! It isn't a quick recipe, but your patience will pay off with one of the richest cookies you'll ever put in your mouth.

    Recently I saw Jacques make these SAME cookies on a segment of the Rachel Ray show, and then he made them again on Good Morning America and brushed the bottom of each cookie with melted chocolate. WHAT?! I KNEW I needed to make another batch and do that too. It's such an easy thing to do and makes them look so fancy. You can buy a package of these famous cookies on Amazon or his website, but the price of 6 cookies is more than what it would cost to make 1 ½ dozen fresh cookies in your own kitchen.

    Why I Like This Recipe

    • Indulgent. All cookie recipes are somewhat indulgent, but the chocolate on the bottom truly sets these cookies apart. They are not your every day chocolate chip cookies.
    • Rich flavor. The long chill time allows the flavors to truly meld in the cookie dough, resulting in a rich flavor that is accented by the flaky sea salt.
    • Easy to make. You might look at the recipe list and long chill time and think that these cookies might be complicated to make. Don't worry, they aren't. You just need a bit of patience.

    Tips for Making The Best Chocolate Chip Cookies

    Jacques shared a few tips on Good Morning America for making his world-famous cookies.

    1. Use two types of flour. After testing batches with different ratios of flour, he said that the best combination is a 50/50 measurement of bread flour and cake flour. This produces an elastic dough and a perfectly chewy cookie. In the ingredients list you'll notice that they aren't the same measurement, that's because one flour weighs more than the other. If you weigh out the ingredients they weigh the same, but the cup measurements are different.
    2. Use good chocolate. Jacques uses large chocolate discs that you can purchase from his website, but for the budget shopper, you'll want to look for chocolate that is over 50% cacao (bittersweet or dark chocolate). You can use bittersweet chocolate chips, chunks, or chopped-up chocolate bars. I used a combination of both. I used chopped-up baking chocolate bars for the cookie dough because I wanted large chunks in the cookies, and used dark chocolate chips for the melted chocolate to spread on the bottom of each cookie. You can use whatever you'd like.
    3. Chill the dough. This is something that I don't typically do. I'm an impatient baker, but it really does elevate your cookies, helps the dough mature, and brings out the flavor. You can chill this dough 24-48 hours before baking. One tip that I have is to portion the cookie dough into balls before chilling the dough. It's much easier to do that vs. scooping hard cookie dough!
    4. Bake on light colored baking sheets. This is my own tip. All of my recipes are aimed at baking with light metal cookie sheets. That’s all I bake with. If you use dark sheets you’ll need to keep an eye on the cookies and adjust the baking times, if necessary.
    5. Sprinkle cookies with sea salt. Salt intensifies the flavor of anything that it touches. Adding flaked or coarse sea salt to the tops of your cookies elevates the flavor. You can add salt before or after baking. I typically add it after the cookies come out of the oven and it sticks to the warm chocolate.

    Cookie Recipe Ingredients

    Bowls of flour, sugar, eggs, bags of chocolate chips, bars of dark chocolate, two sticks of butter, baking soda and salt.
    • Butter: you can use salted or unsalted butter, whatever you prefer. I only bake with salted butter.
    • Sugar: a combination of brown and white sugar.
    • Eggs: 2 large eggs for richness and texture.
    • Vanilla: for flavor. Have you tried making your own homemade vanilla extract? It's easy!
    • Baking powder, baking soda, and salt: for texture and leavening.
    • Flour: bread flour AND cake flour.
    • Chocolate: at least 50% cacao chocolate (dark chocolate) bars or chips.
    • Sea Salt: to sprinkle over baked cookies (optional).

    How To Make Jacques Torres Chocolate Chip Cookies

    Step 1: Start by chopping your chocolate bars into chunks. Set these aside while you make the rest of the dough.

    Stand mixer with eggs, butter and sugars.

    Step 2: Sift flours, baking soda, baking powder, and salt into a bowl. Set aside. Using a mixer fitted with the paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients, and mix until just combined 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them.

    Step 3: Press plastic wrap against dough and refrigerate for 24 to 36 hours. Dough may be used in batches and can be refrigerated for up to 72 hours.

    Step 4: When ready to bake, preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside. Scoop 6 mounds of dough onto a baking sheet, sprinkle with sea salt, and bake until golden brown but still soft, 16-18 minutes.

    Top Tip

    It's easier to portion the dough into balls before chilling it. You can place them in a gallon-sized plastic bag or put them on a parchment-lined cookie sheet and cover them with plastic while they chill. It's not impossible to form chilled dough into balls though, it's just tougher. In my video, I chilled the dough and then formed it later into balls by hand, weighing them on my kitchen scale.

    Step 5: Brush the bottom of the cookies with melted bittersweet chocolate. Spoon chocolate onto the back of each cookie and spread with a spatula or butter knife.

    Jacques Torres Cookies FAQs

    Do you really need two different types of flour for this cookie recipe?

    Probably not, but if you want to make the recipe as close as possible to the original, PLEASE TRY IT! The cookies have crisp edges and chewy centers, so there's definitely something good going on here. There's no need to go out and buy a bag of cake flour if you have no other use for it. You can make your own with 2 ingredients.
    To make a cup of cake flour, scoop 1 cup of all-purpose flour into a measuring cup then remove 2 tablespoons of flour and replace it with corn starch.

    Can I bake Jacques Torres cookies without chilling the dough?

    For some recipes, chilling the dough is necessary to help the cookies keep their shape while baking. For this recipe, chilling the dough enhances the overall flavor of the cookie, but you can bake them right away without worrying about them spreading too much in the oven.

    Why are the measurements funky for the Jacques Torres cookie recipe?


    "2 cups minus 2 Tablespoons" "1 cup plus 2 Tablespoons" It has to do with weight. 1 cup plus 2 Tablespoons of sugar is 8 ounces. Jacques uses a 50/50 ratio of cake flour and bread flour so 2 cups minus 2 Tablespoons of cake flour probably weighs about the same as 1 ⅔ cups of bread flour.

    Ingredients

    • 2 cups minus 2 Tablespoons cake flour (see note)
    • 1 ⅔ cups bread flour
    • 1 ¼ teaspoons baking soda

    Instructions

    • If using chocolate bars, cut them into small chunks then set aside.
      Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
    • Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla.
    • Reduce speed to low, add dry ingredients, and mix until just combined 5 to 10 seconds. Drop chocolate pieces in and incorporate them without breaking them. Press plastic wrap against dough and refrigerate for 24 to 36 hours.
    • When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper or a nonstick baking mat. Set aside.
    • Scoop 6 (3 ½ -ounce) mounds of dough (the size of generous golf balls) onto a baking sheet, making sure to turn horizontally any chocolate pieces that are poking up; it will make for a more attractive cookie.
    • Sprinkle lightly with sea salt (optional) and bake until golden brown but still soft, 16 to 18 minutes. Transfer the sheet to a wire rack for 10 minutes, then slip the cookies onto another rack to cool a bit more. Repeat with remaining dough, or reserve dough, refrigerated, for baking remaining batches the next day.
    • Optional: For added indulgence, melt the remaining chocolate bars or chips (10 oz.) and spoon the melted chocolate onto the back of each cookie. Spread with a spatula or butter knife to smooth out the chocolate then place the cookies on a parchment-lined baking sheet and chill until chocolate hardens. 
    • Wrap hardened cookies in plastic and store them at room temperature.

    If you use salted butter instead of unsalted butter, you can reduce the amount of salt in the recipe to 1 teaspoon instead of 1 ½ teaspoons if you prefer.
